自疫情以來,幾年冇去過大埔街市熟食中心食嘢難得路經大埔,我同朋友即刻上去睇吓上到去,發現原來有銓仔記,二話不說即刻坐低首先食個煎藕餅,非常香脆好有咬口,脆卜卜嘅聲音響個嘴裏面,爽呀!跟住嚟一個馬拉盞通菜,大大碟肉碎好夠份量,又唔會太鹹,通菜又唔會炒得過淋,正有一個有趣嘅發現,就係差不多每一台都會點芝士大蝦伊麵,所以我當然唔執輸,$128真係抵食,蝦新鮮,芝士汁好濃,配合伊麵煙煙韌韌,口感豐富,唔怪之得枱枱都叫啦兩個人食三樣嘢,埋單都唔使三舊,捧住個肚走,開心呀😊

有一個有趣嘅發現,就係差不多每一台都會點芝士大蝦伊麵,所以我當然唔執輸,$128真係抵食,蝦新鮮,芝士汁好濃,配合伊麵煙煙韌韌,口感豐富,唔怪之得枱枱都叫啦

川芎白芷天麻魚頭湯⭐️⭐️⭐️⭐️⭐️魚雲已斬件不是原隻魚頭,幸好保持鮮滑﹗天氣凍冰冰飲啖熱湯暖暖胃,豐胸魚湯最適合不過。魚鮮味突出,還有薑味酒味藥材味緊接著,最緊要趁熱飲啊﹗白灼游水活海蝦⭐️⭐️⭐️雖然煮耐了一丁點,不過游水生灼鮮爽無比,仲有甘香蝦頭膏點綴就更加可口﹗蝦肉在嘴裡紮紮跳,活力十足﹗韮菜豬紅⭐️⭐️⭐️豬紅浸得入味不鞋不腥,滑滑味濃帶汁,不過始終最愛長毛潮和興出品。

清蒸兩斤半海鷹䱽,巨大靚魚可遇不可求,在街巿魚檔搶回來的兩斤異獸﹗師傅蒸得分秒不差,厚厚啖啖肉當牛扒食,嬌嫩無比鮮味一飛沖天,滑不溜口,魚汁噴射﹗貼心地另上不平凡的蒸魚豉油,讓食家們可以選擇直接淋上或是慢點享受。魚肉扒滾埋秘製蒸魚豉油,躺在大大啖飯再一齊釀入嘴仔慢慢享用,美味不停遊蕩及迴響,全世界像靜止了一樣。

豉椒炒花蛤皇⭐️⭐️⭐️⭐️⭐️師傅生炒誠意十足,不是汆水翻炒兜汁﹗花蛤肉飽滿肥美滑嘟嘟,彈牙不韌爆晒汁,鮮味迫人要趁熱搶住食,豉椒香口惹味不混濁,芡汁厚薄適中不一舊舊,牢牢包著每粒靚肉如虎添翼﹗拆到满满一碗花蛤肉撈埋少少香辣豉椒汁,狠狠地連飯帶肉掃晒入口,爆汁爆味百味交差好食到曉飛﹗

薑蔥炒花蟹⭐️⭐️⭐️蟹拑幼長沒幾兩肉,幸好原條拆出再整條塞入口夠鮮夠甜都是滿足的﹗蟹身鮮肉一梳梳大大舊夠睇頭,拆滿一埋再掃入嘴仔就更加開心﹗我個人喜歡食巨蟹,最好每隻都要半斤以上,啖啖肉先夠霸氣啊﹗所以大閘蟹我麻麻地喜歡。薑蔥炒魚卜⭐️⭐️⭐️雖然有點過熟而變得脆而韌,不過薑蔥味道已滲入每隻魚卜,可口惹味焦香有鑊氣,給多點牙力慢慢趙吧!另類享受。

上湯焗龍蝦伊麵⭐️⭐️⭐️澳洲龍蝦完成度極高,脆甜鮮味無比彈牙,恰似在嘴裡游緊水一樣,滿星無可挑剔﹗伊麵煮得有點過火,太腍太濕太散碎,要用羮筷雙管齊下先夾得到,味道索盡上湯滑嘟嘟全部跌晒落肚。馬拉盞炒通菜⭐️⭐️⭐️爽甜翠嫩的通菜,焗夠時間讓馬拉盞味道完全迫入菜中,大注大注地享用,爆汁舒服,菜甜味非凡夾雜香辣咸鮮更加醍神﹗

椒鹽花竹蝦頭⭐️⭐️⭐️游水花竹蝦用作刺身,剩返個頭當然不要浪費,走走油炸得金黃酥脆再兜個椒鹽,香辣鹽魚咬掉眼珠及鋸齒就可以成隻落肚,脆卜卜食得津津有味。原條三文魚刺身⭐️⭐️⭐️比想象中香甜軟綿,魚油豐富滑滑,沾少少山葵豉油更美妙。薑蔥灼鮮吊桶⭐️⭐️⭐️⭐️原條原汁原味千祈不要劏開,保存鮮甜墨汁鮮味吊桶肉汁,雖然未能媲美游水活灼,甜美彈牙可口已心滿意足﹗

豉汁蒸魚頭⭐️⭐️⭐️豉汁跟刴椒煮法各有千秋,不過大家愛刴椒更甚。豉汁的咸香風味別樹一格,魚雲魚臉珠魚三角同樣啜得我心花怒放,滑嘟嘟魚味濃郁。白灼游水瀨尿蝦⭐️⭐️⭐️⭐️⭐️發現秘技食得輕鬆,先用鉸剪從中間剪開,外殼由左右兩邊撕掉,最後只剩低中間大大條濕潤嫩肉﹗不要怕醜大大力啜,蝦汁甜到入心,鮮到講粗口不停喃喃自語,肉質幼滑可口拍爛手﹗

清蒸漩水石蚌,師傅功力深厚,魚骨一點紅稱為最上成的武功﹗緊緊熟就立即出爐,鋪上蔥絲贊油,淋上豉油滾熱辣飄住煙上枱。個人一向不太愛石蚌,眼前依尾竟然魚甜味非凡完全在我意料之外﹗啖啖結實厚肉魚味濃郁,肉彈皮黏,大舊大舊地嘴嚼更是幸福﹗成條都係寶,魚春魚肝魚骨魚鰭魚尾魚頭魚三角無一幸免,都被吸啜得乾乾淨淨。

豉油皇炒麵加底,份量十足混入芽菜蔥段及洋蔥更加香口,雖然我全部都唔食的,要親手耐心地全部挑走才可以安心地大啖大啖品嚐。作為麵痴的我實在忍不住一二三四碗地搶攻,黃金比例的生老抽香噴噴,麵質乾爽彈牙不過濕不過腍,趙得開心痛快﹗唯一不太開心就是剪碎了我的長壽麵,我鍾意長啜長有一氣呵成最暢快,依家只可以扒飯一樣拿起碗掃入口,或續啖續啖夾入口裡去,正如出前一丁及意粉都不會弄碎吧﹗

香芫大蜆煲,印象中叫韓國大蜆,肥美巨型脹卜卜,嚥韌而充滿彈性。又係我最討厭的芫荽﹗茜味強烈而霸道,但不失其鮮甜蜆味及海水咸鮮,各種味道爭持激烈,互相輝映。刴椒蒸魚頭,完全無馬虎無求其鋪上刴椒就算,混入蒜蓉豉油陳醋等等,酸酸辣辣更添風味﹗新鮮度滿分,只要一啜便知龍與鳳,我最喜歡魚眼,啫喱狀鮮而不腥,滑嘟嘟啜得過癮。魚雲魚三角魚臉珠登,嫩嫩膠滑充滿骨膠原,滾上開胃神汁啜過不停。

豆豉鯪魚炒油麥菜⭐️⭐️⭐️⭐️油麥菜爽甜極至,沒有炒到縮水同甩色。所緊要炒得夠熱夠均勻,芡汁豉味已滲入每條菜中更是美麗。蒜蓉蒸勝瓜⭐️⭐️⭐️蔬菜沒什麼選擇,來道冷門一點的。新出爐勝瓜熱騰騰多汁飽滿,先來外層結實,緊接著嫩肉滑滑,瓜甜汁香。菠蘿生炒骨⭐️⭐️⭐️半肉半骨、半脆半彈、有咬口有肉食。咕嚕汁夠酸夠濃,如果菠蘿味更出會更開心。

薑蔥炒台山蠔⭐️⭐️⭐️⭐️飽滿爆汁,爽彈鮮甜,蔥段爆得超級香口,夾住蠔肉齊齊趙,更加精彩繽紛。美味金牌雞⭐️⭐️⭐️結實白肉襯托著黏滑雞皮,滾滿蔥油蒜酥一樂也﹗白菜豆腐魚雲湯⭐️⭐️⭐️黃黃濃郁的湯汁充滿魚味及豆腐味,還有陣陣菜味,十分香甜無比。沙嗲肥牛粉絲煲⭐️⭐️⭐️香而不辣沙嗲汁已完全滲透粉絲及肥牛,熱到燙嘴撈飯食份外滋味。

紅燒 BB 鴿⭐️⭐️⭐️香噴噴新鮮炸起即刻飛到﹗皮脆肉嫩滴著甘甜肉汁鴿油,緊緻的鴿肉搭埋鬆脆軟骨,趙得過癮。椒鹽狗肚魚⭐️⭐️⭐️薄脆炸粉好重要,不能硬不能燶,包著極嫩白色魚肉沾上喼汁,非常和味醒神﹗啫啫雞煲⭐️⭐️⭐️不少食肆只提供雞頸雞背雞翼雞籮友,骨杉杉無肉食,諗起都把幾火﹗幸好食到良心雞煲,惹味香口有肉食,雞肉夾豬膶齊齊食就更加滋味。黑椒牛仔骨煲⭐️⭐️⭐️輕鬆牛仔骨肉醃味重手,加埋黑椒汁撈一流。

行完山,又攰又餓,同班朋友黎左呢間銓仔記e下個肚。期間叫左份豆腐,侍應話要等半個鐘,都算了,結果一等就係成個鐘,我哋食晒啲飯餸先上,空口食豆腐,雖然豆腐味道係可以嘅,不過實在係等太耐了,唔值得。點左份牛仔骨,鹹到呢懷疑人生,又超級黏牙絕對係唔好食。至於其他嘅幾道菜就係普通大排檔水準,不過不失,無驚喜。埋單時,仲要計錯數,收多成400蚊有伏!我哋食飯期間個場都幾滿,多人嘅,問我會唔會再去,答案係否定的!

不止一次大讚大埔街市,樓底高、冷氣夠、食材款式多、價錢公道、通道寬闊,活脫脫係一個商場式街市。而去親大埔市政熟食中心,例必一袋二袋,揪住去樓上小炒檔加工,樓下海鮮款式之多,冠絕全港市政街市,搵唔到理由唔去揀吓。電梯口嗰檔全俾人預訂哂,走咗去比較入嘅呢間「銓仔記」,反而相對清靜冇咁嘈。來料加工計有:中型瀨尿蝦8隻、花甲一斤、膏蟹2隻、扇貝5隻,總收烹調費$300可接受。最好係呢間調味肯減吓鹽,但又不失調味鑊氣,唔駛食到死鹹乸哂脷,每味餸煮得剛剛熟,冇搞到啲海鮮崩壞,幾鍾意蒜蓉粉絲蒸扇貝,好鮮甜;薑蔥炒蟹夠鑊氣惹味,自家嘅小炒皇韮菜花清甜、腰果脆、鮮魷鮮,幾好送飯。

琵琶蝦爽口彈牙, 伊麵完全吸晒琵琶蝦既鮮味

鮮魷都係我地自己買既, 呢到唔夠1斤 ($64), 炸皮好薄, 魷魚一咬就斷完全

以上2樣海鮮既加工費total 係$238, 伊麵底份量好足, 應該有唔止一個伊麵, 我地另外都仲叫左其他小菜試下😌

The reason I visited the restaurant is because they cook seafood you bring in as well. It’s very close to tai po market wet market, so it’s convenient to choose fresh seafood there and bring to the restaurant. It’s way cheaper and seafood more fresh. I bought lobster and crab which they cooked reli well. The way they fried it cannot be made in domestic way. It is even more delicious than seafood in sai kung or Lei Yue Mun
