一個人去食野,最緊要快、靚、正去返細細個曾經成日去既麵店雖然,沒有靚既裝潢,地板又黑黑暗暗,但細個就家人成日帶我黎,所以有情意結叫左碗牛腩粉腸河粉加魚皮一定要加底,如果吾係一定吾夠飽。牛腩軟林,肥膏吾算多,粉腸,外形吾討好,但都幾爽脆。河粉夠滑,吾易斷,但湯就油左少少。我就最鍾意佢既自家製辣椒油,必試!但魚皮真係太厚皮,同有d硬,浸完湯都係甘硬,同層表面吸到好多油,所以食幾舊已經好油膩、好*製*,吾係my favourite!

呢間鋪頭細細個就嚟過啦,佢嘅粉面係好有特色,唔係一般喺出邊會食到㗎今日再同老公嚟試吓,睇下佢有冇變到味,果然老字號真係老字號,都冇令我地失望我哋叫咗一個炸魚皮魚片粗麵,一個牛筋牛肚河粉,雙併每碗$28,不過份量就唔算好多,佢嘅魚皮係出邊食唔到㗎,自製嘅,好脆好好味,不過就真係得幾塊,而且佢嘅湯都幾特別清新,整體感覺都真係好唔錯,而且佢嘅辣油自家製,唔算太辣,調味幾好黎到一定要飲番支支裝汽水,因為唔係好多地方仍然保留,味道真係好過罐裝好多可能我哋去嘅時間比較晏,已經過咗中午,所以唔使等位,人亦都唔多,坐得幾舒服,有興趣可以去試吓㗎

好耐好耐冇去新蔡潤記食 " 魚旦魚片河粉 "了, 很懷念。  今次, 很好彩的是平日的星期三, 只有10分鐘時間食午餐, 就在這一刻諗起新蔡潤記食嘢。 入到去, 不是太多人, 好快搵到位坐下, 下單叫食了很想吃的魚旦魚片河粉。 再配了辣椒油, 但唔記得叫埋炸魚皮, 不過記叫了支可樂飲。 食很多次, 也給予很多次機會, 仍然食不到以前的新蔡潤記的魚旦魚片河粉, 食完很快忘記。  哪大埔的魚旦魚片河粉的味道好像隨著時間流逝, 真的一樣流走了。

突然發現想當年加底只需要 $2 蚊雞,原來依家已經加到 $7 蚊架喇 ﹗而且就算加左底都依然好細碗喎,唔加底又會點呢?回想後生時都要食一碗大及一碗細先夠飽,縮左水都幾難滿足到我胃口咯。

最衰都係您呀,晨早溜溜係 facebook 放毒,搞到我忍唔住要專登搭車黎大埔整返碗止止癮!剛才食個豬扒通粉都唔夠飽,食多碗鴛鴦穩陣喇!麟仔話依家逢星期五休息喎。

嬸嬸下廚喎  ﹗嘩,砌得咁靚呀,真有心機,多謝多謝。點解要學埋舊蔡潤記衰野呀,收埋晒辣椒渣唔食供應比食客,好孤寒囉 ﹗我淨係食渣架乍。但嬸嬸解釋話只不過剛剛用晒,無刻意收埋。又會咁巧合既?我已經好少黎幫襯,一到就無辣椒渣食。幸好就算無渣淨油都比舊蔡潤記濃郁,夠香又夠辣。

辣椒油,依舊勁香勁辣,不飲上兩大羮都未能止到癮呀。辣椒油變了少少,唔係以前礳得幼細既辣椒渣,變得普通左,我心裡 Top 1 地位不保了。

魚蛋鴛鴦加底加腸走蔥,加左底都好細碗。尋找廿幾載色香味,熱騰騰送上,先來幾口湯汁,勁濃郁,色香味美,高質高檔,湯汁濃濃芬芳,停不了地灌入口中,實在太好飲喇 ﹗使到食指大動,好想全部一飲而盡呢 ﹗冷靜冷靜,食完先飲。淋上豉油添上胡椒粉,味道更香更濃,食得更加津津有味。

魚蛋極具彈性,爽夾滑,淡淡鮮魚味,不幸落味就有點重手,味道略咸。魚蛋嚥韌極具彈性,爽夾滑,淡淡鮮魚味,不幸落味就有點重手,味道略咸。粉腸滑嘟嘟又脹卜卜,腍中又帶彈,甜美不苦澀,好功夫。

魚蛋鴛鴦加底加腩走蔥,鬆化有咬口的滷水牛腩,時好時壞難得有好表現喎,味濃香甜無渣微滑,少少滑滑肥膏。淋上腩汁的雞湯更郁濃,厚厚的汁夜滲滿味蕾,甜甜的餘韻久久不散,使人淘醉。

麵好少呢,河粉比較多,口感要一比一先最好食麻。棉滑河粉捲埋嚥韌熟麵掛上大量辣椒不停輸送,大大啖、大大力地吸啜,香辣甜美加刺激,好好食啊 ﹗不消幾分鐘全部消失無踪,最後連辣辣湯汁都心我飲晒啊 ﹗

魚蛋河加底走蔥,河粉都好結實滑溜,係有少少仲係黐埋一束束,未烚開喎。同檯位黑裙肥妹加黑超瘦妹兩個食五碗,勁呀!搞到我都忍唔住要叫兩碗添表演一下,好好味!炸魚皮由細到大都要浸湯食,吸收湯汁精華才是皇道。進化到粉薄香脆,咸咸的味道吸引香辣濃湯,半脆半腍,美味。

淨麵走蔥,完全誤會晒喇,我想要淨熟麵呢,唔係鹼水麵啊!諗住自己撈鴛鴦食架麻,爽爽幼麵捲上河粉無熟麵咁好食呢。

十幾年前成日同屋企人食, 果陣又平又好食,

本身都經常食,最近啲野食份量少左都算,都繼續幫趁。但今日再去真係不知所謂。星期日人多等耐少少已經預左。一坐低即叫魚旦河,一碟魚皮,一支可樂。可樂30秒內即有,之後一直等。。。等左20分鐘,問下睇下會漏單。阿姐答話無,人多要等下。。再等多10分鍾。同枱遲過我嘅人order左嘅魚旦牛腩河都黎左(其實佢都坐左20分鐘),佢都望左我一眼,然後同阿姐講遲坐低反而有野食先?!算,我約左人,去埋單走人同阿老闆講等太耐唔等,老闆黑晒面。總結:老店雖然擁有一班長期捧場客,但都需要經營者用心經營。完。

呢間由細食到大,因為搬左屋,已經2年無去。今朝一早特登入去食,成間舖得我一個客,落完柯打後久久都未有得食,原來阿姐掛著吹水,仲未開始淥麵。好啦,過了15分鐘終於黎碗麵,我叫牛腩牛丸熟麵,份量極不合理,那4條牛腩,每條仲細過我尾指頭,完全離曬大譜!我要熟麵又同阿姐講,佢仲話:你又唔係叫牛腩麵,係咁㗎喇,你唔夠咪加牛腩咯!我咁多前都係咁叫,都知道牛腩會少D,但絕對唔會將細過麻雀size 的一小件牛腩仲分開條上!一句完,老字號自己趕客,唔會再幫襯。

昨天都去民華,今日去到門口想轉吓。卒之走左去新蔡潤記, 一坐低就極似係會中招, 點解門口麵檔咁少蒸氣嘅?叫左牛腩米,芥蘭,魚皮。碗牛腩湯好大碗囉,好少牛腩,好少米粉。牛腩切得好細條,凍的,係需要用熱湯浸吓才可吃,米粉有軟有硬,好奇怪,似熟非熟, 卒之明白麵檔冇蒸氣的結果,同咁大碗熱湯的用途。芥蘭好細碟,煮到黄晒,其實只有兩條芥蘭剪斷,20元,都好貴啫! 夾硬食完!真正出位嘅就係炸魚皮, 以前食嗰兩款魚皮一款係薄薄一片嘅, 一款係用厚炸粉有肉有骨一齊炸嘅(方榮記嗰種), 佢呢間用薄薄一片嘅魚皮用厚厚嘅粉漿去炸,我真係第一次見, 一片薄薄嘅魚皮炸完之後,變成一條魚咁大條,再剪碎兩條俾你, 畀返一碗你,你以為好抵,其實你畀佢呃咗 ,入邊只得兩塊平時的魚皮, 仲要萬年油炸嘅! 唔敢食。 呢位老闆真係聰明,賺到盡。一句,食唔飽,立即回馬-(民華)食多次,以後睇清楚openrice先至去試新嘢!
