不知不覺間,走到了Blue Butcher,那充滿古意的地方,如紳士的內斂,只在外的藍幕上輕輕點上那Blue Butcher的細字,一切等待知音者的了解和發掘,不顯鋒芒,名劍不出鞘,出鞘必見紅。或許大家吃得多Medium Rare,其實牛肉全生,英文為之Blue,之後才到Rare、Medium Rare、Medium、Medium Well,最後是Well Done,所以,我想所謂藍色的屠夫,應該是取其生牛肉的意思,屠刀,出鞘必藍。

甫到店內,優雅冷徹,以黑為主調,深沉冷徹,我還未配得上這家店,至少現在的確未。

如果你非常偏激的只選一道沙律,那這便是不二之選。出奇地用上了西瓜配火箭菜,驚喜萬分,火箭菜第一次嘗到時,會感覺有些膩意,久吃才會鍾情,但西瓜又能有效地去除這個遺和感,那是大膽和創新的,而且很合得來,輕輕地來上Feta Cheese,一流。

Blue Butcher’s Dry Aged Black Angus Burger
其實所謂Dry-Aged是牛肉的一個熟成過程,牛肉熟成分作濕式與乾式兩種,兩者相距卻不可以道里計,前者用真空袋以牛肉本身的天然酵素作熟成,因方便而合乎經濟效率而廣為採用;後者卻用0-4度大冷櫃雪藏牛肉,令肉裹的蛋白質經酵素轉化,令組織軟化,同時因為水份收乾,在十天後令味道更為集中,孕育出一種原始的味道。雖然表層會乾化,但內部仍能保持鮮嫰,亦因如此,因為大約三成牛肉不能再吃,再加上重量因沒有水份而更輕,價格亦比一般為高。

要加上$60塊的一道主菜,但沒有吃過就不能說自己來過Blue Butch一樣,驚艷的主角。乾式熟成的牛肉顏色更深,油眼分明,上蓋肉完全無可挑逗,那黑松露的薯條極之惹味,幾乎連舌頭都一起吞進去。不過可以的話,那蛋黃醬是可以再加改良,那外脆內軟的口感,肉味澎湃,霸道絕倫,但就有些地方過靱,整體美中不足了一點點,但有一部分還是如此誘人的難忘。

這裹的雪葩異於日本餐廳的清爽,濃得比吃真生果更甜,更酸,是另一種風格。那餘香久久不散,把口腔的膩意盡去無痕,所以其實西餐,如果是一句Sentence,那一份好的甜品更是不可或缺的Full stop。

執筆那天本來約了Z小姐吃個便飯,最後不了了之。在公司待至九時多才蹣跚回家,就偷偷寫起這篇食評來。中庭的花園,入夜亦有別一番的感覺,記得灑着微雨。

到了重點注視的項目 Blue Butcher's Dry Aged Black Angus Burger, 其賣相不俗, 份量也不少, 麵包是不俗跟一般的不同, 包烘得微脆, 內裏鬆軟, 有一定的麵包香; 而牛肉是用dry aged 的黑安格斯牛肉, 中間切開, 牛肉味非常濃郁及一定的肉汁, 要了 medium, 是有些少 overcooked, 但都可以, 要 medium rare 應該會好一點;半溶的芝士及熱度足, 再加上蕃茄及生菜在其中, 整體水平相當高, 好吃。加上香脆薯條是無限添加, 想沒有多少人會不喜歡。

I give low score on staff attentiveness. Nobody came to our table to at least inform the waiting time nor have i received an apology sincere enough.

Mistakes often happen and is fine. But a series of unattended mistakes could sometimes be unbearable leading to a bad experience.

Blue Butcher this time, as a meat specialist, does not miss the opportunity too. They offer roasted Happy Valley free range turkey dish served with a side of homemade stuffing, whipped creamy mashed potatoes and roasted candied bacon brussels sprouts (Whole-HK$1380 / Half-HK$690). The whole turkey is definitely enough for sharing with 10 to 12 people, and you will go back with a happy tummy. My previous experience with turkey was that it is very hard to retain the juice in the meat, but the turkey here, to my surprise, was so moist that even if it was white meat, it was still very juicy and tender. It was even better than chicken breast in my opinion, although turkey is well-known to be the leanest meat among all. Eating it together with their cranberry sauce really made me feel so ‘christmasy’. I love the mashed potato served with it too. 
I would recommend Blue Butcher if you ask me where to have turkey. Best of bucks spent!

吃過沙律後,終放到主菜了,我真的超喜歡吃burger呢;每次來吃burger,都有不同款式的漢堡扒,用上不同的牛肉,那分別的確是存在的;這次嚐的是black angus,充滿了肉香,十分juicy;而那個bun,很香脆,充滿了麵包香,不錯。我們選了芝士薯條,溶溶的芝士在那薯條上實在太美味了,很愛。

另一份主菜選了beef brisket,中式炆牛吃得多,西式的則多數是炆牛面頰,比較少這個形式上呢;牛腩本身的味道已經很濃郁,肉質亦很嫩,肉與肉之間夾了些肥膏,入口即化的感覺特別棒,吃時輕輕地沾上BBQ汁,更添惹味。

Sorbet美味,但這Sea Salt Caramel Ice Cream可算是人間極品,for me,it's the best Sea Salt Caramel Ice Cream in town!!!!! 雪糕又軟又滑,質感幼細,冰凍感十足,雖是焦糖,但不會很甜,甜度與鹹味之間形成了很好的balance,超美味,第一次吃已經愛上,第二次吃依然很愛,第三次依然保持其品質,超愛!!! (Must-Try)

這個lunch真的頗抵食的,$180有任吃沙律和漢堡/炆牛腩,如果喜歡吃牛扒的,加$60轉牛扒也不錯的,一定要來喔!!

After hearing great things about the Sunday brunch at Blue Butcher, I finally gave it a try and it was truly and utterly underwhelming.  Things started poorly when the restaurant called three times in 24 hours to confirm that we were coming, and when we got there, they tried to cram 6 adults onto a 4 person table.  When I asked the hostess to move us to a 6 person table she had said it was already booked.  I asked another server to help me and she was able to move us.  When we finally settled in

After hearing great things about the Sunday brunch at Blue Butcher, I finally gave it a try and it was truly and utterly underwhelming.  Things started poorly when the restaurant called three times in 24 hours to confirm that we were coming, and when we got there, they tried to cram 6 adults onto a 4 person table.  When I asked the hostess to move us to a 6 person table she had said it was already booked.  I asked another server to help me and she was able to move us.  When we finally settled into our seats, we were ready to try this "amazing brunch experience".  The salads were ok but they were having issues replenishing and they were constantly running out of the seafood having us to go back multple times to get our appetizers. 

The mains were also not to expectations as we ordered the 3 x wagyu burgers and 3 x the poached eggs and both were on the salty side of the taste spectrum.  The desserts were super sweet and took a while to come.  We had finished our coffee before the desserts arrived.  The waffles were the one redeeming item of this brunch but the waffle chef only had one iron running so it also took a while to get these treats.

The servers tried to make up for it with our unlimited drinks but there were too many issues with this meal.  At 600 per head, all in all it was a disappointment.

Had a much needed date night booked for tonight at 7pm @ The Blue Butcher.The restaurant doesn't open till 7pm (well more like 7:15 once the staff got their act together) so we had to enjoy a wine downstairs.
We were led to the table and we sat near a window seat in comfortable chairs. The ambiance seemed ok but as soon as any food was served it was near impossible to see anything; far too dark! Actually both us and the table seated next to us had to turn on our iPhone torches to see what we were eating. So dark that my wife even bit into a charred lemon as she thought it was a tomato. TOO DARK!! The aircon is also too low and both couples either side of us complained as such.
The service at Blue Butcher is simply awful. It is slow, inattentive and confused. Our waitress had simply no idea what was on offer on the menu or how it was served and frankly should be retrained. There are apparently no vegetables at all on the menu; no side dishes except for salad? Really?
The starters came….an under seasoned raw tuna caparchio and the mussels….around 8 sad looking little mussels (albeit quite tasty) - overall pretty disappointing.
Then the main came - The lamb rack and the Line caught sea bass. (also served in the dark)
The lamb is the smallest piece of lamb I have ever been served…supposedly was 400 grams, this wouldn’t have even tipped the scales at 200 grams. Seriously 1 tiny piece of lamb and a slice of egg plant, and no vegetables in sight. The lamb was over cooked; I asked for medium rare not medium well, and it was seriously under seasoned.
The Sea bass was nice but the sauce it came in was far too salty. The prawns were overcooked and rubbery and the bread scattered through the bowl out weighed any seafood 2:1
For 1700 HKD (including 2 glasses of wine each) it was completely over priced. The food was poor at best and the service was dismal. I also heard two tables with similar complaints around us. The maître d' tried to offer some free deserts to compensate but we refused as honestly I couldn’t eat any more produce that had been sacrificed by this chef. It is such a shame as the produce is obviously well sourced and fresh; just very poorly executed. There are much better and MUCH cheaper options available in HK.

如果不是先前在報章雜誌看過Blue Butcher 的介紹,真的不知道有這様一間餐廳。因地下一層是酒吧,不容易察覺樓上是餐廳。和友人到此午膳,不想吃太多,只點了yellow fin tuna作頭盆,charred chicken with truffle mayonnaise fries.Yellow fin tuna 賣相不俗,味道帶一點點酸,頗開胃。雞等得久了一點,烤得很靚,但完全不入味,反而fries很好吃。我們點了ice tea$40, lemonade $50. 飲品普通,價錢有點偏貴。午市人很少,而且多是外籍人士。裝修頗有格調,相信晚間來氣氛會更好。

The price is the same as another restaurant under the same group, but this one has more focus on red meat and regular salads, plus a raw-style live band performance throughout the whole brunch section, giving a cool and unique brunch experience.

It occupies two floors building on Hollywood road (with Classified as its neighbor), with one little bar and limited outdoor tables downstairs and more classic standard dining tables upstairs. The overall indoor atmosphere is darker, cooler, punk-cooler. I was considering it not a family (with little kids) brunch place, while to my surprise, even half of tables were occupied by large family domestic and expats, and those kids seemed quite happy with the restaurant indeed.

Sangria

A big glass of Sangria, has been my must-do action during brunch or afternoon tea recently; I have no idea how and when it happens, but I guess it's coz of Spanish restaurants I have visited so frequented. Anyway, that qualifies me enough to say something about Sangria regarding to my experience of different Sangria whatever red, white or rose.

Blue Butcher's tasted drier and stronger while without the lack of fruity freshness, which in comparison, is my type, because indeed when I order Sangria, I'm still expecting a glass of liquid/alcohol instead of drink.

Their free-flow salads bar is awesome to me, even it's only covered with regular salads, but still I can find some specials among them or even hidden inside the so-looking-ordinary salad. For example, Salmon Salad, is actually made with home-smoked salmon which tasted sticker, more moisture and smoker. Ham & Melon is nothing special, but Ham with Compressed Watermelon plus Feta Cheese, this combination is quite fresh to everyone, and it turned out fresher than ordinary one and the Shaved Spanish Ham could performed much better when the watermelon was just light and less sweet enough in taste. My favorite is Belgium Endive with Candied Bacon, Stilton (bluecheese), Orange and Truffle dressing. This was the least attractive looking salad I admit, while to me, it was the best, for its flavorsome truffle taste, a balance moisture level of salad with dressing sauce, an outstanding cheese taste, and beautiful experience of hard bacon cubes. Besides, other salads you also won't to miss, or at least have one small bite; they could be Raw Tuna, Prime Sirloin Steak, Buffalo Cheese with Tomatoes or Chicken with Walnuts.

Not satisfied? I won't be surprised that you feel that, but I either won't worry about you won't find this problem won't be solved. Just next to the live band and bar, there were two connected separated stations, one for savory (fresh-making foie gras), the other for sweet (Belgium waffle). They are free-flow, yes, if you want you could try a waffle burger with foie gras...

Considering the charge of this Sunday Brunch, Foie Gras was really a cool offer. With some bread paste, it was greasy, juicy, mouth-watering, delicious enough, while if you mind it too fatty, just add one more layer of their homemade cherry or apple jam (very delicious) while personally, I won't recommend to do it, because I won't let the taste of foie gras go (too evil I know, well I would take another piece of bread with jam)

Beautiful looking, fresh made and fresh bites, fluffy and eggy taste and do whatever you prefer with chocolate, vanilla, maple syrup, berries, light cream, and ALL HOMEMADE!!!! Coming to main course which is included upon per order, and I was wooed about huge potion when our orders came. Basically all are offered with a wide selection ranged from simple egg cuisine, roasted chicken to awarded Wagyu burger and even steak.

I was, for sure, buying Blue Butcher's Wagyu Burger. Its crispy burger bread was my favorite part which perfectly showed burger's taste vertically. Then it was the pink Wagyu beef with such a softened and juicy middle-layer. The beauty of this burger was the balance it gave, in the flavor of beef and truffle, the taste of cheese and tomato jam and the texture of bread; every part was a bit outstanding but not too overwhelming, and came to a harmony at the end.

Having been feed up with rich salads and awesome foie gras, waffle, you could imagine how much space left for the main course, I couldn't tried a lot steak either chicken, but I would like to say they were not bad, especially the chicken with an impressive softness.

Chocolate Bread & Butter Pudding / Rum Banana Ice Cream

Including into the Brunch menu, we still have one dessert out of three on the menu, and started from the freshest one, Sorbet. It was featured in passion fruit flavor while a bit lost in mango one, overall giving a strong tropical fruit taste in a high sweetness and sourness. I was more in the Chocolate one, which was paired perfectly with creamy but light Rum Banana Ice Cream. It looked so similar to brownie, while it was much more moisture inside, which was really like what its name, Bread & Butter Pudding. I love this strong and less sweetened chocolate flavor, and if you are looking for fresher but maybe sweeter experience, the ice cream could be a nice make-up with decent banana taste while still fresh and milky creamy.

這份牛真的超超超大,絕對可以二人享用。店方有一個吊櫃,專是用來做風乾的。牛的外觀上是超好的,燒得也不錯,特別喜歡骨位,肉質帶軟很香口;而扒位亦做得不錯,平日吃扒都喜歡這種熟度,但吃後,覺得這份扒熟一點會更好,而牛味尚算濃郁的。

早兩次來也過burger,不算十分驚喜,所以今次也抱著試試的態度。一切開,便被這粉紅的漢堡扒吸引著,入口肉質很軟,軟中帶點嚼勁,肉碎的size剛剛好,而bun與肉的比例亦做得剛剛好,特別喜歡當中加入了balasmic onions,味道上帶酸,一減burger的膩;當中還塗上了truffle aioli,帶著輕輕的truffle香,用上了gouda cheese,芝味濃郁。而旁邊的薯條亦炸得很脆,薯味亦濃郁,味道上比上兩次好吃得多了,希望店方能keep住這樣的質素!! (Must-Try)

這個chocolate bread & butter很美味喔,中間呈流心狀的,我忍不住的吃了3/4位件呢;而旁邊的rum banana ice cream亦做得很香滑,帶著很真實的香蕉味和輕輕的rum味。一直都很喜歡這裡的雪糕,最愛的便是這裡的salted caramel ice cream, 應該是全香港最美味的。

大概這裡的食物太合乎我的口味,我已經很久沒有吃到飽得站不直,走不動了...$390的Brunch,當中有任吃生蠔和非常美味的鵝肝,另外有7款沙律可選;再加上有動聽的音樂,hea上數小時,是不錯的。

P.S 如果二人同行,不妨其中一份main course選burger,另一份則選poached egg/french toast,應該可以飽上數小時。

第一款是 Half Free Range Chicken,以一般香港人較愛嚐細嫩的雞肉而言,雞肉的肉質還可以接受,只是雞胸部位較為粗糙,相信這是可以理解的。味道較為溫和,由 Pearl Onions 帶出香氣不錯,而新鮮美味的車厘茄和小紅蘿蔔則作為伴菜!

完成主菜後,我們急不及待要到訪「Belgium Waffle Station」。Belgium Waffle 當然亦是由專人即製,可跟據喜好,塗上入牛油、忌廉、糖漿、朱古力漿及雜苺等。

Belgium Waffle 鬆軟焦香,簡單地塗上牛油、放上忌廉與雜莓後,清而不賺的味道非常討人喜歡,令不太愛 Waffle 的我也深被影響!之前在食評看到不少對 Belgium Waffle 的負面評價,相信也作出改善了!

Weekend Brunch嘅salad bar,waffle station同foie gras corner同係自助式;main course,dessert有幾款可以揀,但好多都要另外加錢,咖啡,茶當然有包啦.Cold starter雖然款式唔多,但做得真係好出色,有fresh oysters & prawns, tomato w/mozzarella, watermelon w/ ham, smoked salmon, grilled beef w/salad green etc,而最最最正嘅係即煎鵝肝伴多士同菓醬,每片鵝肝size都唔細,多士又烤得香脆,我前前後後都食咗好幾件,血壓都上升咗好多.而Belgian waffle我冇試,不過Honey話都好好味,其實新鮮熱辣乜都好食.
不過主菜就真係好一般,唔係難食,但係無乜特別.我叫咗個Slow poached egg, Serrano ham & mushrooms,流心蛋做得唔錯.Honey就要咗個香蕉配西多!激死,是但去間茶餐廳都食到嘅嘢,我見佢戰鬥咗好耐先食完.
而個dessert就係最最最差,sponge cake又乾又散,送上枱見到都唔想食,好求其是但無所謂咁囉,下次都係唔好寄望個main course,食starter食飽算啦~~

小女子生日咁大件事, 當然要食D貴野慶祝下啦~Blue Butcher 有自家牛扒熟成房, 令身為牛扒既我超期待! 個Bone Marrow唔錯, 配多士同少少herb一齊食好好味, 不過怕肥既人可能唔慣.我個medium 既tenderloin steak好香好軟~男友既dry age反而無乜特別 (定係我期望過高呢?)Anyway....我地一張相都無....因為個場好好好黑, 得一D 蠟燭同少量燈泡做照明.......D 相....好似入黑洞咁.... 所以唔太岩老人家同細路仔去...

Anyway....我地一張相都無....因為個場好好好黑, 得一D 蠟燭同少量燈泡做照明.......D 相....好似入黑洞咁.... 所以唔太岩老人家同細路仔去...
