酒店中菜廳通常以粵菜為主,主打川菜的很少,而且是連續三年榮獲米芝蓮一星的川菜館,其實力不容小覷。其實早在兩年前已經來過吃麻辣火鍋,雖然價錢不便宜,但火鍋料的質料很高,麻辣鍋底既香且辣,的確不錯,這次再來就要試試他們的川菜做得如何。駿景五小碟。五小碟中包括虎皮尖椒、夫妻肺片、蒜泥白肉和口水雞的四碟也是辣的,而且未吃已經聞到很香的辣椒辣油味,十分誘人,令人食指大動。虎皮尖椒,尖椒本身連籽吃是很辣的,所以廚師特別把椒籽去掉,配上特製的豆豉辣椒汁,雖然很辣,但尖椒的甜味仍在,非常好吃。夫妻肺片,是當中最辣的一道涼菜,牛肚與豬脷都切得很薄身,入口爽身,辣得流鼻水。蒜泥白肉,有別於一般以一片片上碟,切成薄片的白肉卷著青瓜絲,多了一重爽脆口感,而青瓜也減低了白肉卷的辣度。口水雞,雞與辣醬油是分開上,吃之前才淋上去。其實雞肉不是主角,醬汁才是。比起前菜這個不算太辣,而且帶有花生香,用來撈麵最正,所以有食友忍不住把醬汁打包回家。瓦撐焗胡椒蝦。白胡椒是很貴的香料,有食友說現在一斤要賣到九十多元,整個鍋裡都鋪滿大量的白胡椒,相當足料。白胡椒的香味很突出,辣味在口腔裡停留但不嗆喉,蝦殼夠乾身,吸收了白胡椒的味

順德煎魚雲。同檯食友一致大讚,就連不怎麼愛吃魚的食友也說好吃,魚雲一點也不腥,盡吸薑蔥的香味,魚肉滑溜之中又帶香脆,最後就連蒜頭蔥段也被一掃而空。

花雕焗子雞。是這裡的招牌菜,焗雞吃過不少,不過用花雕酒醃過再去焗的還是第一次吃到。雞味略淡,帶有淡淡的花雕酒香,不過有食友說雞胸和雞背位有點嚡,還好我吃的是雞翼,所以肉質還不錯。

麻辣水煮滑魚片。上檯時只見辣椒鋪滿,一點魚肉都看不到。一開始吃魚肉不太辣,魚味不太濃,但很嫩滑。吃水晶薯粉和大豆芽時就開始感受到其威力,越吃越辣,越吃越麻,咀唇都麻痺掉,胃部也開始熱起來,但又會忍不住想繼續吃呢。

干煸涼瓜。我怕苦,所以不吃苦瓜,不過沒見過乾煸這個煮法,就淺嚐了一片。苦瓜爽脆,但仍然是苦的,不過伴炒的肉碎很香,是個十分下飯的苦瓜菜式。

宮保蝦球。爽彈的蝦球混合乾椒與泡椒去煮,味道酸酸甜甜,辣度因為有甜味而略為減輕了,但卻帶出了辣和甜混合起來的另一種享受。

駿景砂鍋炒飯。炒飯的配料簡單,只有叉燒粒、蔥粒、菜粒,不過米飯炒得夠乾身,雖然未算很突出,但也在水準之內。四川擔擔麵,這是加辣版的擔擔麵,滿碗紅油,不算太辣但很麻,吃的時候要小心翼翼,萬一吸了湯汁到氣管肯定辣到流眼水。最欣賞是這裡的麵條,幼扁身的麵條很滑溜,又有彈性,讓人很口味呢!

懷舊馬拉糕。加入了欖仁的馬拉糕用上傳統的做法,口感鬆軟不太甜,用來中和辣味剛剛好。

愛吃辣的我今晚相當滿足,不單滿足了想吃辣的慾望,而且白胡椒蝦、煎魚雲等非川菜菜式也做得很有水準,可以讓不太吃得辣的人,也可試到其他菜系的水準,難怪這裡會連續三年得到一星殊榮呢!

We love to come here for some really spicy and numbing Sichuan food for a number of reasons. First, of course, is the good food. Second, there is valet parking which is free with validation as parking is one of the pain points in HK. Third, the restaurant is situated in a hotel with a nice entrance and lobby, while the restaurant itself is spacious and high end. For Sichuan food, we usually order the saliva chicken and Sichuan poached sliced fish in hot chili oil (水煮魚).

Saliva chicken - the chicken is tender and juicy with succulent meat, but the star of the dish is really the spicy sauce that is served separately on another bowl. The spiciness is just right with a mild numbing sensation, and goes perfectly with the chicken. You can choose to pour the spicy sauce onto the chicken or use it as a dipping sauce. 

Sichuan poached sliced fish - the sliched fish are fresh and cooked just right as it arrives soft and smooth. The aroma of the chili oil surrounds the entire table as we wait anxiously to dive in. The potato noodle included is chewy and delicious as it has soaked up the sauce. The entire experience is mouth-numbing and sweaty but somehow it's all worth it. It's amazingly addictive as we keep reaching for more fish and noodle even as our tongue is screaming it can't take it anymore!

We've only come here during lunch time so we have tried their dim sum, but they pale in comparison to the Sichuan dishes.

朋友們对川菜都有情意結,見openrice各位有讚無彈就去試下,打開餐牌都預佢超貴無意外,个杏汁朱肺湯係好滑,好似有奶油甘,但沒有杏仁味的,但湯渣都好好味,其餘脆素鵝个底係濕既,N黑木耳白烚,口水雞吾掂,水煮魚四佰蚊吾想甲黎試,試左-件已吾想再食,大家已說三希,小甜,云貴, 乜都好過尼度,吹吹下水,隔枱—下大風吹來,原來待應鋪枱布,D麈飛到我隻手掩完杯掩鼻,因我鼻敏感,埋單三個女仕,仟三蚊包十四蚊小費,个肥部長即刻西面多謝都無句,到我地經過門口佢企正都無多謝,第一次寫平評寫衰D餐廳.

這裡的夫妻肺片做的相當有水平, 採用了很新鮮的材料,上菜的時候特別叮囑香辣的汁料分開上, 這樣更能嚐到原汁原味的鮮味,可以滿足不習慣吃辣的朋友, 但能吃辣的,點上些辣汁,或者將材料在香辣油內泡一會, 在入口,口中辣和鮮味交織在一起,很滿足啊。

蒜泥白肉用了很薄的豬肉,卷上新鮮的青瓜絲,在中國很多地方的都嚐過這道菜, 其中俏江南出名的晾衣白肉也不錯,但當和駿景軒的相比,無論是師傅的廚藝,材料的新鮮度, 調味的回味度,這裡都稱得上是鶴立雞群。

樟茶鴨是四川宴席的一款名菜。相傳成都人黃晉臨,在清宮禦膳房為慈禧當差時,將熏鴨用料,改為樟樹葉和茶葉,薰制出的鴨子,味道極為鮮美,深受慈禧欣賞。此菜是選用成都南路鴨,以白糖、酒、蔥、薑、桂皮、茶葉、八角等十幾種調味料調製,用樟木屑及茶葉熏烤而成,故名“樟茶鴨子”。駿景軒的樟茶鴨真正做到傳說中的皮酥肉嫩,色澤紅潤,味道鮮美,具有特殊的樟茶香味, 鴨肉入口就像吃法國的著名的鴨胸肉,師傅能將色、香、味、形融於一體,實在是食客之福。

廣東菜,師傅同樣做的很出色, 梅菜蒸茄子味道適中,保持了梅菜的香甜, 不會過咸,茄子吸收了梅菜的香味, 在配上白飯,絕對是夏日的開胃之選。

中華飲食絕對是中國的文化中是最值得自豪的,外國元首名人到中國一定要品嚐當地的美食,而香港作為各種中國菜做的最好的地方,也是飲食成風,精益求精的地方,實在是香港人的幸福, 希望駿景軒的師傅能不斷創新, 給我們帶來更多的驚喜。


PS 由於兼營火鍋的關係,餐廳的冷氣開的特別大,所以去吃飯最好穿多一件衣服。

接著湯亦送到,那窩杏汁白肺湯,上桌時幾香的。奶白色的湯底,有著杏汁的香,喝起來幾滑,亦有清潤的感覺。湯料肯定都不可浪費,吃一件豬肺,軟滑豐腴,沒有怪味,大可放心食用。

一心試試這邊的酸辣涼粉,但看見大堆的麻辣紅油鋪上面,糊糊的,欠缺清爽的感覺。需知道吃涼粉,就是貪其清新涼快的質感。吃一口,涼粉並不滑溜,而且很容易斷,縱然有酸辣味,仍補救不了。

涼菜的夫妻肺片則好得多,不論是肚或肺均是新鮮,紅油很香,辣味對辦,做得頗為出色,是我全日最欣賞的一味。

到了川菜,有泡椒蒸魚雲,把泡椒刴碎鋪在魚雲上,賣相不算討好。然而,魚雲是幾滑的,不帶腥味,泡椒的酸辣味亦沒有問題,都是可以的。

一味泡椒唔夠,再來泡椒桂花蚌。除了泡椒外,還放了小米椒,以及生蒜。桂花蚌爽脆,不過稍嫌太大,如果可以切細些少,一咬一口,就更理想。這道菜,未有驚喜。

最後了,是辣子雞軟骨,幾有特色。配料有辣椒、青紅花椒,更加入了尖椒粒。在一大堆麻辣的原材料找出雞軟骨,就是吃辣子雞/雞軟骨的其中一個特點。嚐了雞軟骨,無疑是脆口,也沒有上太多粉,可惜仍吃到一陣雪味,麻辣味道竟進不了去,是敗筆之處。

出到門口,發現有一個飾櫃,放滿了四川特色的原材料,而且全都清楚列出名字,我認為挺有意思。

正宗四川擔擔麵 $45: 6分, 當然, 不能甚麼川菜也不試, 就要碗擔擔麵吧. 個湯是鮮紅色的. 飲一口, 果然是相當辣, 辣完之後就開始麻, 不怕麻辣的話應該都幾滋味. 不過麵條的質感一般, 也不大能夠吸收個湯底.

手切肥牛丶黑豚肉的肉質也鬆軟味濃,羊脾肉片羶香十足是一大驚喜!澱粉質當然少不了,其中手拉麵是不錯的選擇。

服務是一貫酒店的高水準,要真正辣得刺激的會選雲陽閣,但配料這邊的選擇是較多及新鮮度較高。一味黃沙潤足以叫人再三回味!
下一個目標將會是以選料新鮮口味刁鑽見稱的三希樓。

We ordered a LOT of vegetables and mushrooms, chiu chow fish balls, mushroom and pork balls, fish skin dumplings, shui jiao (dumplings), dace paste (for westerners unaccustomed to this practice, it's a thick doughy paste of minced fish meat - usually dace - which you spoon bit by bit into the broth and let it cook into funny shapes), about 6 plates of Oz wagyu beef (tender, well marbled beef and not too fat, a steal at $108), shavings of leg of lamb, and black pork (kurobuta).

A couple of friends were caught unaware of the hidden landmines of peppercorns and choked, spluttered and gasped their way through dinner. There was plenty of beer and icy cold soft drinks (the bottled kind somehow still tastes better) to lower the heat.

We also ordered a starter of cucumbers, 2 servings of spring beans which my bf loves, half a saliva chicken (tender, juicy, succulent), and to round off the meal, 3 bowls of dan dan mian (the texture of the noodle was lovely, though the flavour was overwhelmed by the desensitisation of our taste buds from the mala broth).

Service was a little better, though some of the waiters seem to be in a daze and needed simple, short instructions repeated several times before they caught on. But they got the job done, gas canisters were changed promptly, tea was refilled, orders generally came as requested without much fuss. The manager also tend to look away just when your hands goes up in the air, though perhaps it's not entirely his fault for not noticing us non-celeb/non-regular people sitting at the corner. Overall, a much happier meal with a full stomach and the feeling of ants crawling over my lips and tongue. I love Sichuan food!

Most of the reviews here are about the Sichuan cuisine, dim sum and hot pot. We like their traditional Cantonese cooking much more.My favorites:sauteed grouper fillet - always excellent. Pigs lung soup - much better than Luk Yu, not overwhelmed by almond taste. Pigs lungs are much cleaner. Best in HK.Braised fish cake and turnips - rarely found tradional HK old time taste.

After the announcement of the HK Macau Michelin Guide, I was surprised that there was a restaurant in my neighbourhood that serves Sichuan food (my favourite), so my parents and I decided to try it out. It was a perfect combo - dim sum for my parents, Sichuan for me.

We made a reservation for 1:30pm, but arrived at 1:50 due to traffic. The lady at the counter was a bit rude and made us wait when the table was actually available, just that they were setting it. When asked if we could sit down first as we didn't mind them laying everything out there and then, she grumbled and said it was all in good faith that she didn't want us to be "hurt" by the waiters. What, like poking chopsticks in my eye? Also we felt the place was too noisy even though it was almost 2pm, not exactly the kind of "hotel" restaurant that we had imagined.

We ordered a chicken and sea snail soup which at $348 was reasonable if you dig Chinese soup that are meant to have a myriad of health benefits, but if not, it still tasted very sweet and nourishing, albeit a tad oily. The prawn dumplings and the other dumpling (maybe it was scallops, couldn't really tell from the look and didn't bother asking mum what she got), was disappointing, as the skin was gooey and stuck to our chopsticks and the dumplings fell apart when we picked them up. Either poor quality dumpling skin, or re-steamed again and again. The char siu bao was slightly better, with tender chunks of char siu inside and didn't taste too sweet or salty. The prawn cheung fun was decent too except the "fun" was a bit thick. The soy sauce stir fried cheung fun came in a small casserole pot and I found it a bit too oily. The kale was crunchy and still verdant in the broth. My dad liked the mildly spicy steamed fish head, a timeless favourite of his. The chicken and salted fish stir fried rice had a dry texture and well seasoned, with just enough salted fish to give it a kick without overpowering the rest of the dish.

I concentrated on my Sichuan choices: spicy cucumber, saliva chicken, dan dan mian and sour and spicy cold noodles. I was generally very happy with all the dishes except the sour and spicy cold noodles were too salty, and the paste was thick and gooey. The cucumber was crunchy and properly smacked (拍) to let the spice seek in. The sauce that came with the saliva chicken was heaven, with a touch of numbness and a good level of spiciness. I practically finished the whole bowl of sauce by putting it on everything else. The dan dan noodles had a good al dente texture and the soup was flavourful without being overwhelmingly spicy. Unfortunately it was overshadowed by a short piece of hair I found in the noodles, and the manager promptly cancelled the order.

We liked that all the sauces came separately so that each customer would choose how much to add, or not at all. A bit of prompting was needed to change our plates and refill the water, but it was generally done without much fuss. And they have discounts with AE (10% off at lunch), BEA (12% off a la carte dinner), and of course there's the openrice coupon for weekdays until the end of the year.

同學早前轉工升職,相約食飯慶祝,一沾旺氣,選了跑馬地的駿景軒。雖然是閒日的中午,但也差不多座無虛席,地方典雅,裝修和傢俱都很中國式,最欣賞是雖在午市,也有白色瓷蠟燭爐替你熱著茶壺。我們點了鮮蝦腐皮卷,北菰鵝掌,杏汁白肺湯,薑蔥叉燒撈麵,山水百腐花。先來的杏汁白肺湯是用盅上的,奶白色的湯水,浸著兩件豬肺,湯味清潤而不濃,杏仁味則不明顯,豬肺洗得乾淨徹底,無異味,吃得安心。鮮蝦腐皮卷,腐皮炸得脆而不過火,剛好,蝦肉新鮮爽脆,有水準。北菰鵝掌,是點心,一碟有兩件,鵝掌炆得入味,掌皮腍而沒有散,最怕是炆到散晒,北菰也腍而不過鹹。薑蔥叉燒撈麵,是用粗麵,叉燒切了絲,汁料調較不錯,麵質亦煮得有度,唯吃至尾段,可能浸了些時間,覺得過鹹。山水百腐花不是很大碗,同學極力推薦,也覺不錯,唯絕不是吃過最滑的。服務很週到,地方雅潔幽靜,是用膳談心的好地方,感謝同學的款待,祝願大家努力苦幹,來年又升職加薪。

因為天氣涷左,所以同屋企人去左駿景軒打邊爐。其實都黎過好幾次,不過次次都無影相嗰時又未成為Open Rice會員,所以無寫食評。因為廚房唔需要煮,所以打邊爐講求食物同混醬材料新鮮。駿景軒所有食物都好新鮮。服務果然係酒店級,永遠唔洗叫都會識加湯,換碟,真係令人食得好舒服好衛生。今次重點推介: 黃沙潤!!! 我以前唔鍾意食豬潤既,不過爸爸話我知唔係好多地方有黃沙潤食叫我一定要試,所以就食左塊。嘩!真係冇介紹錯。正到暈。佢完全冇我以前食過嗰隻"好粉"既感覺,好滑,重有點爽,更加改變左我對豬潤既睇法。我記得以前食過嗰D豬潤係好"沙",好"嚡",好粉,而且有異味,但今次係冇哂依D缺點之餘我重要覺得黃沙潤好好食!!! 我自己重encore左多碟黎食。 豬肉丸!!! 有蝦既豬肉丸都係第一次食。yum yum!!! 咬落去第一個感覺係好新鮮好爽口。因為佢唔係只有豬肉,而係有蝦同mushroom,所以冇左平時既嗰個單調感。 正!!! 真係好食到一定要讚。 我地所有人都好欣賞佢既混醬。材料新鮮,款式多,最high就係有生磨芝麻同麻醬。生蒜同蔥係我自己favourite,所以落左好多。其他食物都好新鮮,
