There's lots of Hong Kong things that I don't "get". Stinky tofu, curry fish balls, egg-mayo sandwiches... I just fail to see any virtues at all in these things. But beef brisket noodle soup, I get. It's far and away my favorite HK food, and personally I prefer it to ramen.I usually go to Mak's. I know that marks me out as some sort of rube who pays too much for too little food, but the beef brisket soup there is just fantastic. They use this marinade for the beef that makes it and the soup intensely aromatic-- I think it's fermented soybean and anise. Plus the noodles are really good.But today I decided to try Sister Wah. The brisket soup here is definitely different. The meat isn't marinated-- or at least not a lot. It's left to stand on its own, and to tell you the truth, it does. The brisket is fall-apart tender, not fatty, but not dry either. I got one piece that was very fatty, and considered not eating it. I'm glad I did though, because that was a divine piece of meat.The broth was less rich than Mak's, but I did quite like it. In fact, I was quite disappointed that there was so little broth. Most of the bowl was filled with noodles, and this was unfortunate, because the egg noodles here aren't particularly good. The best thing about thin egg noodles like this, in my opinion, is their firmness, and these ones were mushy and flavorless-- and most of the meal.So at the end, I was ambivalent about the soup. I was a big fan of the brisket, and the broth was pretty good too, especially after I added some of the chilis on the table to it. But one of the draws for this kind of thing, to me, is the noodles, and here they are definitely sub-par. I could see myself coming back (it's only $40 for a bowl of soup), but I can't see myself getting very excited about it. 繼續閱讀

我是牛腩痴,多數幫趁淨清湯返屋企加餸,由西營盤分店開业至今時有光顧。祇可說又愛又恨;成80蚊個淨腩,好時入口即溶又甘又香湯底清甜。衰時得番個湯底牛腩鞋拾拾,差過附近40蚊D潮式牛腩。所以每次幫趁時心情像賭大細一樣,買大開大時隔2日又食過,買大開細時就隔幾個禮拜等度火落咗再幫趁!華姐在業界算有頭有面,希望可以同分店檢討下點樣維持一個高水評至得! 繼續閱讀

華姐清湯腩咖喱牛腩河粉有D怪明明間鋪頭名叫華姐清湯腩但竟然有咖喱牛腩食上次食完清湯腩,對果種入口即溶既感覺念念不忘可惜咖喱牛腩一上台就心知不妙果D牛腩似係牛肋條(即係有條筋痴住D肉)肉質較硬 同牛坑腩有D分別囉咖喱咸同埋辣 略嫌較少既椰汁同香料不過薯仔幾好食 幾冧同入味如果襯飯會好食D, 河粉同咖喱唔係好夾,河粉都係清清地好食.   繼續閱讀

華姐清湯牛腩面牛腩份量足足有九舊架可惜冇蘿蔔(加錢可以有一碗蘿蔔,好好食)清湯腩肉味特出 對比起柱侯淡味,冇咁油,又冇咁咸,健康D牛腩肥瘦適中 入口即溶D麵冇鹼水味 比一般麵鋪好麵都好彈牙 同D牛腩相映成趣牛筋米粉牛筋份量較少而且偏冧同痴牙相比之下牛腩好食得多(因為牛筋係冇味架)鋪面企理 上菜速度快 可惜選擇唔多不過都值得一試 繼續閱讀

是日大大話話吃了六、七間,都是街坊小店為主,華姐清湯腩是其中一站。同事話叫清湯腩麵和清湯牛筋麵各一碗,啲餸再大家分吃,我沒有異議。麵送來,看湯底算幾清澈,唔理咁多,先呷幾口湯,清甜、醇和,有水準。牛腩鬆化,沒有很韌,近邊位更合心,麵條則只是普普通通。相比之下,筆者更喜歡牛筋,晶瑩剔透,骨膠原豐富,咬落有口感,又不會爛溶溶咁。原本仲想食擔擔麵,可惜胃納太少,唯有留待下次,當是給自己再來的藉口吧! 繼續閱讀
