麵包蟹相當新鮮,蟹殼呈爆膏之態,肉身不算鮮甜,勝在爽身肥厚,蟹痴該會十分滿意。生蠔分屬幾款不同蠔種,口感、蠔味各有個性,整體來說新鮮肥美。凍蝦用上新鮮的對蝦,配蛋黃他他醬更是美味,而翡翠螺味道較為寡淡,需要蘸醬來提升食味。白酒帶甜,酒香不强柔和易入口,配海鮮最是合宜。

吃過海鮮拼盤後,椰子雞煲便上場了。四季文昌用的鍋具十分講究,內嵌式的電爐配上黃銅鍋子,好處是傳熱快且保溫。桌上的沙漏用作計算煮雞時間,當加入椰皇肉的椰子水煮開了後,侍應隨即把海南文昌雞($158/半隻)放進鍋裏,約6-7分鐘時間雞便熟了。

湯底,就是這椰子雞的靈魂所在,材料就是椰子水、椰皇肉、文昌雞,僅此而已。湯底以椰水為基調,用的是海南直送的椰皇,其湯身清澈如水,還加進不少椰皇肉,雞件泛出清澈淡黃的雞油,待雞油盡去,便舀出一豌椰子雞湯嚐嚐。未嚐那口清湯,先覺椰香撲鼻。湯身清甜滋潤,雞香柔柔的更能帶出椰子的清甜,雪白厚身的椰肉柔滑清甜,也是不可錯過的。

冬至不凍新年凍,萬望如此,假期間難得一遇數天較為涼快,食肉獸又再打邊爐去。套餐有一碟刺身,切得極為單薄,無甚魚味可言。不過主角始終是椰子雞煲,湯底本身味道可以說是太清了吧,椰香很微,反而雞卻是頗肥,就如同一煲用肥雞煲的白開水般;可能因此要趁上一些刺激的沙薑、柑桔的和辣椒以增加對比吧。火鍋料有日本直送野菜、墨魚滑、豚肉及牛肉,當把食材放入無甚味道的湯裡焯,就跟白烚的沒多大分別;食物的鮮味是有的,但要有味的話一定要加點豉油。唯一好處是打邊爐後沒有那麼上火。

因為呢到只係食椰子雞煲,, 別無他選

唔係一間值得再去及介紹朋友嘅餐廳,首先,waiter, waitress完全唔專業,問非所答,只識sell人食貴嘢,我點六人餐,個waitress話唔夠食,阿姐我地六個人,如知6人餐唔夠6人食就唔好叫係6人餐,當然我地除叫6人餐外再叫其他嘢。跟住到佢所謂湯底,加一次要38蚊,其實只係史雲生清雞湯。只有一樣係可取就係第一次嘅椰子湯幾好飲。建議飲完頭啖湯後,唔好加38蚊要所謂雞湯,加清水好過!

餐廳好細心,將海南文昌雞倒入鍋後,會以沙漏計時,咁就唔怕雞件會煮得過老;另一細心之處,係侍應之後會幫大家將鍋內既雞油撇走,咁大家就可以更健康地享用椰子雞湯啦!

再一次嘗到呢啖椰子雞湯,依舊係咁清甜兼有雞味,好味過媽媽煲既老火湯,真係勁正!我建議大家齋啪第一鍋雞湯,之後先再加湯去打邊爐,咁就very good啦!

由於我和友人都不嗜酒,所以決定各自揀選飲品,友人點了椰子菠蘿特飲 (原價 $32),成品端上後,友人說要先讓我試試,啜一口,菠蘿汁的酸和椰汁的甜帶出富層次的融和,加上冰凍的口感,既開胃又醒神。至於我揀的雜莓沙冰 (原價 $48),成品以新鮮雜莓果蓉調製,入口冰涼透心,而且沒一般雜莓飲品的藥水味,反而帶天然果香,味道既清新又甜美,推介愛好水果的朋友一試。

緊接的波士頓龍蝦海鮮拼盤 ($598) 以一個超巨形的玻璃盤盛上,海鮮鋪得滿滿,全部都件頭十足,而且隨拼盤還附上三款自家製作的醬汁,包括秘製茄汁他他醬紅醋。開邊冰鎮波士頓龍蝦,肉厚味鮮、而凍蝦亦新鮮大隻,夠曬彈牙。至於幾隻翡翠螺青口,前者螺肉食落既爽彈又清香,而青口亦肉嫩富彈性,水準不俗。

吃罷海鮮,接著就輪到是晚的另一主角原味椰子雞鍋 ($128/半隻) 登場!據店員稱,火鍋的湯底是選用了海南省新鮮的椰子肉及椰皇調製,享用時再配合海南特產的文昌雞。見店員先放下一個計時沙漏,食法是要先把上述湯底在鍋內煮沸,滾起後再放入雞件,接著蓋上鍋蓋,再倒轉漏斗,烹煮七分鐘即可食用。

配料方面,友人愛吃肉,點了紐西蘭雪花肥牛 ($68) 及玫瑰黑豚腩片 ($98) 各一客,而我就揀咗炸響鈴和日本產地直送野菜籃。雪花肥牛先上桌,一看,分量不多,只得 8 片,雖然是冰鮮,但肉味算濃,而且肥瘦均勻,唯一就是稍嫌肉質有點嚡口。至於捲成玫瑰花狀的黑豚腩片,瘦的部份其實算唔錯,肉質鬆化多汁,可惜肥的部份較多,實在令人卻步,吃了一件便即時放棄,還是留待不怕肥的友人獨自品嘗吧!。

反而炸響鈴 ($25) 和日本產地直送野菜籃 ($49) 水準唔錯,響鈴捲得很厚,而且炸得酥香鬆化,可以即食,也可以沾湯來吃。至於野菜籃,籃內有多款來自日本不同地區的新鮮蔬菜,如福岡生菜、北海道小松菜、鹿兒島椰菜等,款款味道清爽鮮甜,且蘊含豐富維他命和礦物質,用來打邊爐沾上醬汁湯底後格外美味。

友人意猶未盡,決定加碼,點多客一級臘味芋頭煲仔飯 ($78) 暖暖身。原來點煲仔飯要等大約 30 分鐘,如果趕時間又想吃的話,建議大家要提早一點落柯打。成品端上後立即揭蓋一看,香噴噴的臘味夾雜著飯香從煲裡傳出,令人胃口大開,立即舀起一碗試試。用上海南米煮的飯粒,乾爽分明,而且飯吸收了臘味的油香,所以吃起來飯味特別幽香,加上煲底的飯焦,焦而不燶,配上帶點甜味的豉油,正!

這頓晚餐食得很愜意,除了因為個海鮮拼盤夠曬真材實料外,椰子雞鍋亦極具水準,雖然整體價錢並不算便宜,但勝在物有所值。

與會友吃四季例餐48元肥牛茄汁烏冬也是48元連湯午餐煎雞扒飯今天加6元叫茘枝梳打凍飲不甜一粒罐頭茘枝別致膠匙皆大歡喜!椰子菠蘿冷飲有些pina calada夏威夷特色而且這個飲品任添真是遷就這漏斗不是催人快點吃而是為点火鍋的客計時用鄰座也是熟人他們叫椰子雞鍋據說非常抵半只雞漏斗漏完雞就剛好可食我們要午餐加6元飲已經可以不過午餐天天都只有6,7款全沒更新看來遲早要幫襯火鍋套總括,這店暫時仍然抵。

湯底用上椰青水,再加入椰青肉,絕對夠清甜,而檯面放有漏斗,每翻一次大概是七分鐘,只要把雞放入湯鍋,蓋好等漏斗沙走一轉,雞肉就剛剛熟,挺不錯的設計,文昌雞肉地比較白淨,食落肉質嫩滑,如果不蘸點醬汁,更加會食出雞件的肉味。

安格斯牛小排

紋理清晰分明,肉味更是濃郁,加上有嚼口,而且不是切到薄如蟬翼,感覺良好,泡在湯裡十幾秒,肉質剛熟未全熟間徘徊,味道會更鮮。

雨衣甘蘭

絕少在火鍋店的餐牌上見到,老實講,菜質帶點韌,滾耐少少會較好,香味獨特,有少許似唐蒿,但不會太強烈,貪新鮮可以一試。

可能香港人普遍偏向濃味湯底,未必接受到較原味的食物,但個人而言,反而覺得偶爾清淡一下,用椰青水的天然甜味,展現出食物的另一種風味,亦是一個不錯的選擇。
