成發潮州菜館食評於2023年食過五次。九龍城,一個人情味很重的市區,你總會找到寶藏。朋友介紹我們到誠發,最後個個像着了魔般,經常掛到嘴邊,幾時再去。前菜 螄蚶一碟潔白色的貝殻海鮮無可否認是我最愛。以前開螄蚶都是靠兩手指甲搏鬥,店員細心替我們準備了鉗,讓我容易把清甜的海洋之寶輕鬆送進我口,鮮美,飽滿的肉身。前菜 滷水鵝肝🪿吃得出老師傳把滷水汁高湯煲了很久,淡淡的藥材味把鵝肝味道昇華,不膩而且新鮮,吃多幾啖脂肪也值得。主角 鵝頸脊🪿 師傅見到我們把鵝肉拼盤火速清盤,就親自切了最珍貴的部份給我們。師傅說鵝頸位置肉身柔嫩,去掉骨頭,能享用的部份較少,肉身鮮甜,柔軟滑身。第一次吃鵝頸脊,被師傅的刀藝和它其有的味道重重打擊我思維,絕對明白為什麼這不在菜單上,一百分好吃。主角 魚兩吃🐟潮州以魚飯為主食,馳名用最簡單做法把魚的鮮帶出。老闆以酸梅做出魚酸酸甜甜,就是一道潮州版的酸菜魚;另一邊魚身則用剁辣椒和豆豉做了輕易版豉汁辣椒魚,兩個做法都很惹味。湯品 生拆蟹皇羹🦀這道菜是必須預定,因為師傅要用上蟹肉、瑤柱、蟹黃、鮮蝦等海鮮配上老抽、生抽、高湯等熬成。師傅說要花很多時間在拆肉上,為免影響客人吃到蟹殼,所以啖啖都是心思。濃縮的海鮮湯味配上啖啖肉,必然是這餐飯的MVP。主菜 沙嗲炒河😻一碟鑊氣十足的炒河,每條,河粉都掛醬汁,配上雞蛋的香氣和鮮牛肉的味,不能和茶餐廳的炒河粉媲美,因為它完勝了。甜品 反沙芋🍠不愛吃芋頭的我都吃了一件,砂糖鋪滿每個芋頭方塊,好像零食。不會死甜,而且吃到芋頭本帶的鮮香,聞起後香,吃也很甜。-建議先訂座,和預訂食物 continue reading

見到有羊腩煲就試下啦,428都好大煲跟一碟生菜,2個人可以分兩餐食,我特登帶咗個食物盒去裝起一半。入面羊腩份量令人滿意,及有支竹、馬蹄。最入味係羊腩,同埋好霖。支竹如果再炆耐啲就好啦。主要係柱侯同少少五香味,另有腐乳撈咗沙律醬既醬汁點食3星原因係個煲好鹹,一路食一路要飲好多水。若果唔咁鹹,係可以俾到4星的。另外侍應好細心,唔知係咪咁所以埋單有加一服務費,我地嗌咗一個煲,一碗飯同一支asahi咁就成五舊幾水啦。個煲本身唔係平,唔知係咪因為下面有個爐可以一直滾佢所以收貴啲,咁的確熱辣辣食係好味啲既,但係舊舖頭食咁既價錢就會偏貴。我唔太推介羊腩煲,不過會想試埋其他食物 continue reading

滷水鵝肉有驚喜 大部份鵝肉去骨 肉質嫩滑 滷水底汁非常惹味 入晒鵝肉🤪🤪 總括而然超正!!!!滷水鵝肝好軟熟 入口即溶 一定要趁熱食☺️☺️ 完全冇腥味 豬耳我覺得都好好食 爽口彈牙 加上滷水香味炸蝦棗啖啖鮮蝦肉味🥹 炸粉適中 唔會成口粉 一定要點佢哋秘制桔油 酸酸甜甜 異常哋夾!🤤🤤另外豆豉鯪魚油麥菜👀👀 啲菜好新鮮 好似煮嘅時候落咗腐乳釣味😍 食落口嘅時候好惹味 😛😛 個人非常鍾意食豆豉鯪魚油麥菜!一定會推介其他親朋戚友嚟一齊食! continue reading
