老闆話牛筋係炆煮,返好多時間同功夫,或者因為咁樣所以會較淋,而家好多都係白烚,可能比較爽身,兩種唔同做法。

凍檸茶就似家庭式沖制,茶色雖然救心但查香味不夠,下午茶時段加兩蚊還可以,正價時段散叫廿幾蚊就無謂。

值得一提係營業時間到下晝四點幾,我因為四點後先去到,所以又阻住佢哋收工😅

整體嚟講呢個價錢食到傳統手藝我覺得還可以啦,只要覺得好食就唔貴😋

朋友話枝記嘅牛腩麵好食到爆炸,我就一試難忘!食落去嘅時候,牛腩啖啖肉,咬落去又腍又香,仲有啲微微嘅辣味,是但攪一攪,牛腩嘅香味喺舌尖爆炸💥,真係香過噴香水。另外講到佢哋嘅魚蛋,真係咁彈牙彈到我都想唱歌🎤。每一啖麵條都掛滿哂牛腩嘅醬汁,入口滑溜溜嘅,食落舒服得很!呢度嘅墨魚丸都唔錯,墨魚味足夠咁濃,又唔會太過火,搭配牛湯一流👍。食完之後,嗰個滿足感,真係食飽一餐都值得嘞。下次一定要再嚟,睇吓仲有咩樣潛力股等緊我發掘!

I ordered the Beef Brisket Noodle ($40) while my wife has the Beef Brisket and Tendon Noodle ($46). The beef brisket is braised perfectly with very soft texture, with the ground bean paste providing rich and amazing flavours. The soup is delicious and drinking them will not make one thirsty. The noodle also has a nice al dente mouthfeel. Perfect on all fronts, no wonder it draws so many rave reviews!

Seeing the tendon is very good too, I decide to test the capacity of my stomach and order another Beef Tendon with Squid Balls Rice Noodle ($46). The collagen of the tendon gives a luxurious easy bite, and I think the rice noodle is also a great match with the soup. The squid balls are decent, but compared with the beef brisket or tendon they are apparently less impressive.

Together with Milk Tea and Iced Lemon Tea, the bill is $170. Service is standard as you would expect from such noodle house, but I can sense a kindness here. We should do our best to protect and make  sure such treasure in the neighborhood continues to stay, as I truly believe it is one of those things that makes Hong Kong such a great place.

放假突登去食碗牛腩河一去到唔止味道懷舊,連環境都很懷舊,點了碗牛腩河,一見到顏色已經很吸引,牛腩煮到入哂味,很香磨豉醬味,又不會過濃,我覺得牛腩和河粉是絕配!河粉可以索到牛腩湯底不會過淋一夾就斷,湯底很有牛的香味,不過奶茶就稍為失色,茶底較淡。

好喜歡光顧小店,枝記半山家庭經營懷舊小店,從店內陳設都是上世紀懷舊的擺設,令人回想兒時的記憶味道店內充滿半世紀的陳設,兒時回憶擁上心頭牛筋牛腩炆得黑漆漆,未入口看似會很濃味,但入口後味香而不太濃味,炆得很軟綿滿口裡充滿骨膠原,湯底鮮甜喝完一口又一口,喝後不會太口喝,果然真材實料麵質也爽口,不太淋太硬,入口恰好。米粉沒太特別,是普普通通的米粉,但配上腩湯一流唯獨麵及米粉份量比較少,女士恰好份量,男士可能會有點未夠喉整體來說是真材實料,用心製作食材的小店

麵質也爽口,不太淋太硬,入口恰好。

偷得浮生半日閒,決定於放假時來到西營盤覓食!從地鐵站行上來,行前冇幾遠,就來到這間保守估計應該有幾十年歷史的枝記麵店,今次亦都專程為了她的牛腩而來的,一進店內,就給我一個種時光倒流的感覺,看見牆身還是綠色格仔紙皮石!店內環境不大,約有10令個位 ,我去到的時候剛好有下午茶,,侍應亦都好客氣地遞上菜單!我今次有目的為牛筋腩麵而來的,所以不用看餐牌了😂😂個面一上枱就已經聞到香氣,果然是那款舊式磨豉醬炆的牛腩,本人真的很多年都沒有食返了!牛筋軟淋程度炆得非常恰到好處👅👅牛腩就非常入味,👍🏻👍🏻至於麵質亦都一絕,你唔好期望佢是什麼竹升麵,只是普通生麵,但亦都帶來爽脆的口感,淥麵時間掌握得非常準確,,亦都冇多餘的鹼水味,走鹼過程非常之好!凍檸茶就一般貨色,沒有很濃的茶味!埋單是$47,絕對對得起呢個價錢,性價比非常高👍🏻

枝記係呢度開左好耐啦,得閒個陣都會過來食個面。今日中午得自己食飯,就過來隨便點個麵食了,嗌左個雙拼牛腩魚蛋麵和一杯凍奶茶,奶茶普普通通甘好正常味道,魚蛋爽口彈牙,煮得唔錯,牛腩已經好軟腍了,味道好入味,分量都唔少的,同面的比例差唔多,個麵軟硬適中,都好食的,加上個湯底鮮甜,好好味。

今天去完香港大學美術館看展覽後,獨個兒去枝記吃午飯。好久沒去過了,炆牛筋仍然那麼夠火候, 味道仍然那麼濃,很香。牛筋很軟很膠,滿口骨膠原的感覺很棒。牛筋肯定比麵多。湯非常非常濃,除了骨膠原,還有很濃的雲吞湯頭,很香蝦殼味.在天氣轉冷又大風的中午,喝一口熱湯很舒服。但不知為何,放飯的學生都去附近供應學生餐的快餐店排隊,也不去這老店,因此有點冷冷清清。現在的店是第二代夫婦做的,沒有另外請人做樓面。一碗牛筋麵要35蚊,可能對學生而言太貴了。

靈光一閃,她情不自禁對著林伯說 : " 這碗是腩嗎?" 林伯當然沒有給她任何答案,仍舊只是對著相片 : 嘻嘻!

既然是腩,為何會是黑漆漆的?不是坊間常見的淺或深褐色嗎?

正當越來越苦惱,林伯女兒回來了,並輕拍一下這位社工的肩膀道 : " 見妳如此緊張看著那幅相 ... 我也不知何時何處影的喔,只是記得有次爸爸指著它說乜乜麵家,但妳也明白啦,病了口齒不伶俐,根本聽不清楚他在說甚麼 ... "

但是,唯獨 "老婆腩" 這三個字,卻說得很清楚,很溫婉,很甜 ...

再回想那則逝世科學家在人生末段還惦記妻子的新聞,剎那間,小琪的心被觸動起來

她決心想做一件事

找尋那碗黑漆漆的腩肉!!

小琪藉機詢問林伯女兒有關他年壯時的經歷,知道她爸爸勞碌大半生,娛樂甚少,更沒有出外旅遊,但他有時候會浪漫一下,與媽媽手拖手到處吃,尤其是麵檔

排除了相中的腩肉是林伯 " 老婆 " 在家煮的 ( 幾十年前那有人如此儍的浪費菲林與晒相錢拍攝家中食物?),那碗相信是牛腩麵的出品,應會是來自那家麵檔?林伯口中的 " 乜乜麵家 " 今天還存在嗎?

小琪問遍家人朋友

" 邊有燜到啡黑色既牛腩架!賣相咁差,真係 ... 莫非係變壞 ... "

林伯不會帶著妻子專程找一間吃壞肚皮的店子吧!

又到了附近有賣牛腩的麵店

" 我地係潮式鹵水腩,唔會染到d腩黑鼆鼆架喎 "

周末推掉約會,幾乎行遍最多粉麵店之一的深水埗區,終於找到一間店子的腩肉上褐色最深,但未至於那種啡黑色

" 我地既腩係用柱候麵豉醬燜既,但係話煮到黑既,可能係佢地用唔同既豉醬燜 ... 廣州式麵檔先至會咁做!"

網上找尋了好一批資料,發現廣式麵檔少得可憐,麵豉卻種類不少,更可以是一門學問!

全港真的沒有一家麵店會燜出啡黑色的牛腩?

尋找這種麵豉,真的咁難嗎?

有沒有 hints 可以給熱心又富愛心的小琪?



那天,小琪到了梁太位於石塘咀的家做家訪 ~

" 很希望女兒能考上 St. Stephen's Girls' College!" 梁太縱使家境較差,也決意為了想心愛的親人活得更美好,不計回報勞盡心力,幾乎把所有精神都給了女兒

" 係咪陣間去買外賣比我呀,媽咪!" 女兒有點不耐煩催促媽媽

" 得嘞得嘞,同小琪姐姐傾完偈就去啦,好近之嘛" 梁太安撫地回應

" 不好意思喔,女兒瞓到晏一晏先至起床,連早餐都無食 ... 所以依家夠晒餓!佢又好得意,每個周末佢都要食碗黑到似炭既牛腩米,我諗無乜好似佢咁後生既女仔鍾意呢d野 ... "

黑 . 到 . 似 . 炭 ?!?!?!

小琪目瞪口呆,恍然大悟,梁太好奇地問 : " 係咪我嚇親妳?"

" 唔係唔係 ... 我 ... 都有點餓,陣間可以帶我一起去那間麵店嗎?"

就這樣,小琪來到了枝記麵家

" 餐牌只有牛腩麵,無寫明乜乜醬燜,會唔會都係普通牛腩,抑或是 off menu 要特別要求 ? " 小琪害怕再次令自己失望,焦急得衝口而出

" 妳喜歡吃磨豉醬?呢度既牛腩,唔普通架!咪就係呢種醬油燜煮,先至好食!我個女咪食到上癮囉!"

找到了?!

陪伴梁太買外賣之後,便獨自在很懷舊的小店內隨便找了個坐位,戰戰赫赫又有點興奮的點了碗牛腩麵

不消一會,黑到有點似炭的肉條真真正正的呈現眼前!

外表看以為會很 "重口味",原來,相比柱候醬,這些牛腩卻沒有太濃烈醬料味,反而只有淡淡醬油的鹹鮮,而這醬油,竟然很夾地帶出肉的味道!

再慢慢地吃,原來腩肉很軟腍,絕對不是像外表看去的硬磞磞,每吋肉都給醃得入味,很捧!

除了牛腩,還有牛筋 ~ 這個可是不會燜得啡黑,但相比坊間的是較深色的,味道卻是與腩肉一樣,是淡淡的醬油味!也是因為燜得很入味,軟滑黏糯又帶出了牛筋的原味

加上濃香鮮甜的腩汁湯底,這碗街坊風味牛腩麵,可說給人一個新的體驗!但這個新味道,卻是十數年前很普遍的飲食潮流

有如發掘了寶藏的小琪,滿懷驚喜地與店東姨姨說再見,並將以下這一幅模仿林伯朝夕相對的舊相而拍攝下來的相片,待在身邊

這天再次到訪林伯,小琪有點緊張地拿出自己拍下的牛腩麵相片,遞給他看 ...

" 有無諗起d乜呀?係咪同老婆一齊去食過佢呀?點解 ... "

林伯突然瞪大眼睛,緩緩提起晃著的手,指著這幅相 ... " 嘻嘻 ... 嘻嘻 ... "

數個星期過去了

小琪始終未能探問出 " 老婆腩 " 背後的故事,會是很感人的嗎?

" 老婆腩伯伯,再見啦,下次再來探你喔!"

正在拾起手袋離開之際,林伯突然放下他的舊相,粗嚡的手拍打枱上新的牛腩麵相,大叫 " 老婆腩 ... 老婆腩 ... 大肚腩!"

小琪愕然地看著林伯,他那刻的眼神是多麼的喜悅,又帶點天真

她記得林伯有一幅全家福相片,已離世的林太是一位瘦削的靚太,相片中間,是一位笑臉很 cutie 的女孩子

彷彿,小琪終於聽到 " 老婆腩 " 的故事了!

如果有一天,你發現自己的腦子只能剩下丁點兒記憶空間,你會將這些最後伴隨自己的記憶,預留給誰?

或許,對於枝記麵家的老闆老師傅們,他們會將這丁點記憶,留給愛人之餘,也要留給那一缸缸磨豉醬!

My mum still knows it from when she was younger... it’s a Classic! Go for beef noodles or if you’re more adventurous the beef tenderloin. Noodles are fantastic.

本來諗住趁平日去 被米芝蓮既 "請坐", 可惜所有食物已賣光 .......食左閉門羹.....之後一路向般咸道進發,突然留意到嚟間能屹立不倒50年既麵店,加上問口貼住集誌寫住"磨豉柱侯牛腩",決定入去試下。入到舖頭,第一刻既感覺係時間停頓左係50年前,如果著件舊衫影番張黑白相,應該可以呃下LIKE。當然,我個肚已經打晒鼓,當然即刻叫碗"磨豉柱侯牛腩麵"先! 面好幼, 但唔會太唸! 磨豉醬真係好香 牛腩好唸好入味!我心唸,係富貴人家既地方,如果唔係自己買入既舖位,如果食物質素唔得,應該一早執左la!!!!!!果然, 無令人失望,再試埋佢既辣椒油,真係昇華左一個層次!店員都好願意同我吹水, 感覺有D人情味既小店。 P.S. 走既時候發現旁邊有間甜品舖,下次帶埋老婆大人試下先。

我心唸,係富貴人家既地方,如果唔係自己買入既舖位,如果食物質素唔得,應該一早執左la!!!!!!
果然, 無令人失望,再試埋佢既辣椒油,真係昇華左一個層次!

店員都好願意同我吹水, 感覺有D人情味既小店。 

P.S. 走既時候發現旁邊有間甜品舖,下次帶埋老婆大人試下先。

知道有呢間小店好耐,但一直未有機會前往,今日特意走上去,時間大概5點,人客唔多...睇到價錢牌,比想像中貴,但奈何呢到都叫半山區...都正常既...叫左碗雲吞米($32),雲吞有蝦同豬肉,正常味正常size,米粉-一如普通的粉麵店,湯底唔多味精,飲落唔覺口渴重點係....加左小小辣椒油,即刻變得好食左!辣椒油有炒過既辣椒香!!食住一碗熱騰騰既雲吞米,望住門外不斷響叫既交通燈,係繁忙既半山區搵到間懷舊帶點慢生活態度既小店!一讚!
