The risotto was unfortunately a bit disappointing. I enjoy al dente but some pieces were actually were hard. Moreover, there are many lobster chunks but its mixed into the risotto. I think for presentation they could have saved a whole piece to put onto the top for a more stunning appearance even with the same amount of lobster.

I didn’t know there’s a Dalloyau in Fancl and they serve food! Bit this time I was just dropping by to get a takeaway cake! It’s 20th of May, so there was a special edition cake for today, the raspberry and rose mousse with a red love-shaped chocolate on top!The cake was pretty light, yet rich in the scent of rose and raspberry. The acidity of raspberry and the sweet rose flavour mixed well. A piece of this mousse was perfect ending for my day.

Definitely choosing Baked Escargots as appetiser for a French dinner. I don’t usually go for escargots, as I am not a seafood or snail person…But the beef tartare and onion soup appeared to be quite ordinary, so I went for the escargots, and it turned out to be a great choice! The escargots were not fishy at all, probably due to all the flavorings. The mash in the bottom was very tasty too! The toasties were a bit burnt and bitter though.

Dessert was this piece of French Pastry with hazelnut and egg white. The dessert was surprisingly filling as it was so dense! Yet, the hazelnut and egg white were so delicious that I couldn’t stop myself from digging in the dessert. By the time I finished it, I had a food baby already.

This Hazelnut soft serve should be how it should look! I liked this one more. It was smooth and was rich in hazelnut but I really think it could have been more dense and thicker. Surprisingly, the texture of the soft serve was very different from that of the truffle soft serve we tried a while ago at the IFC shop. Good value for money at a cost of $25 but not at normal price.

與此同時,超級經典的Baked Escargot XL重現眼前。對餐廳不用麵包屑封口的做法大喜,皆因麵包屑會影響了蝸牛鮮嫩口感,味道相當甜美,當然也不要錯過吸滿了肉汁的薯蓉,香口惹味。

接著來的是一道去了忌廉的Truffle Soup Elysee,用上火腿骨熬製出來的湯非常甜美,帶有絲絲咸香,正好更加突出了湯中雲吞的鮮味。雲吞餡料雖然用上了鴨肝、雞肉及松露來製作,但竟然一點也不油膩,清爽怡香。

一輪頭盤過後,主菜的Salmon Coulibiac送來了,即時令人聯想起曾在金鐘店吃過的美味威靈頓牛柳。這個三文魚酥皮批的製作比牛柳更為繁複,可從橫切面得知,層次分明,足有七層之多,除了主角的三文魚柳及酥皮外,還有蘑菇蓉、野米、菠菜、蛋白、蛋黃及酸瓜,極其華麗,吃起來味道相當複雜,當中的三文魚柳依然非常幼嫩,就算有層香口的酥皮在外,但仍不油膩,層次及味道與上次的牛柳相比,別有一番風味,值得一試。

另一道Hen in a Pouch, Madeira Truffle Sauce是一道非常經典的法國傳統名菜,亦是現今流行的低溫真空慢煮的始祖,由於製作極其繁複,已甚少機會接觸。師傅先將松露切成薄片與鴨肝同塞在雞皮之下,再放入豬小肚內再吹氣,漲至快破時以綿繩綁緊,以雞湯不停澆淋,利用小肚內的熱力將雞燜熟。

從小肚內取出雞隻後,切下雞腿並拿去烤焗,做成一雞兩味。兩款做法的肉質都非常嫩滑,而且柔軟多汁,蘸上馬德拉酒做成的醬汁,倍添美味,而且香氣濃郁,令人留下深刻印象。

還在回味當中,甜品也送到桌上了,一看之下,兩款都是占苗愛吃的,分別是沾滿了冧酒的Rum baba,濕潤濕潤,愛酒之人也會喜愛的甜品;而另一款則是Crepe Suzette,班戟皮吸滿了焦糖及橙香,美妙絕侖,唯一美中不足的是沒有席前表演,始終看見點火那一下會更令人心動。

近年已經很少吃酥皮湯,因為遇上質素不佳的,真是太嘥 quota 了!而來 DALLOYAU 可以很放心,因為這裡的酥皮非常清脆卻又一點不油不膩;這天分別點了 酥皮干邑龍蝦湯 $158 及 酥皮松露鵝肝湯 $168,前者濃郁,後者清鮮中見馥郁,兩款都超美味的~

不過這晚的重頭戲其實是 Hen in a Pouch廚師先將黑松露及鵝肝塞在雞皮之下,再用一個氣袋包著整隻雞去煮,讓兩種材料與雞味融合匯集,吃起來除了雞肉的鮮嫩,同時也富有松露的香氣以及鵝肝的油潤感,滋味滿分!

最後是甜品環節,這天也非常瘋狂地點了四款之多,當中自然包括超清脆的士多啤梨 Mille-feuille,以及兩口子十分熱愛的橙酒班戟,超滿足的說!不過這晚最甜的並不是甜品,而是老公及兩兄妹悉心準備的生日卡,超驚喜的~
