曾分別試過香港文華酒店與及新加坡文華酒店的海南雞飯,最喜歡還是新加坡的味道,由於年代久遠,不知現在的情況是否也如過往一樣。在天后碰上了一家文華雞飯 (新加坡),正門貼滿不少食評及報導。是否就是指新加坡的文華酒店,有點猶豫,不試便不知,還是拿出勇氣來試試,相信不要將全盤期望押注的話,即使情況是強差人意,也不會太失落。我們在門口查看了餐牌一會,決定好要選外賣的項目便內進。文華雞飯的店舖呈長方形,裝修以白色為主,予人整潔之感。近窗口處設有3人一排的卡座,其他均是由小方桌拼合的桌子,大概能容納32位食客。油飯是海南雞飯重要的一環,味道出色的油飯,那種滋味,往往不用海南雞也能吃上幾碗。就正如豬油撈飯一樣,不過雞油飯就矜貴多了。驟眼看,文華雞飯的油飯似乎乾了點。果然雞油油份不足,小時候外婆老是說我終日不願意喝水,十足乾蒸燒賣。長大後我才明白乾蒸燒賣其實不乾,反而在蒸的過程中肉質被水份潤濕了,現在我會用乾過禾稈草來形容。乾過禾稈草的雞油油飯,沒有金黃的色澤,一碰即散,入口枯乾,當然感受不到應有的芳香、軟糯油潤兼備的飯粒。儘管如此,雞油飯也不是差得一文不值,米飯經雞湯及香料烹煮後,兩者味道全滲進米飯內

油飯是海南雞飯重要的一環,味道出色的油飯,那種滋味,往往不用海南雞也能吃上幾碗。就正如豬油撈飯一樣,不過雞油飯就矜貴多了。

果然雞油油份不足,小時候外婆老是說我終日不願意喝水,十足乾蒸燒賣。長大後我才明白乾蒸燒賣其實不乾,反而在蒸的過程中肉質被水份潤濕了,現在我會用乾過禾稈草來形容。

乾過禾稈草的雞油油飯,沒有金黃的色澤,一碰即散,入口枯乾,當然感受不到應有的芳香、軟糯油潤兼備的飯粒。儘管如此,雞油飯也不是差得一文不值,米飯經雞湯及香料烹煮後,兩者味道全滲進米飯內,味道豐厚,唯失手在油份方面,有待改善。

從雞件的大小察看,所選用的雞隻應不算太大,正正如此,廚師更容易掌握雞隻的烹調技巧。雖然我習慣不吃雞皮,但在咬出雞皮時,也能感受得到雞皮的爽脆。而雞肉非常嫩滑細緻,就連雞胸肉的嫩滑程度,也與其他部位相差不遠,值得推介。要挑剔的話,就要算是雞味不怎麼的濃,這與香港人吃雞的習慣有關。

三款醬料是吃海南雞飯不可或缺的,橙紅的是辣醬、黃色的是薑蓉和黑色的是甜豉油。或許新加坡天氣炎熱,需要濃味來刺激食慾,加上東南亞的雞隻多屬較瘦削的運動形,雞味較淡,三款醬汁可為雞肉提昇食味。

三款醬料中甜豉油最不地道,首先是黏度不夠,既不能緊附雞件,也未能黏著其他兩款的醫料;再來是不甜,有損甜豉油的本質。而其餘兩款辣醬與薑蓉醬料則不過不失,當然也找不著驚喜。仍舊很懷念老公一位新加坡大學同學,他當時的女友是海南人,親自做出來的海南雞辣醬,充滿蒜香及混集不同香料的香氣,其時當然是珍而重之,直至今日也難以忘懷其滋味。

除了上述三款醬料外,在雞件內附有另一包黑啡色的醬汁,試了一點,醬汁帶有不錯的滷水香氣與食味,但礙於不太肯定,也未曾嚐過海南雞飯中有這種醬汁,於是還是放棄了。

在雞件下發現青瓜片,一直渴望能嚐到醃製過的酸甜青瓜,怎料只是生青瓜片而已。

食客要在香港找一份色、香、味俱備,恰如其名的海南雞飯,好比老闆要找一位面面俱圓、稱職的員工一樣的難,事實如此,寧缺勿濫,這是個人吃的宗旨,不過作為老闆就頭痛多了。

購買外賣時,在店內值班的只有一位女侍應,她的服務態度真令人詫異。先是不容許我拍照,我明白到國有國法,家有家規,拍照或許會影響到其他食客,也有其道理。但外賣備妥後,我們要求多加點醬料,她板著臉馬上回應不能太多,只能加一點點,然後將我們的外賣拿去補充醬料。其時我們給她的回應均嚇傻了眼,醬料全放桌上,難道會對堂食的食客規限醬料的用量嗎?再者,我們若不向她事先來過禮貌的招呼,而改為自行在桌上倒加醬料,她又能奈我們任何何嗎!!!

怎樣好吃的出品,有這樣的女侍應也只會落到趕客的收場,一次也受夠了!

遇上這樣的情況,老闆要怎樣抉擇才好。

喇沙可以選擇米粉同米線兩溝, 賣相勉強都算對辦~ 橙紅色湯底望落好似都幾辣, 但其實椰香奶味都唔少. 不過配料方面就差d, 淨係兩隻唔太新鮮肉質帶霉嘅蝦仔已經扣分不少… 其他如芽菜豆卜等下欄配料亦都係馬馬虎虎. 最重要係傳統喇沙摻摻係以油麵米粉兩溝帶出不同口感, 但而家米粉同米線兩者都係較淋嘅粉類, 味道相約, 就做唔到摻摻嘅特色.

我地無食過尖沙咀店, 所以無比較. 呢間文華雞店裝修格局其實同上一手間西式茶餐廳環境幾乎一樣, 雖無特色但總算靚靚仔仔~ Overall食物其實又唔算太差, 但除咗杯薏米水比較深刻之外其他野食都只係一般般… 相對地價錢就偏貴, 三個字, 唔抵食!

點了海南雞飯套餐, 店員一直問白雞定燒雞, 我說海南雞, 她很不滿地一直重覆問白雞定燒雞, 坦白說, 做店員的應該要跟客人解釋海南雞原來分為白雞跟燒雞兩種, 我只是指向隔離檯那份雞, 佢又說"咁即係白雞啦", 太無禮貌吧! 等了差不多10分鐘才整份餐送上,油飯本身不太油膩, 可以接受, 而雞肉質都算滑, 但調味的薑蓉同豉油有點怪味, 所以沒有加, 那碗清湯真的很清, 沒有味道, 一邊食之際, 新的客人坐下又點了海南雞飯套餐, 那位沒禮貌的店員又是像錄音機一樣, 白雞定燒雞, 唉! 埋單果時, 竟然是加一服務費的, 但請問服務在那裡???

因之前係尖沙咀山林道總店食過, 覺得味道的確唔錯, 所以今次見有團購, 雖然係天后分店, 都即刻買黎試下.希望唔好令人失望就好啦.先講裝修, 的確比山林道新穎的, 白色簡約唔錯, 但坐位真係迫咗的啦.食物方面, 水準可以保持, 但份量就減咗好多, 我都知通脹, 但唔應該做團購時將貨就價,此舉即時令我對此店好感大減, 希望這些食物做得比較好既店舖唔好太快學壞啦.其次係做團購跟既小食就真係食之無味, 棄之可惜, 將雞腳同青瓜呢兩樣可以好好味既食材做得太差了.

朋友仔話試過尖沙咀分店吾錯, 所以帶左我黎呢度食。門外好多報紙同雜誌介紹, 望落好似吾錯甘呢~不過入店前見得一台人食緊野...都有少少驚d食物麻麻地...我地分別叫左一個"白雞飯套餐"同"燒雞飯套餐"個餐$65 + $5轉雞脾 + $13加細肉骨茶燒雞: 起左骨既雞脾, d燒雞皮好有風味, 連皮食味道同口感都吾錯。只系份量有點少白雞: 好夠嫩滑, 口感一d都吾"鞋"口。不過朋友略嫌雞皮較肥, 都放一邊沒吃。肉骨茶: 第一次飲, 吾知點先算好味, 望落好足料, 聞上去味道好香濃。但一試入口...只系感覺到呢碗野真系好好好咸!!!!!!!!!!!!!!!!!!!!!!!!

Previously I used to dine at the TST branch because the chicken there was good so when this branch opened I did not hesitate to go and try it when I saw the recent reviews.The interior is basically the same and left how it was from the RED FRUIT TREE, one of the female staff that used to work at the RED FRUIT TREE was retained and now works under the Mandarin Chicken.Anyway, the service was not that friendly and she grouped the people to sit in one area.★☆★☆★☆★☆★☆★☆★☆★☆★☆★☆★☆★Rice in chicken oil

Rice in chicken oil:
I tried the rice first before trying the chicken or vegetables and I couldnt believe how salty it was!
How could the rice be saltier than the main dishes?
But considering the stingy portion of chicken, it was thoughtful of them to make the rice overly salty because when the chicken and vegetables were finished there was still a decent half bowl of rice left so the rice could not be tasteless~~

The chicken is supposed to taste nicer when it is dipped with ginger puree, but in the ginger pot there was no ginger puree left, it was just ginger water remaining with bits of chicken oil that had solidified and floating on top!~!
I also stirred the pot of ginger sauce and it was mainly ginger water and there was so little puree in it! See blog for video.
The picture below shows the ginger sauce at the TST branch which is much more decent.

先說說套餐食物,一人餐可選燒雞或白雞一客,另配油飯、油菜及新加坡薏米水特飲,而小食則可於手拍青瓜或沙姜雞腳中任擇其一。由於這次二人到訪,就一於試齊黑雞、白雞、青瓜和雞腳。候餐其間,先鑽研一吓餐牌,原來全日供應的雞飯跟清雞湯亦只是 $45, 而且三點至六點堂食,還有八折優惠,平日六點前更不設加一,價位絕不算高。

女侍先送上新加坡薏米水特飲,其實一向都不特別喜愛喝薏米水,加上這杯特飲,入口溫溫吞吞的,又唔熱又唔凍,味道很淡,喝得人滿不是味兒,幸好薏米咬落一粒粒軟綿綿的,口感不俗。

至於兩客海南雞,據說店裡所用的雞,並沒指定品種,不過就嚴選雞隻的大小,以便去骨後還有適中的雞肉可吃,但又不會太多,而且煮起來亦會較易入味。先來試試燒雞,已起骨的海南燒雞,每件切得細細長長的,入口肉質嫩滑,而且燒過的黑雞,外皮明顯較香口惹味,不過就稍嫌肉質略帶奀瘦。

至於海南白雞,皮薄而脂肪少,不過由於用上了冰鮮雞的關係,肉質自然不及新鮮雞般有彈性,幸而做得皮肉分明,咬落不失油香,但亦不覺膩口,加上吃來啖啖肉,雞皮滑溜,亦算不俗。呷一口雞湯,沒半點雞油的雞湯,味道非常淡口,當然亦不帶半點肥膩。

不過較令人失望的,反而是幾款醬料,記得之前在「亞洲家族」試過店裡供應的廣祥泰的雞飯老抽,味道先甜後帶甘苦,層次非常豐富,可惜「文華」的醬汁,不論是黑醬油、薑蓉或辣椒醬,都是稀巴巴、水流流的,而且黑醬油沒甜味,薑蓉亦沒放雞油,辣醬唔夠酸辣惹味,都不算合格。不過碗油飯又唔錯喎,初頭見碗飯白雪雪,沒油香又缺乏光澤,還以為味道會很一般,但幸好吃來飯粒分明,而且軟熟爽口,加上淡淡的雞汁味,卻又毫不油膩,頗對胃口。

至於兩款小食,手拍青瓜或沙姜雞腳,奉勸店主還是專心做好雞飯和醬料算了,皆因此拍青瓜賣相與一般涼伴無異,而且當中蒜味十分薄弱,爽甜度亦不高;而沙姜雞腳,雖則外形都算飽滿肥大,但沙姜味道偏淡,雞腳亦炆得不夠腍滑,只是一般貨色。

總的來說,若撇除醬料,這裡的雞和雞飯,品質也算不俗,加上價位處於適中水平,屬可接受之列,可不妨一試。

七月中旬‧晴看店面也估不到這裡的底蘊,行近一點就知道應是這間海南雞店子頂了以前的餐廳來做。大熱天時,吃海南雞飯也好。要了鴛鴦雞,雞肉沒有什麼,飯也不錯。不過醬汁就非常稀,辣椒醬及黑醬油都似是開了水似的。需知醬汁也是吃海南雞飯的靈魂,叫人怎能滿意?
