To encourage eatery outlets to reduce food waste at source together with customers through offering portioned meals and adopting food waste reduction measures, the Environmental Protection Department has launched the “Food Wise Eateries” Scheme. Participants will be awarded with a Food Wise Eateries (FWE) accreditation status if they comply with the assessment criteria and will be granted with the FWE Logo and Stickers for displaying in the premises and their promotion for public identification. Applications are accepted all year round and are FREE of charge.

呢一間位於太子嘅隱世小店真係好掂,食材新鮮之外,大廚嘅廚藝亦相當高。先來個羊腩煲暖一暖先。羊腩嘅肉質軟熟得黎有彈性,皮下脂肪比較少,而且炆得又淋又入晒味,馬蹄同d支竹都吸滿羊腩嘅精華。呢度嘅羊腩煲肉比較多骨頭相對比較少,$49X一煲唔洗比加一茶芥算係好抵食。豉油王鵝腸又係值得一試嘅菜式,d鵝腸好新鮮,食落都幾爽口,d鵝油好香。黃金豆腐粒外脆內軟,豆腐入面好滑。金薯安格斯牛柳粒炸得好香口,d金薯吸埋牛柳粒嘅味真心正。粉絲花蛤煲就係d粉絲仲正過d花蛤,因為d粉絲吸晒花蛤嘅鮮味,佢呢度d花蛤都新鮮大隻嘅。

堅正的粵式小菜,book咗七點半都要等一陣先入得,全場爆滿,真係唔book位都唔港洗指意walk in食得到。我哋叫咗4個餸,買四個都好多好食。黃金豆腐粒外層又薄又脆,裡面又軟又滑。脆皮炸大腸脂肪比較少,外層炸得好脆,而且d豬大腸都幾乾身,點甜酸醬,邪惡但好味。川椒豬手嘅豬手唔係炆到淋晒嗰種,而係保留豬手嘅彈性兼一d都唔韌,雖然叫川椒但係只係少少辣,整得好入味。咕嚕肉差唔多枱枱都有叫,真係好食,佢個質感做得好好,炸得黎又食到豬肉嘅軟熟,唔係一味硬或者一味軟。

上次個Friend帶我黎呢間太子小菜館食晚飯,除咗D小菜出色之外,最正係試到佢地嘅支竹羊腩煲,唔洗$500一煲,羊腩比想像之中多,唔會將價就貨,因為衣家出街食飯如果食羊腩煲都唔平,始終D羊肉加貴咗好多,如果見到有D地方有二百幾蚊嘅羊腩,好多時一係就羊腩份量好少,一係D羊腩就肥到無朋友根本食唔到,一係D羊腩就un到癩晒線,所以都唔好浪費金錢,要食就正正經經食一煲合理價錢嘅羊腩煲好過,所以今次食過翻尋味,早幾日打定電話訂定個羊腩煲今晚拎返屋企食。呢度嘅羊腩好入味好新鮮,食落似係新鮮羊腩而唔係急凍嗰D,食材質素好自然味道都好D。

因為我自己本身好鍾意食魚鰾,而呢一間小菜館嘅魚標又做得好出色,所以今晚忽發奇想,嚟一個魚標大比拼,其實都係好無聊咁樣叫兩款唔同煮法嘅魚標睇下邊隻正啲。一號佳麗就係鎮店之寶之一嘅鐵板白胡椒煎魚鰾,佢係用煎焗嘅方式去處理呢個魚標,所以煎到魚標嘅外層少少窿微微脆,蓮藕落去嘅時候仍然保留到魚標嗰種煙煙靭靭嘅口感,用鐵板上就保留到嗰個溫度,特別天氣凍嘅時候會更理想。2號佳麗就係傳統嘅薑蔥魚標,都係鐵板上,呢個魚標就少咗煎焗嗰種嘅脆口,不過佢啲配料就煮得好香,洋蔥紅蔥頭蒜片等等發揮到佢哋應有嘅香味。總結:如果純粹講魚標本身,白胡椒煎嗰款係好食啲嘅,但係如果講整體嚟講,薑蔥魚標係惹味啲嘅。

另一樣呢度正嘅嘢就係呢隻德國麥啤,有小麥嘅香味但係又冇苦味,都幾易入口,其他地方好似比較少見啲。

今日遇到隱世高手,叫咗幾個餸,樣樣都係水準之作,而佢嘅咕嚕肉同白胡椒煎魚卜更真係屬於天花板級別,大家有機會真係要試吓。先講咕嚕肉,我問老闆娘點解咁好食,佢話原來佢地係用新鮮豬肉去做,唔卦之得一咬落去真係有唔同嘅口感同味道啦。佢嘅咕嚕肉炸得火侯啱啱好,外層雖然已經落咗汁,不過仍然保持微脆,而裡面嘅豬肉真係軟熟有彈性。仲有佢個咕嚕肉的醬汁又真係做到拔絲嘅狀況,老闆娘仲話佢地連菠蘿都係用新鮮嘅,真係非常有誠意。至於個白胡椒煎魚卜就真係勁,白胡椒香得黎又可以闢走魚卜嘅醒味,可以話係一石二鳥。佢嘅魚卜煎到表面微微燶,令到個魚卜更加香口,好掂,呢兩個餸餸飯真係一流。

食來食去都係覺得呢一間嘅小菜最出色,淨係個咕嚕肉已經值回票價,材料新鮮已經贏咗起步點,呢度啲咕嚕肉係用新鮮豬肉,連菠蘿都係新鮮嘅,咕嚕肉外面炸咗個層皮脆脆哋,入面舊肉仲有肉汁,值得一讚係冇乜肥肉,唔使一邊食一邊咬走啲肥膏。乳鴿都做得好,唔會炸到燶晒over晒,乳鴿嘅肉都幾嫩滑。招牌雞睇個樣平平無奇,食落好夠雞味,隻雞冇乜肥膏,我哋要咗半隻,竟然都有雞潤雞腸呢啲內臟,幾好。什菌豆腐啲豆腐好滑,佢個芡汁雖然好似有啲厚,不過個味啱啱好唔會太鹹。
