呢間睇個名就知招牌菜係清湯牛腩,但係清湯牛腩我就麻麻地鍾意,太清淡了,今日口淡淡想食啲味道濃少少的野食所以我今次無食清湯牛腩麵,見到是日午餐有紅酒燴牛尾意粉,都係牛應該都唔會差,所以就揀左佢,而且價錢都係40左右,抵食。意粉同牛尾係分開上的,所以可以自己撈汁,個紅酒汁酸酸甜甜,味道幾好,胃口即時就黎了,牛尾煮得幾腍,有牛味,感覺有少少焦食,應該係有簡單煎一下,意粉質地適中,份量適中,跟一杯熱飲,不錯。

- The Shrimp🦐Roe Noodles🍝present a nice and mouth-watering aroma. Noodles🍝were perfectly al dente, with no unpleasant alkaline taste (Alkaline is a must-have ingredient for making Cantonese Egg Noodles🍝as only that can help to present that springly texture. The problem is akaline gives a very unpleasant taste and it takes a lot of time and experience to eliminate that). The noodles🍝did not stick together because a bit porl lark was added in. The chef had perfectly controlled the use of pork🐷lark, not too oily, successfully avoid the noodles🍝sticking with each other and gave a pleasant pork🐷aroma. Hats🎩off to the Master Chef👏

火腿炒滑蛋沙嗲牛肉福字伊麵,再次配菜先到,其實我走包就可以跟麵放在一起呢。平時必定等麵送到才齊齊食,不過實在趕時間而且好肚餓喇,罕有地先行處理。熱熱的真炒蛋厚實香噴噴,蛋汁輕滲滑溜溜,味濃清純可口。燙過的火腿特別甜美,咸鮮突出。捲著滑蛋掉入口,食緊奄列一樣。醃得出色的沙嗲汁,淡淡清香輕輕芬芳,看似厚厚杰杰,跟滾燙濃湯混和後,變得格外美味追住食,還有彈牙富趙口的鮮牛肉片,食得到的牛味不乏肉汁。福麵煮得十分準成,剛剛好爽彈滑溜完完整整長啜長有。麵味突出掛起沙嗲汁連埋甜美濃湯,完全不想加辣椒油喇,原汁原味非凡脫俗,好食過清湯腩伊千倍萬倍!停不了的節奏直到全部消滅。


雙太陽五香肉丁蛋福字伊麵,肉丁瘦瘦嚥韌無肥膏,辛辣啖啖肉。有足夠的五香汁撈麵,可以連肉帶汁捲在麵條上齊齊嘆,味道互相牽引提升,美妙可愛好好食喎﹗雙太陽蛋兩食,焦香滑溜的蛋白,涼涼的蛋黃,刺穿蛋黃掛麵大力吸啜,爽彈麵條,黏稠甘甜蛋漿,暢快舒服拍手掌﹗一氣呵成,一啜到底。翻轉太陽蛋吸收點點熱湯的溫度,讓嘴仔貼住煎蛋,狠狠地索一索,連蛋帶湯盡收嘴裡去,一趙蛋黃爆汁暖笠笠,陶醉萬分。


火腿太陽蛋雪菜肉絲即食麵,有誠意的雪菜肉絲,粗條肉絲深色味濃嚥韌,並無勁鬆滑潺潺腍劈劈。雪菜爽爽帶著陣陣咸香,全部掛在麵條上品嚐,撞得出色愉快好味道。煮大光麵的手藝異常高質功力深厚,爽爽彈彈熱熱不腍不粉,沒有挑剔的機會,食得非常開心。麵條捲雪菜肉絲,綁住火腿掛滿蛋漿,全部一次過塞入嘴仔內,使我不亦樂乎﹗


火腿太陽蛋雪菜肉絲福麵,好很醉要吔碗熱辣辣的湯麵。極爽的麵質,撈埋太陽蛋大啖啜真的幸福到死咯﹗再來夾著雪菜肉絲齊齊嘆,似乎福麵跟雪菜肉絲味道唔多夾,怪怪的。燙過的火腿特別甜美,咸鮮突出。


煙肉煎蛋福字伊麵,輕煎煙肉不乾不硬不油膩,嚥韌散發咸香,用麵捲住食更滋味。煎蛋沒怎煎過,蛋白依舊滑嘟嘟,似太陽蛋反一反就即出貨。整隻啜入口在嘴裡爆開,濃郁可口蛋黃汁,快感滿足。突然好想食辣﹗記得早前試過只是普通的桂林辣椒油只咸不香不辣,毫不擔心混上三四羮,大口大口全數沒收,香辣兼備刺激醒神,轉左辣椒油嗎?


餐肉炒蛋火腿通粉,我真的勁討厭餐肉薄切,煎香脆後成塊紙皮乾爭爭,厚切才會油香肥美。煎定放多陣再翻煎就更加乾,搗碎撈湯食較濕潤較好味道。雞湯底異常清淡,水汪汪浸著腍劈劈通粉一齊食,好采通粉還未到半溶粉口的狀態。突然憶起跟小學時在茶記的味道質地一模一樣,古祖味道還是遠古味道?火腿絲雪藏味十分濃烈腥腥地,洒點胡椒粉僻僻去好一點,連餐肉及暖湯倒入口都可以全部食得晒無浪費。炒蛋熱熱的,真有炒過的,輕輕的滑蛋,淡淡的蛋甜,厚身夠滿足。


腸仔太陽蛋沙嗲牛肉湯通粉,竟然比腿通高質百倍喎 ﹗通粉滑彈不糊不黏不溶,清爽的口感。清淡的雞湯底撞入濃厚沙嗲汁即時生息許多,轉生為沙嗲湯﹗連湯帶粉熱辣辣灌入,十分順喉舒暢。將熱熱皮脆香口煎腸仔切碎,跟沙嗲湯通粉打成一片齊齊嘆,咸香肉甜無得頂,拍爛手掌搶住食。


家鄉炒銀針粉,銀針粉清炒不是豉油皇有點失望都照食吧。眼見已經勁多洋蔥,挑兩挑發現跟銀針粉幾乎 1 比 1 的份量,掉條入口洋蔥味強烈霸道嗆得很,味道悶悶單調,幸好有少少腿絲及甘筍絲點綴一下。食多兩條試真點,粉粉不滑嘟嘟,師傅有無出過水再炒呢?柴魚花生粥,微溫可接受。微咸略甜的粥底綿婂,花生夠香夠濕潤,柴魚腍腍充滿雪藏味道,救命。


餐腿蛋治,關人蛋治 ﹗食左先講。足料牛油無欺場,半溶滴滴咸香幼滑,微微滲到麵包之中。夾著油香甘甜軟塾煎餐肉,彈彈火腿連鮮嫩厚蛋塞得嘴仔脹卜卜,完全融合百味交錯,火花閃耀好味道。麵包質素屬中檔,有包味有香味,合格不乾不腥。不似興記鞋鞋毛巾,但也比不上榮發及虹館軟軟綿綿香噴噴。我當然知道三併比雙併貴要加錢,老闆無需那麼緊張既﹗


餐蛋牛治,即做慢煮等足十分鐘,見係新鮮煮理可接受。肥美餐肉,油肪惹味,咸牛跟炒蛋分開煮非常特別。炒咸牛格外濃味香口嚥韌,炒蛋嫩滑香噴噴,整份熱騰騰燙住嘴仔食,大滿意無挑剔。


腸仔蛋三文治,還估計會係方包捲住原條腸仔食,竟然開邊切開。高質靚靚熱狗腸,不是大陸怪味腸,不是地獄咸腸。結實肉甜煎得腸皮焦香,一咬腸汁飛射,讓嫩滑炒蛋及大量半溶牛油包著吃,色香味俱備。芝腿蛋治,最緊要夠熱使得芝士半溶黏黏,使得芝士咸香更加突出,攬著炒蛋火腿融合為一體,無敵美味的狀態。

蜆蚧鯪魚球,新鮮炸爐熱熱的,香噴噴送到,聞得到的魚香。驚喜的味道使我老懷安慰,終於有道菜值得一讚好味道。外皮嚥韌香口,裡面魚肉彈彈,鮮魚味橫行無忌,搭載蜆肉沾上蜆汁,咸鮮無敵食得津津有味,推介食得過。


煎蝦餅,即叫即煎製作需時請耐心等候,煎得兩面焦香金黃而且非常油潤,滋養我的雙脣立立令反晒光。聞一聞蝦氣突出,趙一趙微彈結實,鮮蝦味道及香氣連環緊扣,實在出乎意料之外喎,還有咸鮮的餘韻,食得過食得過。煎墨魚餅,剛剛煎起金黃熱騰騰香噴噴,咬啖試試。結實帶油香,再咬多兩啖試試,味濃腥腥,到底怎做到的?


淨藥膳豬手,筷子散發濃烈漂白水味,唯有只用羹食吧 ﹗滾都唔滾下就直接倒出黎,極討厭的微溫湯汁,不熱的湯那會好味道。全為豬皮沒什麼肉食,爽脆類的豬手,不軟不綿帶微弱黏感。大量腳底皮鞋鞋的,有點心理關口,食得不舒服。


清湯牛三寶湯伊走蔥,肥嬸小心地放下,非常靜態見不到沒什麼煙冒,亦聞不到什麼香氣,感覺不到什麼熱力。當然先飲啖湯,微微的暖意,清湯真的十分清湯,淡淡的悶悶的,隱約察覺到少少八角味,沒有想飲盡的意慾。


蘿蔔咬一口已想掉,老帶澀味,削皮不夠乾淨,沒有半點清甜味道,外暖內凍。咬多口試真一點,難食到火都黎,立即掉低放棄。牛腩、牛肚、牛筋各兩件,腍劈劈的牛肚,彈而結實的牛腩,滑而硬的牛筋,全部淡而無味,食不到絲亳牛肉天然鮮甜,完全失敗。連生龍清湯腩都更加好食,早點收隊罷啦﹗幸好我有顆善良的心,會比多幾次機會您。


伊麵已被烚到蛋味流走,麵味消散。湯底已經極淡,麵條甜味薄弱就更淡,而且質地過腍在溶化邊沿。極度討厭麵條碎濕濕,師傅不會專登剪斷我長長伊麵麻?短短一節節食到疾住疾住,吞到一肚空氣,不能一氣呵成大啖大啖地吸啜,感覺不良好﹗食到無心機,是但馬虎倒晒落肚算數。


脆口爽腩湯河走蔥,何解油潤得很?湯底依舊清淡,水感十足,淡淡然輕輕牛肉湯味道,飲慣特濃膠黏牛骨湯的我,真的感到非常意外。爽腩比鮮腩味濃一點點,味道質地比煲湯瘦肉可口少少,較彈較軟較多汁。蘿蔔不得了﹗依舊帶澀不甜有點渣,盡咬兩啖頂不緊放棄。河粉天生味淡搭著偏淡湯底,食得不太滋味,幸好完整帶滑不散碎。快快手連湯連河粉掃入口,河粉份量都較多,價錢來說抵食。


清湯崩沙腩麵走蔥,慢功出細貨,賣相非常討好,擺位設置夠講究靚靚仔出場。溫度暖得來夠熱,拍幾張遺照就即刻處理。牛腩不覺崩亦沒有沙,趙落是是普通的鬆軟肥腩。淡淡然的牛腩味道,夠濕潤夠肉汁尚可免強達標。蘿蔔依舊一啖投降,苦澀不爽甜,真係不如唔好出仲好啦﹗終於無剪斷我的長壽麵,可以暢快地啜啜啜。見到對面長髮四眼妹食緊碎濕濕短實實伊麵真陰功,不停夾不停夾再不停夾,顯得好攰好忙,食到疾住疾住真係慘慘豬。


師傅係唔識、唔知道、還是懶啊?鹼水麵到底有否過冷河沖乾淨?強烈霸道野蠻無禮的鹼水異味攻鼻醃眼,頂硬上撈辣椒油食晒去,不想浪費!漿嘴黏口的麵質,連湯汁都同樣沖漬著難受鹼水味。唯有試試用上桂林辣椒油,希望能夠掩蓋一點。不過實在太馬虎喇麻,微辣強咸的辣椒油,是鬼旦全部塞晒入口吞落肚。麵底份量真的不少,清湯腩以這價位來說算經濟抵食的。但我要質素,不是要貪平囉。


濃香坑腩清湯濃郁甜美,沒有被河粉、幼麵、伊麵所污染,飲得清爽暢快。濃香坑腩甘香蝦子撈麵,坑腩?找不到條坑在那啊﹗平凡普通的瘦腩,幸好鬆軟有點牛汁有點牛味。試勻爽腩、崩砂、坑腩,爽腩似坑腩、崩砂似肥腩、坑腩似瘦腩,特徵不突出,三種外貌都差無幾,真係十分可疑。坑腩牛肋骨之間的肉,肉味較香濃,連着牛骨軟膏。最正統爽腩牛白腩,是薄薄一塊筋膜,咬口煙韌爽脆。崩沙腩牛的橫膈膜,筋膜連少少肉,肥瘦剛剛好。


早前嘆過十八層地獄惡嗅鹼水湯麵仍猶有餘悸,膽粗粗抱著食家應有的冒險精神挑戰撈麵。將幼麵跟蝦子撈均後即時大啖啜到舌尖上,十分正常的味道,沒有壓味、沒有異味,可以放下心頭大石咯。微暖微爽帶點濕,不夠乾身去水不夠徹底,蝦子真係甘香咸鮮有質素。食到一半再次感到疾住疾住,師傅您又走去剪我既長壽麵呀?到最後直頭碎濕濕,極之令我生惡﹗


魚蛋鮮腩伊麵走蔥,以 $8 蚊的代價換取雙併的服務。湯底依舊偏淡泛著微弱牛肉味,蘿蔔依舊不甜帶潯淡荗荗。點鮮腩竟然比爽腩,早前點爽腩就比牛腩,師傅好難捉摸,還是不懂分辨?厚厚肥美彈滑,軟綿多汁,陣陣清香牛甜味,意料之外合格。


有水準的潮州白魚蛋,雖然只有輕輕的彈性,不過魚味突出,散發可口咸鮮。伊麵有輕微的進步,長返一點點,完整返一點點,但依舊過腍發脹,烚到完全無全無晒味道,真係硬著頭皮吞落肚。沒有麵味只有滾水味的伊麵極為難食,唯有出動大量辣椒油希望起死回生,不料桂林辣椒油只咸不夠香辣,捲住牛腩大大啖盡快馬虎倒晒落肚算喇。


牛筋粗麵走蔥,師傅煮錯鹼水麵問可否接受,正常當然無謂,但我定一定神,回想早前的鹼水麵惡嗅難當,立即耍手擰頭啦﹗請煮過碗正確的粗麵我吧。奇怪地湯底比起幼麵、河粉、伊麵更清甜香濃既呢?牛筋乃我喜愛的質地,軟綿滑滑黏黏不硬不爽的,入味得宜帶甜不過咸。


粗麵腍身微溶黏口不舒服,不香不爽不滑,趙得不暢快。又係辣椒油打救既時候,捲起辣椒油求其大啖大啖迅速消滅掉。蘿蔔保持依然厚皮帶渣不甜,一口放棄。到底依群師傅是否不懂煮麵?鹼水麵、粗麵、伊麵同樣可怕,唯獨福麵頂級好食!


咖哩薯仔鮮腩飯,無得選爽腩坑腩崩砂腩?不過已有靚腩坑腩及腩片在內呢。滾熱辣送上,一撈出煙,非常好 ﹗並不是馬虎淋個汁就隊出貨給我的。每件牛腩結實爽爽彈彈的,不是軟綿綿類。別具特色,牛味甜美,跟飯及咖哩異常合拍,非讚不可,開心滿意。咖哩汁厚薄清爽,不是黏稠厚厚。味道豐富不單調,香料芳香還散發鮮茄洋蔥薯仔味道,有果酸有薯甜,比起茶記有更高層次。就算牛腩已被我全部清掉,都忍不住撈多兩三啖飯,有質素食得過,色香味令我諗起大埔咖哩至尊。


藥膳雞河走蔥,雞件分配夠公平,有髀有胸也有翼。胸肉鞋鞋,上髀滑滑,下髀彈彈,中翼散散。清清淡淡的藥膳湯,飲得出有果皮、杞子、川芎、白芷,少許雞甜味道,微甜水水不過不失還可以。河粉熱辣辣,但湯汁暖暖地,大啖一索河粉滾水味霸道,用滾水拖完再放湯的嗎?成團河粉沉底,立即動手夾起挑散跟湯汁融為一體,連湯送到嘴裡,舒服美味得多了。河粉煮得美妙可口,綿婂完整不散碎,長啜長有夠暢快,最後差不多所有湯都被我吸乾咯。


咖哩牛腱湯麵,蘿蔔沒有最差,只有更差 ﹗師傅再下兩成,不止厚皮帶渣硬掘掘,入口酸酸的即時吐掉,想嚇死朕咩﹗鬆軟牛腱飄著陣陣羶味,從來未試過,幸好還能食得落,頂得住。咖哩湯底水汪汪淡茂茂,與我幻想會像日式咖哩拉麵般黏黏稠稠的背道而馳。飲多兩啖試真一點,這種味道似足隔離民康車仔麵,有趣有趣。


以前不知道咖哩撞麵會變紅色而有點擔心,後來發現因為咖哩粉與鹼水麵有化學反應,是對身體無害的。膽粗粗再次以身犯險,入口漿嘴超壓異味鹼水麵,可怕無比萬劫不服﹗不過水直接出貨供食客享用,帥傅到底有否自己試食過的呢?嗅到有點反胃,勁落辣椒油都未能掩蓋一點點,不想浪費頂硬上吞落肚吧﹗不過蝦子撈麵非常正常懂得過水,難道師傅覺得湯麵就不需要嗎?


咖哩薯仔牛脷,眼測已發現咖哩汁薄衣衣水汪汪,既然黎左都要比面照砌啦 ﹗兜兩下就將咖哩汁連牛脷鋪在薄餅上預備捲起出擊,誰知大大舊舌尖放係面前﹗師傅您成條脷隊出黎會否有點可怕呢?仲要睇到滿佈脷胎添。您太睇得起我,真心有點唔開胃,食慾大打節扣,完全唔想食咯,食左幾十年牛脷重來未遇過這狀況。莫非食牛鞭會成個龜頭放係度咩?牛鞭伊麵免切成抽上,唔該晒。


薄餅製作需時請耐心等候,不過我估計只是微波爐翻熱吧。熱辣辣香噴噴跟咖哩牛脷一同送上,我已經畜勢待發,要殺個措手不及﹗咖哩水淡淡的不香不辣,太薄完全掛不到牛脷亦掛不到薄餅,拿起手已漏走大部份,食得辛苦唔舒服唔開心。牛脷味淡不羶不甜,質地軟腍腍。薄餅散發油香焦香嚥嚥韌韌咸咸地,比咖哩牛脷更好食,試一次便夠。


咖哩薯仔牛三寶,味道有淡中濃、質地有薄中厚揀的嗎?食三次就三次都唔同質地唔同濃度。第 1 次咖哩鮮腩飯中中滿意;第 2 次咖哩牛脷淡薄劣評;第 3 次咖哩三寶濃厚非常好。由細到大我對傻仔一向麻麻,內內外外都係一名食肉獸,不論傻條、傻餅、傻圈、傻蓉只能抱著試一口的心態,這件大大舊粉粉腍腍可以的。要等成廿十分鐘才送到,是否因為牛腩未炆好嗎?牛腩特級爽彈,不可以話係韌,超有嚼勁要出力趙。金錢肚就十分爽彈不是腍劈劈,更美味過癮。牛筋最出色,黏膠軟綿味濃。


甘香蝦子撈麵清湯幾乎沒有味道,比清湯還要清,連牛味也沒有,淡如水的蘿蔔湯,但油淋淋的,早前食過鮮腩甘香蝦子撈麵既清湯濃郁好味架喎。清湯蘿蔔,劣質的蘿蔔根本沒有勝算,不如收手罷啦﹗難食得出奇,唔出好過出,慳返少少錢買好一點的食材更好。


甘香蝦子撈麵走蔥,為何要搞我既長壽麵呀?我極討厭將麵條剪斷,怕小朋友哽親?短實實一段段,食到疾住疾住火都黎﹗出前一丁您唔去剪?意粉您又唔去剪?撈麵兩三分鐘已經送到,但我的咖哩三寶等到十分鐘已過,忍無可忍問下有無漏單,肥嬸話仍然做緊,最終廿十分鐘才到步,我碟撈麵凍冰冰啦!


自製咖哩撈蝦子幼麵。鹼水麵就算掛著大量咖哩依然散發輕微壓嗅味,救命﹗幸好還撐得住。咖哩汁厚厚濃濃,香料味豐富強烈,停不下將所有咖哩連牛三寶吃掉,事後有點頸渴咯。


濃香坑腩牛丸湯粗麵,這就是傅說中的坑腩?味道淡茂茂像湯渣一樣,質地乾鞋帶韌。牛丸竟然屬牛丸皇血統,特濃牛味霸道,肉汁瘋狂激射,味道留在齒縫舌頭上久久不散,超讚牛丸。何解連粗麵都會散發少量鹼水壓味?不會是跟幼麵一齊煮的麻?倒下大量咸咸微辣辣椒渣,免強可以掩蓋一點點。真的沒什麼穩陣選擇,伊麵碎濕濕烚定淡茂茂過腍,生麵超壓異味受不了,河粉時好時壞,時散碎過腍劈劈,時完整綿滑滑,粗麵糊口黏黏不清爽不滑彈。


咖哩薯仔滑雞飯,嬸嬸話咖哩雞即叫即煮所以製作需時,要等耐一點啊。真係鮮煮的話當然高興,最緊要好味道。要我等足廿分鐘竟然提供如此低質食物,實在太過份﹗見到碗飯我即時臉色一沉,中硬伏逃不掉。其實可以再少一點飯呢,但嬸嬸話怕我食咖哩追飯食唔夠喎。好好好,您放低吧。眼測已知道白飯濕濕爛爛,入口黏黏糊糊濕淋淋,完全唔想再食落去。


第 4 次點咖哩,試齊厚中薄、濃中淡口味。依碗屬濃厚味道,香甜豐富可口我鍾意,免強撈汁吞幾啖爛飯頂頂肚,餘下全部唔食掉丟。早前食咖喱牛三寶同樣等勁耐,回覆製作需時,牛腩無味兼質地硬掘掘,非常明顯牛腩未炆好。依次等廿分鐘好明顯真正原因係飯未煮好﹗為何不坦白講無飯呢,我可以轉麵轉河轉伊,無需要白白浪費我寶貴既青春及時間!


撩下撈下試件雞,雞中翼一開二,滑嘟嘟可以既,再來雞翼尖,都係滑嘟嘟無咩肉食,再來又係雞翼尖﹗我即時呆一呆,想點呀?求那其急急啜晒雞肉算數。仲有件雞背脊跟尾,已經沒有期望,火都黎﹗最後中大奬,有四份一件雞上髀﹗骨多肉少,骨衫衫而且多碎骨,雞食晒可以走人,留低大大碟爛飯益您地啦﹗
