通常想食海鮮時,作為大埔人都會到新街市地下行一轉,買新鮮又靚的海鮮然後到2樓熟食中心搵師傅煮嚟食。我較喜愛2樓搵釗記幫手,呢間磅重是幾袋總數計的,每磅約60至70元加工錢,再同客人溝通想點煮…很喜歡豉油王鮮魷、椒鹽瀨尿蝦、切片鮑魚炒薑葱或陳皮蒸原隻鮑魚、再加條蒸魚就是二人餐了,人愈多就食得更開心呢釗老闆很喜歡與客人傾計,他最拿手的是芝士焗龍蝦、豉汁蒸蟠龍鱔…午餐時的炒粉麵飯餐連凍飲也非常抵食冬天食蛇宴,也值得一大班朋友嚟預訂呢!

翻開餐牌,揀左黑椒牛仔骨同鵝片先來個開胃🍴!黑椒牛仔骨火辣辣,夠晒香,啖啖肉juicy得滯,骨旁依啲肉啖啖都咁滑嫩,把口水流晒一地。再食鵝片,啲鵝肉滑溜溜,鮮味十足,每塊都吸晒啲香濃汁液,食落簡直正到爆燈💥!轉戰海鮮,蒸咗個扇貝上檯,塊面鋪滿咗金黃色蒜蓉同綠油油豆苗,蒸得啱啱好,肉質彈牙又帶點甜,蒜香襯托得啱啱好,整體味覺平衡得宜。班球則係另一喜出望外,炒得噼啪作響,表面饒有彈性,呢個做法保留咗鮮魚嘅原汁原味。走後門出去海鮮市場,貪新鮮買咗個龍蝦返嚟伊麵底,勁!龍蝦肉嫩彈牙,好似彈簧咁,伊麵吸滿咗海鮮嘅鮮美同湯汁,每條麵都係唔舍得放落嘴以外。整晚食完,真係正過六合彩。朋友跟我一齊歎,都讚不絕口👍,成功將我哋普通嘅食海鮮夜晚,變成一場味蕾嘅盛宴!下次再撲埋啲新鮮嘅,試吓佢哋其他拿手菜,準備好餓返去一次啦!

大埔街市必食屋企人一早訂咗枱去到就有得食🤣最鐘意佢個豉汁蒸鱔真係食到幾碗飯可惜今次呢條蒸鱔,唔係話太肥冇五斤🥹但係都係好脆口👍🏻今次都有叫龍蝦伊麵,但係嚴重懷疑點解啲龍蝦多過伊麵咁多🤣呢張相入邊係啱啱嚟到伊麵真係好少到喉唔到肺,但係佢個汁係超級好食💃🏻真係細個喺酒樓食到嘅味道落咗去街市買蠔食菜新鮮真係點整都好食👍🏻豉椒炒蟶子炒到啱啱好,但係調味有少少Over叫咗兩個小菜睇到佢嘅顏色咁足油就知咩料🤣🤣好食呀

上星期諗住同屋企人去大埔食海鮮,所以特登喺樓下街市度, 買咗條靚魚, 瀨尿蝦, 鬼爪螺..... 仲有其他海鮮, 點知奶曬嘢。原來高手真係太勁, 幾隻椒鹽瀨尿蝦,料頭又唔夠不突止,D蝦又過熟!都算啦! 啲鬼爪螺一D都冇洗就拿去蒸, 搞通我食到成手都係沙,仲煮唔熟,最後仲要返蒸先至可以食得。條幾百蚊嘅魚至死得唔低, 佢一聲唔該,洗都唔洗, 魚扣都冇劏開就攞去蒸。死未。最後好彩佢識做, 褪番少少加工費, 但啲海鲜就白白枉死了

今日釣完魚攞住啲泥鯭,嚟到大埔街市熟食中心,見四周都好多人,最終因為唔駛等位去咗食評唔係咁好嘅釗記,諗住未必咁好彩試一試佢,打算加工椒鹽泥鯭、再叫兩個小菜(叫咗豉椒炒蜆同豉椒鵝腸)同啤酒咁。店內一個四眼妹話加工70蚊一斤,我多咗一両,一係俾番兩條泥鯭我一係加10蚊,我有啲愕然但訂價係咁就真係無話可說,只好收回兩條泥鯭。之後,我向店內一個四眼仔叫一支大青島啤酒,同佢講我帶咗支白酒,要求俾冰桶,有其他客人要用我即時交還,四眼仔話ok,之後親自攞一個裝有冰粒,凍水同一支大青島嘅膠桶俾我。之後,店內一個70餘歲嘅阿姐攞碟椒鹽泥鯭嚟,大聲講:「我一桶油二百幾返嚟,真係蝕俾你呀!」我再次愕然,咁算唔算侮辱客人?!你舖頭都寫明椒鹽加工每斤70,你用二千蚊桶油唔通又怪我呀??食曬碟魚同蜆,飲完啲酒好耐都未見碟鵝腸,我問四眼仔有冇漏單,我話漏單唔要了,四眼仔好誠實,話冇落單,我就取消了。埋單時我睇吓有冇收多錢,俾我發現多收了二十蚊,70阿姐話冰桶要加收,最近開始,我話一早同我講要加收,我心甘命抵,餐牌、店面冇寫埋單唔出聲,我唔check單都唔知。喺度希望大家惠顧此店必須小心,清楚收費內容,之前濫收費用嘅

幫襯過幾次,大廚手藝的確不錯,仲愈來愈多客人慕名而來。不過近來質素每況愈下,伙記落單不清不楚,自來海鮮煮好之後攪唔清楚邊枱客人的order, 見過多次同食客爭拗海鮮份量,亦見過撈亂客人自攜海鮮,出現非常尷尬場面。發生喺我身上的一次谷氣事件;係我order咗碟豉油王炒麵,上枱得半碟份量,我同伙記仔投訴:吓……唔係麻,得半碟?伙記仔竟然話:我睇住師父炒嘅!落足兩個麵架喇!!我當堂呆咗-_- ,呢次堅嬲,所以決定唔再幫襯。再好食都假,更何況多人光顧之後質素已經大大不如前。

見網絡很多都推薦大埔釗記,假曰中午便到釗記食海鮮試試,但食物上枱已完全感到廚師的求其,例如豉油王蝦,無剪頭和腳,問的時候就話廚師忘記了,後來又說因蝦細隻,不用剪,其實我買的蝦$168一斤,是中蝦,唔算細,另外薑蔥蟹,冇落薑,之後補返D薑比我,再炒一炒,有出水情況,味道已不好,浪費食材,鹹蛋黃鮮魷更不好吃,炸皮很厚!食落成口油,而鹹蛋黃掛不上皮,鹹蛋黃一嚿嚿在碟邊,根本冇推開鹹蛋黃!以這個價錢,六様東西,每樣一斤左右,收了$460加工費,這價錢不值去食。

我都隔咗好多年冇食釗記近日突然之間諗返起呢間餐廳,就二話不說訂枱,展開我懷愐美食之旅。之後先發現原來佢近排好紅,有YouTuber介紹過!其實我都識咗老闆好多年,覺得香港人應該要支持番多啲小店,所以我能夠再次品嚐到呢種美味,真係好開心呀!老闆人親切有善,好誠實我哋今次只不過係加工鮑魚,佢加咗啲果皮同埋豉油,令到啲鮑魚好有鮮味!真心好好味!之前去過其他餐廳都食唔到呢種味道!今日食返好耐之前食過嘅味道,真係好懷念啊!

老闆人親切有善,好誠實

我哋今次只不過係加工鮑魚,佢加咗啲果皮同埋豉油,令到啲鮑魚好有鮮味!
真心好好味!
之前去過其他餐廳都食唔到呢種味道!
今日食返好耐之前食過嘅味道,真係好懷念啊!

今日我哋一行人行完山之後嚟食晚餐🥣,我都係睇到一個YouTuber嘅介紹,先知道有呢一間餐廳!嚟到之後果然冇介紹錯!我哋喺樓下買完海鮮就拎上嚟加工,老闆同埋侍應都熱情招待,好有禮貌!我哋叫咗豉油王炒蝦,調味剛剛好!食完都唔會口渴!應該冇咩落味精!真係好好味㗎 !仲有一碟係豉椒炒聖子,豉椒味好足夠晒鑊氣!睇得出我俾心機炒!大家都可以嚟試吓啊!冇介紹錯㗎 !
