Came here especially for the ginger purple sweet potato latte.
They serve it hot or cold but there was no price on the board so I don't know if it costs different hot or cold.

The name latte was a bit weird though because Latte is a coffee drink made with espresso and steamed milk.
I wonder why it isn't called ginger purple sweet potato milk.

Luckily there was no coffee in it and the bottom of the drink was heavy sweet potato puree with ginger.
It was not too sweet and the ginger was not too fiery and complemented the sweet potato nicely.
I would advise stirring the drink to mix the milk, ginger and sweet potato to get a balanced taste.

杏仁香蕉脆球鯷魚全麥意粉

Crispy Banana Anchovy Spaghetti

  又是一道神奇的主食菜式,堆成小山的全麥意粉之上,放上數個香蕉脆球。看著挺有趣的,不知道香蕉配上意粉會是怎麼樣的味道?

  先來試件香蕉脆球,裹著滿滿杏仁片,炸得金黃,色水已夠吸引。此時店方更指出這是用Air-fry的方法氣炸。心頭大石頓時拋下,梗係啦,少油香炸,對於我呢啲食得多又唔想肥既麻煩友,無疑是喜訊!炸過後,想話唔香口都唔得,薄脆又不油亮亮的外皮就更要大讚。中間的香蕉很夠稔香,還沒有犯到遇熱變酸的通病。加上脆脆的杏仁果仁香氣,剎是不錯。個人認為甚至可以將其當作小食推出,配上焦糖醬蘸點,也許會大獲好評。這建議連同行友人們都十分質同。:^)

  意粉黏滿厚厚的鯷魚醬,味道卻是意料之外的鹹中帶甜。沒有鯷魚的少許魚腥,只有極度淡薄的鹹香。反而香蕉的香氣及甜度較為突出,滿口都是濃濃的香蕉香氣,幸算自然。意粉煮得剛剛好,軟身不淋爛,嚼下去帶點韌勁咬口。可惜嚐不到當中的麥香,不知道是原本已經乏乏,還是醬汁勾稠得蓋過其香。而且吃著吃著,慢慢覺得有點膩口。結果抹嘴的時候又真係頗油,鯷魚醬油份及橄欖油兩者加起來有點過火了……

香蕉椰子慕絲脆脆

Banamousse(未正名)

  Gaba Concept設計改良當中的新甜品,亦都運用了香蕉這種食材。分開數層的香蕉慕絲的確造工有心思,不是馬虎上碟。除了主體慕絲,旁邊還配上焦糖醬、餅碎及焦糖香蕉作點綴,賣相精緻。店方指這份甜品會有驚喜,讓我們不禁期待了起來。唔知係流心、溶心餡料,還是有其他固體夾心呢?

  那麼先從置於中心,看著澎湃的香蕉慕絲開始吧!面頭有脆脆的杏仁片,碎碎的,大小不一。當然是有杏仁香,加添多一份獨特果仁香氣。而其脆度沒有因為底下食材既濕氣以軟化,有點咬口,感覺是頗解膩的。接下來就是湧泉而出的椰子忌廉以及焦糖漿。椰子忌廉濃稠至極,椰香清新,甜度倒是未有想像中的高。話明有忌廉,未打發的流質,不得不說是頗膩的。好在有焦糖漿甜濃焦香,加上杏仁片的乾感脆口,膩度大減。

  原來這就是驚喜!!!!!

  杏仁片及一大堆醬汁之下,竟然藏了綿綿的香蕉果蓉。自然的清甜清香當然是沒法抵擋,厚密帶黏的韌感可叫順滑如絲。唔會有好多香蕉纖維,完全不鞋口,有如果醬。

  可是之後的香蕉慕絲就稍為失色了,未有驚喜之餘,也不教人特別回味。雖說氣泡細密,入口滑溜,但這個未免太過水稔了,不消一會便要塌下。若是慕絲杯,大概會給它一個滿分。但一般製成蛋糕的慕絲會比較實身,方便塑形及進食。加上製作慕絲,也是用到忌廉之類油身食材。軟滑慕絲的背後,卻是甜濃膩感,如非十分受得甜味及膩度,應該一啖起兩啖止。

  托底既係厚實香脆的果麥脆脆,煙韌富有纖維嚼勁,並有果乾微酸,令慕絲的甜膩漸漸消去。比較甜,但香口得不行,燕麥香氣及果乾果香更添色彩。

  一旁的焦糖香蕉焦香微甜,表面還算有點點脆口。稠重的焦糖醬只是輕輕一捺,重香但無膩感,還有淡淡鹹香。少許餅碎的脆感,不只外表加分,其薄脆感亦很減膩。

  食食下真係有少少甜膩及倦意,味蕾有點遲鈍,又有點睡意。還是要小呷一杯咖啡來清清味,提提神苦而不澀,微酸,嚐不出更多了,太眼訓……

香蕉燴意粉(待推出): 我最愛意粉上那幾球香蕉杏片脆脆,廚師把沾有杏仁薄片的香蕉用Airfryer焗至脆身,香甜脆身,最欣賞是他們採用非油炸的健康造法,非常配合餐廳的GABA Concept;意粉是全麥意粉,配上香蕉味的醬汁,感覺創新,但我認為香蕉和意粉這個配搭奇怪,味道一般。

除了主菜,我亦喜歡GABA Concept的甜品,原因是他們的甜品全是低糖/無糖,包括雪糕、窩夫等更是自家制,這樣的低卡甜點,任何時候都是女生最愛!

蕉蕉蕉 (待推出) - 兩塊蕉中間也是「蕉」,中間的「蕉」是香蕉慕士配以穀麥脆餅底,慕士蛋糕上有香蕉蓉、椰漿及杏仁片。香蕉慕士蛋糕的香蕉味不重,穀麥脆餅很甜太甜,兩者單獨食吃就不太驚喜,但如果將兩者同時配上那三種Toppings一起吃的話,就有另一種感覺。
Other Info. : 餐廳環境舒適,枱與枱之間有足夠空間,不會令人覺得擠擁,枱上用藍色、綠色的酒樽裝水,這個枱飾很不錯。

總結:

小妹是個懶人,不愛寫字,記得小學最怕就是重組句子這一環。要寫筆劃繁重的字詞就不在話下了,最討厭的就是錯漏機會很高,寫擦寫擦,不斷重覆,直到啡啡黃黄的草質工作紙都穿破了,還是未能寫出正確答案來(大概問題在於小妹組句能力有點劣)。星期五晚,約了頭號好友出來相聚,由於大家的方向感多年來都沒有怎樣進步過,找到預先book了位的那間餐廳時,已過了訂位的時間了。在晚飯地點沒有著落之際,腦中浮起了一間同在銅鑼灣的心水餐廳-Gaba Concept。致電到餐廳詢問,得知餐廳尚未滿座,小妹與友人便快快起程到餐廳去了。Gaba Concept是間樓上餐店,主打健康食品。甫進餐廳,餐廳挺是開場,星期五8時正到達餐廳,入座率約8成左右吧。餐廳同時是間咖啡室來的,有書櫃及靠牆的小角座,閒時來放空一下,應該不錯的。甫坐後,店員把餐牌奉上,餐廳菜式供應挺多,設素食和非素食,餐牌上詳細列明食品成份及設素食標示,照顧到素食者需要,可見店家細心。稍作研究,小妹與友人最終點了香草醬蘆筍意粉另加65度雞胸肉Pesto Asparagus Fettuccine (Chicken breast add on)$75,蕃茄煙三文魚

最先奉上的是迷你酵母窩夫配綠茶雪糕Mini waffle$58。小妹一直以為先上咸後上甜是餐店的潛行規條,所以小妹在點餐前並沒有特意向店員提出甜品後上的安排。怎料這次終於撞板了,說真的,看到最先奉桌的是道甜點,小妹與友人是頗為驚訝的。既然食品已製作了,這晚也就唯有來過飯前甜品吧。

Gaba Concept的甜點全部均是無糖或低糖的,而製作窩夫的酵母仍是自然酵母來的,較一般的甜點低脂和健康。也就由於製法較特別,窩夫驟眼看上來顏色較淡,表面比一般的缺少光澤。

Mini waffle一客共有三件,旁邊放有crumbles, dried fruit,忌廉及homemade的抹茶雪糕。Waffle以長方形的白瓷碟盛著,賣相別緻好看。小妹是晚是三人到訪的,正好能與友人一人一塊的平分。

咬一口窩夫,窩夫體質感扎實,不會濕泡泡亦不會乾得令人難嚥,抹茶味是淡淡的,雖未能趕及香港幾間知名抹茶甜點舖的濃度及回甘度,但至少抹茶味醇而不會有煋臭的抹茶餘味。窩夫甜度雖輕,但味道清淡得來是豐富的,不會予人感覺味道空洞。

旁邊的抹茶雪糕是店家自製的,雪糕質感軟滑不易溶,甜度同樣屬低。要讚的是店家全部伴碟都是下過心機的,crumbles甜度低,餘味帶點麥香,相信同是店家自製的。

雞肉是西方的白雞胸肉,Gaba以65度的低温烹煮雞肉,確保雞胸內裏依然纖嫩。咬一口,雞胸肉質雖然未至於細嫩多汁,但總算不會乾淨淨的。

吸一口扁意粉,意粉烹煮時間有點過短,質感並不是Al Dente的硬中帶韌,而是內外都有點生。Basil味亦不算突出及香濃,小妹建議店家可加點松子仁增加堅果的脂香。
整體來說,青醬未能煮得均勻,令意粉的basil味不突出,而大部分的青醬都黏到雞胸去了,令整碟意粉食味不平均,令人有點失望。

幸而面頭的煙三文魚新鮮沒有魚腥味,質感軟綿中帶些微韌度,吃罷煙臐香慢慢滲出,算是稍稍補救薄餅麵粉香薄弱的不足。
整體來說,薄餅味道較為清淡,味道來源有點過份依賴煙三文魚,令食味不夠豐富。唯一可取的就是薄餅不算滯膩,吃罷薄餅罪惡感亦不高。

吃一口,南瓜蓉質感軟綿香甜,唯一敗筆在於lasagne pasta太厚了,而且焗製時間過長,令pasta sheet有點乾有點硬,破壞整個口感。

小結,小妹欣賞店家製作食品的用心和細心,看出食物由主體到伴碟都是思考過的。可是客人到餐廳除了是享受食物外,環境舒適度以至服務質素都是非常重要的。這就是人們愛到大酒店用餐的原因,因為大眾都知道這是一個packgage,客人希望得到的是一個良好的服務質素以及完善的用餐配套。

小妹衷心的希望Gaba Concept能更注意這點,多放放心機注意小細節,例如食品奉上的先後次序(甜點應在咸食後附上),餐具奉上的先後次序(先奉上餐具後奉上食物)以及餐具齊全度(即使點的是甜點也給予每位客人一套刀叉)等。隨此之外,明白食品製作需時,不過咸食的等待時間似乎有一點不合理了,小妹大膽的建議Gaba可試試改變供應食品的策略,如設是日晚餐,減小每晚供應的咸食款式, 務求貴精不貴多,隨了能加快出餐進度外,也有助令咸食的質素提高。以上只是小妹的一些愚見,希望Gaba Concept能更上一層樓,加油。

甜品方面,我們分享了極有睇頭的Puffle。Puffle 以烤窩夫、泡芙、自家製雪糕、紅莓醬、雜莓、Granola、杏仁等合併而成,泡芙出奇的新鮮,外脆內軟;而窩夫香脆之餘密度或甜度都比一般Begium Waffle低,蛋香也不比港式格仔餅濃,不過在這雜亂的配搭卻以輕盈、低糖取勝,配香滑的自家咖啡雪糕、酸咪咪的紅莓汁,再加Granola 和杏仁片,口感層次豐富,賣相與食味可說是內外兼備啊!

跟餐甜點以抹茶作主打,以抹茶蛋糕配Brownie碎、抹茶雪糕和少許水果,茶味較弱,味道不似日本抹茶,雪糕也溶得很快,只屬一般。

這天晚上,幾位娘娘聚首一堂,細訴工作趣事,當然少不了交換是非情報。聽著聽著,真的很感恩現在還能在校園這溫室裏混,錯綜複雜的辦公室人事關係,想起也覺得可怕,奈何人總要面對現實。

最後半年大學生涯,好好珍惜吧。

好多人話All day breakfast 好簡單,唔需要出街食,但這裡的早餐都是極有誠意的,尤其是紫心蕃薯(單看樣子,還以為是紅菜頭)特別好吃,在外面也比較罕見吧!!

一般外面的店會用茄汁豆,但這裡是用上鷹咀豆、黃豆和tomato paste 自家調出來的,所以不會稀巴巴的,連不吃茄汁豆的朋友都吃光光了

P.S.這裡的甜品都不用砂糖,用果糖、椰子花糖等代替,健康點嘛!

P.P.S這輕鬆愉快的2小時,我都唔知講左幾多次「好好味」,連朋友都話有無咁誇張,哈哈,下次試晚餐menu啦~

甜品方面,被這個Puffle($88)吸引,賣相豐富具層次感,由底而上,是由窩夫、泡芙、鮮果粒及雪糕而成,窩夫本身不太甜,加上自製的雲呢嗱和紅桑子醬,充分加添了酸甜口感,但一口吉士泡芙,被淋上醬汁後,泡芙易變淋,可算是唯一失色之處,不過整體來說,甜品是可以一試,而且最好是二至三人分享,就不會感覺太膩﹔

Gaba Concept is a restaurant with a difference. They aren't just your regular "organic" or "vegetarian" place. Hardly. Their purpose is to serve low GI (glycemic index), low sugar and dairy free meals including desserts! So, you can have your cake ... and eat it, too, without feeling guilty of eating a gazillion calories.

So, today after a pretty hard yoga class, I came here for lunch.

You have to press the code on the door (it's written on the plaque) to let yourself in. Then you walk up the stairs to the restaurant. There is no elevator. After that workout, you're ready to eat healthy!

The restaurant is spacious with a large window to let in lots of natural light.

There's a DJ system at one part of the restaurant. Apparently, the owner is a DJ and he likes to DJ on certain weekends at the restaurant. I should note, the music chosen at this place was a nice selection of music. Every single piece I liked.

I was presented with the lunch menu. Everything was under $100 and included the daily soup, salad and daily tea or daily juice. There was no 10% service charge. You can add $15 for coffee and $25 for their daily dessert. I chose the bell pepper frittata.

It seemed everything was made to order as every thing came rather slowly. Including my drink which came last.

The daily salad was cucumber and okra. The cucumbers were fresh and crunchy. It had a subtle tartness from the vinegar.

I had the daily juice which was mango/passionfruit juice. You can tell no added sugar was added to this as it was not sweet. Just tasted like mango and passionfruit.

I saw they have a Wednesday special where you order their special dessert, you get a latte or cappucino for free. I'm curious if their desserts are good as they will be using no sugar but other sweetening methods. I will  be back.
