之前有介紹過這間麵食 fine dining,短期之內再去,因為食物質素甚佳,也可以來一個補充。這次我叫了台灣陽春麵,麵身甚有彈性,混和麻醬一起,讓人食指大動,不消三分鐘就吃光了。另外一個是長崎冷麵,絕對值得一試,麵身沒有湯,麵底有一蘭水準,我喜歡這個粗幼度,而且甚彈牙。內裏的材料也不馬虎,雞肉很好吃,絕對和坊間的不同;他們的用料甚為新鮮,材料很貴,而且很用心製作,你一吃就知道了,也會覺得「對,好吃就應該是這樣!」這次主力想試不同的東西,也順道叫了一個燒牛肉,果然沒有叫錯。燒牛肉甚有牛味,而且調味做得甚好,咬下去不靭,而且很冧,牛肉的鮮味完全給呈現出來,可以感受到他們花了很多功夫在這道菜上,絕對有米芝蓮水準。從善如流,剛開業不久,開始時用英文餐牌,但要服務員向每位客人解釋每個菜式一次,這次轉了中文,也算是一種妥協。當然,如果正宗高級西餐廳,全英文是沒有問題的,也應該如此,例如文華扒房;但在上環蘇杭街吃麵,全英文就未必每個人看得明白,所以轉做中文是必需的。這次看到老闆,自然把握機會談一下及了解多一點。老闆是瑞士人,而他們的麵是交來的,水準甚高;因為我問他們如何做到這麼多種麵而質地可以完全

內裏的材料也不馬虎,雞肉很好吃,絕對和坊間的不同;他們的用料甚為新鮮,材料很貴,而且很用心製作,你一吃就知道了,也會覺得「對,好吃就應該是這樣!」

這次主力想試不同的東西,也順道叫了一個燒牛肉,果然沒有叫錯。

當然,如果正宗高級西餐廳,全英文是沒有問題的,也應該如此,例如文華扒房;但在上環蘇杭街吃麵,全英文就未必每個人看得明白,所以轉做中文是必需的。

這次看到老闆,自然把握機會談一下及了解多一點。老闆是瑞士人,而他們的麵是交來的,水準甚高;因為我問他們如何做到這麼多種麵而質地可以完全不一樣,他說他們都嚴選麵商,比方說那個近似一蘭麵質的麵,就是從日本交來的。

另外他們的食物全部都是有機,也有慢煮三文魚,牛肉也是煮了很久,難怪有這麼高的水準。

文字不能形容萬一,你到這裏,叫他們的燒牛肉,再加一碗長崎冷麵,試試他們的麵,試試他們的煮雞肉,你就能明白甚麼叫做用心製作,以及甚麼叫做好吃及高水準。

行過見新開鋪,唸住新鋪一定好食~同朋友叫左3碗麵。點知。。。三碗都好難食。2 碗無湯嘅麵, 陽春麵吸左d汁後變成漿糊狀! 口感好差。 食來食去都淡而無味!另外一碗有湯嘅麵就酸到朋友不停要飲水中和返。。。真係奇差!

行過見新開鋪,唸住新鋪一定好食~

同朋友叫左3碗麵。點知。。。三碗都好難食。

2 碗無湯嘅麵, 陽春麵吸左d汁後變成漿糊狀! 口感好差
。 食來食去都淡而無味!


另外一碗有湯嘅麵就酸到朋友不停要飲水中和返。。。真係奇差!

Came across foxtail when i was reading the newspaper today so decided to come here for a try...it was located on jervois street across the dim sum place and is easy to find...got here at around 12:45 which is peak lunch hour but only waited for 15 minutes which is not bad..it's a small place with about 15 bar spots and 4 2-seat tablesthey do not have a lot of choices on the menu with just about 8 noodle items if i remember correctly..my friend and i ordered GURNEY and TOKYO which are both recomm

they do not have a lot of choices on the menu with just about 8 noodle items if i remember correctly..my friend and i ordered GURNEY and TOKYO which are both recommended by the owner here...

GURNEY is a noodle with singaporean flavor served in a soup base similar to laska with just a bit of spice...tofu...shrimps....both my friend and i like this noodle.

TOKYO is supposed to be served with ramen noodle, beef and hot spring eggs...sadly they ran out of ramen noodles so they replaced with something else that absorbed the noodles too much and became so soaky that i could only finish half bowl...and the beef was rough and chewy that i had to spit it out...

also tried the pandan crepe filled with coconut filling...the presentation on the plate was a not so good but the taste was ok....except i would like the pandan flavor to be a little stronger...

we provided our above comments to the owner and he endeavoured that they will try their best to improve...given it is a newly opened restaurant and the prices are friendly, i would come back again to give them another shot

麵色有分多種,豐儉由人,不過價錢也普遍略貴,例如我今次叫的越南河就要 HKD88.00,足足比一般店子貴了一倍,但我覺得很有物值。

店員告訴我,他們的湯,是用了六小時去煲的,所以入味;他們全選最新鮮的材料,就在上環街市;食物全是有機,價錢貴點我也覺得合理,而煮法則用上慢火,例如牛肉,三文魚,火喉錢也需要。

另外一碗是東京拉麵,其實我是不太吃粗麵的,我覺得和中華三味的即食麵沒有兩樣,這點店主可以留意。

湯底算是濃,豬骨煲制夠火路,而且用料算是多。牛肉是慢煮,但比一般的為硬身,這點也可以留意.

另外一碗星加玻的名物,和 Lalsa 類似,也是甚香,著店主留意了湯不夠,他們會跟進。

店內沒有餐牌,只是靠一張外賣紙來說明,未知道內裏原因,而 menu 也是全部用英文,是他們專做給外國人吃?有可能,但這只是天真的想法,蘇杭街是必爭之地,只做外國人生意會很蝕底。

結果是每位顧客進內,店員都要詳細解釋,甚花時間。

店內環境不錯,可以坐在 bar 枱上談心,一樂也。

我呢個係TOKYO (Fresh Ramen Noodles with Harrisa Beef Ribs in Chicken Broth), 真係喎, 入面有大量既冬菇, 木耳, 都係我既至愛~ 仲有一隻溫泉蛋。麵質比較厚身, 有種感覺可能係自家製既, 雖然睇落好似好細碗, 我地仲要係自取拎返公司, 但係D麵都冇"淋"到, 好吸味, 好食~  入面有兩件牛肉, 應該係慢煮, 好軟而且唔黏牙~

偶爾轉下口味, 呢間都唔錯, 可以再吃~
