心夜來潮是我近日最常去的餐廳,因為香港實在太少地方有菜茶吃,自己煮又太多配料太麻煩,所以當我發現原來深夜來潮有菜茶,我一想起就會來吃。 每次來都會吃的菜茶,有大量蔬菜、粉絲、蝦米及脆米等,配料豐富爽口,湯底鮮味不錯,是讓人懷念的家鄉風味呀。 豬油渣炒菜心,非常大碟,炒得好香好有鑊氣,淡淡豬油香雖然有點肥膩,但真的好惹味。 家常牙籤雞,雞肉炸得好香口,外面脆卜卜吃起來口感好特別,也不會太乾身,是非常好的送酒小菜。

手工捻面猴:遺憾的是廚房出菜較慢,最後拿了回家第二天吃,師傅手工搓揉面團需時,這是可以諒解的。師傅用中筋麵粉搓成麵糰,再「捻」出片狀,放在湯內輕灼,伴以潮州蝦米、魷魚乾及菜脯等品嘗,充滿鮮香味。原來潮汕人愛將調皮小孩喚作猴子,捻麵皮的動作猶如捻小孩的臉,因此才有「捻面猴」之稱。我最欣賞伴麵團的魷魚和蝦乾,伴麵的湯也頗鮮甜,遺憾麵團調味不足,吃起來有一點寡,可能這是正宗味道吧~

個人欣賞心夜來潮的手工菜,尤其是捻面猴和蟹粥。可惜的是自己不太習慣其他食物,不需要手工的話可能會去其他餐廳吃比較好。總括來說還是值得一試的。
