Causeway Bay is a battlefield of HK style "typhoon shelter" stir-fried crab. Both made with a rich black bean sauce full of umami. Huge razor clams. The stir-fried clams also came in large portion.
◆Stir-fried Crab w/ Chili & Garlic
The reason why I chose this restaurant. The fresh crab in deep-fried chopped garlic and chili which was slightly spicy and flavorful, but didn't overwhelmn the taste of the crab, was perfectly cooked to the point that the meat was still moist and briny.

◆Stir-fried Beef Rice Noodles
Packed with wok hay. The rice noodles weren't too oily, with beef slices and bean sprouts in an aromatic sauce. Choy sum tasted sweet and had a slightly crunchy texture.
