老公上次去食過話幾好食, 佢唔甘心上次去食時啲辣油冇渣(我老公係一個辣精), 之前聽朋友講要自己出去攞先有渣, 所以今次特地去試多一次, 因為我老公實在太欣賞啲辣油啦!我住咗大埔咁多年都係第一次去食, 2點去到滿晒座, 不過好快就有位. 我叫咗個牛筋河, 老公叫魚蛋河, 跟住佢二話不說就衝出去攞辣油啦! 我咁啱喉嚨唔舒服, 所以兩碟俾晒佢食.我本人食河粉有三大原則: 一、河粉要薄身及完整, 唔好碎濕濕. 二、湯頭要夠濃, 因為河粉本身好索湯, 如果個湯淡, 食到咁上吓成碗粉變得冇味. 三、碗粉要夠熱. 主角到啦! 個賣相都幾好, 覺得個湯應該幾濃味, 一試, 唉! 啖湯唔熱又淡味, 河粉厚度還可接受, 但一束束唔散開, 失望到極.老公嗰碗魚蛋河落咗兩碟辣油, 我只係試咗粒魚蛋, 唉! 冇味, 失望.總括而言, 佢碗河粉除咗個公雞碗可取之外, 我真係唔認為要再去食囉!

今天途經大埔壚由於有點肚子餓 .看見一間在網上有什多好評的食店 "新蔡潤記".於是就去試一試.剛入到店內發現地方不什清潔地下油脂多不大好走.心內已經打了折扣.抱着既來之則安之的心情想看一看食物的質素,叫了一碗牛腩魚旦河.三分鈡後到,速度好啊!.數了一數魚旦共三"小"粒.(真的細細粒).牛腩四片每片有三份之一是肥牛油.賣相什差,和我在openrice看到的相片有所不同.試味後發現魚旦唔差而牛腩則無肉味.19元來講都算一般水平.唯獨衛生環境極需改善.(臨走之前看見工人放在地上的一盤河粉真是倒胃....

又到星期六,放工返到大埔唔係新蔡就舊蔡 ~ 先去舊蔡,見人頭擁擁,想企係度等位都唔得,唯有轉去新蔡啦,唔洗等就有位坐喇,希望有驚喜啦 ~自製辣椒油,夠香夠辣,每次都要兩大碟先夠我食一碗麵,其實真正既主角係辣椒油。唔知點形容嗰種吸引既味道,好鮮、清新、濃郁、蒜香、辣椒香、刺激、勁辣 ﹗魚蛋鴛鴦加底加皮,啲魚蛋真係一次比一次差,口感又腍又散,就算無牙都食到呀,依家連魚片都一樣,點解變成咁架?真係食材價格高漲,要偷工減料、加多少水?質數、好食最緊要,為左保持高水準出品,我諗食客都唔會價意加價,最緊要好食。依家每食一次,評分就越低,有咩可以幫到手呢?粉麵都係批發提供,所以質量一向都保持,只係睇吓師父啲煮麵手藝到唔到加啫。粉口感滑,但幾硬淨吓,無左以前棉滑既口感,其實將湯既溫度稍為提高,烚多幾秒已經做到,貪快係咁意拖一拖,點會煮到好河粉。熟麵就煮得幾好,嚥靭彈牙有趙口又保持蛋香,正。好多食家係食評度話炸魚皮又燶又硬,其實依個係正常傳統既炸魚皮,同薄薄一塊似薯片既完全唔同。依隻淨啡色硬屈屈係要先放湯,將部份浸軟及吸湯,食既香脆又夾雜住軟軟既口感,索晒湯既精華,剛好平衡返佢既咸味,係好好食架。

第一次寫食評...如有不足請見諒聽同事介紹左好幾次話好好食...因為佢係大埔人,今次係食晏時候來..人流一般...入到去..環境有點點兒破舊....唔理..跟同事叫了一個片腩河(魚片牛腩河)+大可樂...我冇加底...(原來加底都係 2 蚊,落單時呀姐仲話我仲乜唔加 =.=)一食... d 湯夠味...牛腩夠(林)魚片好鮮..第一次食咁好味既魚片..............加 d 辣油 正 !!!!另外一個同事叫了魚蛋牛腩河 , 我搶左粒來食...一樣都係好鮮味... !!!同事冇介紹錯 !!唔好理佢環境最緊要好食

逢星期六日總有一天會幫趁,通常外買,一來可以在家慢慢食,二來可騰出多個位比所謂慕名而來的食客吧!但今日想快快食完做下場的東西,所以一個人堂食,一個人搵位就容易很多,又是爆滿的場況!要了一碗牛腩魚片鴛鴦加炸魚,個個阿姐都係老伙記,所以動作快,記性都很好!點解唔食魚旦原因是魚旦又準好唔穩定,真係食過爽口到不得了,但又試過林patpat咬落去要吐返出黎,所以要魚片就穩陣了,而且近排轉食牛腩係發覺很林,都頗入味,而且鍾意佢切片,o岩晒唔鍾意大大件牛腩的我!仲有第一位最愛的炸魚皮,浸少少湯,好味到不得了!但因為好油下,所以一碗係可以飽好耐囉!

今日下午吃得很飽對老公仔說晚餐吃點light的,如粉麵最後回到大埔本想吃陳漢記的,原來它現在已揚了名,很多人排隊不想等位,就到了新蔡潤記曾幾何時,是大埔很有名氣的粉麵店但是我一次都未試過店內裝潢比較陳舊,但坐得尚算舒服牛腩牛丸河其中的牛腩外表很攪笑,貎似燒鵝(還是有皮的燒鵝!)味道算合格,但肉質不明顯,稍欠質感牛丸細粒,不彈牙,頗結實的魚蛋都是細細粒的,味道一般大埔區的魚蛋,我喜歡海達和學利炸魚皮用了很多麵粉去炸的,沒有加鹽感覺比較油膩,但較久脆口當晚比較冷我們分享一枝熱麥精維他奶很窩心的!!!四樣東西,埋單不用六十食物算是過得,不枉此行

好耐都無黎探吓老闆喇,還掂今日得閒就落吓黎棒吓場啦。落到去唔見老闆係度喎,咁唔緊要啦,食碗麵就算啦,十二點幾有啲冷清,任坐,奇怪地星期六都無咩人,心覺不妙。魚蛋鴛鴦加底加牛腩,到底發生咩事呀?﹗搞咩呀?﹗我係度食左廿年,從未試過碗野難食到令我想掉低筷子唔食,比錢走人就算 ﹗啲牛腩好似人地煲完湯啲瘦肉咁鞋烚烚、又無味,瘦肉一啲脂肪都無,點會香滑。比較吓今次張相同上次五月差幾鬼遠,見到啲牛腩白潺潺,都無炆到入味,又未炆腍,未食已見到啲纖維硬掘掘 ﹗我係叫河粉架 ﹗唔係叫河粉碎上呀 ﹗碎到完全夾唔到,我已心情沉一沉,有啲火,要用匙羹先食到,好似食飯咁,難晒譜 ﹗湯又淡又多油,想點呀?﹗只有魚蛋保持水準,仍算好味,無問題。今次令我非常非常地失望 ﹗

魚蛋鴛鴦加底加牛腩,到底發生咩事呀?﹗搞咩呀?﹗我係度食左廿年,從未試過碗野難食到令我想掉低筷子唔食,比錢走人就算 ﹗啲牛腩好似人地煲完湯啲瘦肉咁鞋烚烚、又無味,瘦肉一啲脂肪都無,點會香滑。比較吓今次張相同上次五月差幾鬼遠,見到啲牛腩白潺潺,都無炆到入味,又未炆腍,未食已見到啲纖維硬掘掘 ﹗我係叫河粉架 ﹗唔係叫河粉碎上呀 ﹗碎到完全夾唔到,我已心情沉一沉,有啲火,要用匙羹先食到,好似食飯咁,難晒譜 ﹗湯又淡又多油,想點呀?﹗只有魚蛋保持水準,仍算好味,無問題。今次令我非常非常地失望 ﹗

今日去咗大埔行街. 跟住搵野食...我地去咗 "新蔡潤記魚旦粉麵" 因為聽講幾好味. 所以就去試下...牛腩河 $17 - 我覺得啲牛腩唔太林. 但味道 ok 牛筋米粉 $17 - 好好味...因為啲牛筋好林, 好入味...正呀芥蘭 $8 - 啲菜都 ok. 唔太老 炸魚皮 $16 - 呢個麻麻地, 所以食唔晒汽水 - 大 $6, 細 $5 -----抵飲呀...

粉麵老店幾十年,招牌菜自制魚蛋,必食。仲有研發成功,好味、嫰滑炆牛腩,值得一試。自制辣椒油,夠晒香辣,淨食渣最正 ﹗魚蛋鴛鴦加底加牛腩,嘩 ﹗無限驚喜,終於等到今日喇 ﹗碗麵一放上枱,第一眼望落枱度已察覺有唔同,好好好味既牛腩,肥瘦適中、恰到好處,炆得嫩滑、非常入味,個人黎講只係略厭果皮味稍重。但已經再唔係以前啲無味、鞋烚烚、一口渣、硬掘掘既牛腩,弟老闆做得好好 ﹗魚蛋彈牙,好鮮好香魚味。雞湯底加埋香濃腩汁好配合,剛好。賣相一流,粉麵同配料都放得好有調理,食得好開心,多謝 ~魚蛋鴛鴦加底加粉腸,由細食到大,食左十幾年,一直無變既係辣椒油,依舊香辣十足,我比較喜歡走油淨渣,當飯食,正呀 ( 冒汗中 )。仲有無變既係無味精雞湯底,成碗飲晒都得,真材實料唔口渴。自製魚蛋爽口彈牙又鮮味。雖然有陣時都會失手,口感比較散、有魚腥味,但咁多年基本上都保持一定水準 ﹗試左咁多次粉腸,始終都係有苦澀味、而且過林唔彈牙。都係食返最拿手既魚蛋啦,有保證。都唔知點解每次一兩點後啲湯就淡晒,而係忙既鐘數啲粉麵又煮得唔夠時間,唔夠熱只暖、唔夠軟滑似滾水浸一浸就攞出黎,唉 ........ 質量最緊要呢 ~

這天和媽媽一起到蔡潤記回味一下,是日人不多所以一到就有位啦!一如既往點 牛筋粉腸河還要加大,再來個小可樂哈哈...早餐....我真的很大食的!!!還是比較欣賞這裡的辣油,一人一小碟!吊下你的引~牛筋肥美,蚊得林....但粉腸味道有點怪 整體上都比以前差了。同檯的食客說道:「嘩!魚蛋怎樣比以前都小的一半啊!!!」我想: 原因物價都漲了很多,但它沒有加價!唯有偷工減料算了吧~不過不失!希望不要愈做愈差算了~
