最近去咗西營盤依間「616牛肉火鍋專門店」打邊爐,依間分店與眾不同,裝修風格係行懷舊香港路線,圍繞住昔日嘅士多、家品店、押舖、海味店等等,嚟依間餐廳食飯,彷彿好似走進陳列館一樣,非常適合打卡,店內仲有一部街霸拳皇機,睇見其他大朋友、客人挽到好興奮,真係覺得依度可以滿足到大家唔同需求,另外,依間嘅特選和牛盛嘅牛肉部位亦同以往去其他分店食到嘅有所不同。特選和牛盛(單點$234),信州和牛羽下肉,油脂分布均勻,食落油脂味濃;信州和牛牛胸肉,食落牛味濃厚;信州和牛赤身,牛味濃香;澳洲五花趾,肉質帶有筋位,食落有咬口。熔岩沙嗲湯底(單點$82),口感稠身,沙嗲醬、花生醬味道濃郁。黑豚濃湯餃(單點$68),豚肉餡料飽滿,食落有肉汁。2隻扇貝(單點$48),扇貝肉質肥美,口感厚嫩,味道鮮甜。美國天然肩胛翼板(單點$48),肉質軟腍。竹笙(單點$48),口感爽滑,食落充滿湯汁。泰酸化骨爪(單點$38),有D失望,無骨鳳爪口感爽脆,但略嫌泰式鳳爪應有嘅酸、辣味都欠奉,整體味道偏甜、微酸、無辣,配料有青椒、辣椒、青瓜。鮮製手打烏冬(單點$18),麵條比較幼身,所以食落唔似平時嘅烏冬咁煙韌,但容易掛湯。醬料(兩人$20),包括有鮮牛油豉油、沙茶醬、陳醋、炸蒜、柑桔、蒜蓉、芫荽、香蔥、指天椒、辣椒油、秘製牛肉汁、豉油、熱水、凍水。菊花桂圓露(單點$16),選用菊花、桂圓、杞子、冰糖,菊花味道最突出,飲落好清甜。 continue reading

與朋友食過616幾次, 最鐘意佢夠部件選擇, 而且唔太肥膩, 你會見到湯底就算淥完牛肉都好清, 唔會有好多泡沫, 湯飲落份外鮮甜==============================推介常見肉類部位:1) 「吊龍」,即牛的脊肉,肥瘦均匀,口感滑順2) 「匙柄」,即連住肩胛骨的牛肉,肉中間明顯有筋,但食落多汁彈牙, 肉質細嫩3) 「五花趾」,即牛的後腿肉,肉比較少,筋肉交錯,比較貴,但入口特別爽脆4) 「黃喉」,即主動脈弓,吃起來非常的脆,口感爽口彈牙,淡淡牛香味5) 牛前胸,爽口帶嚼勁==============================食616牛肉火鍋,湯底不需要花巧,用清湯,將牛肉放落滾水「灼一灼」就可以食淥牛肉的過程不要超過10秒,才可食出牛肉的嫩滑和另外, 自己調配醬建議甜味多辣味少,與牛肉搭配一起時就不會搶去牛肉的鮮味,相得益彰==============================>>>>>>4個女仔食, 人均消費約$250<<<<<<< continue reading
