🪿「家鄉碌獅頭鵝」必叫!師傅先用滾油淥脆層皮再燒,所以鵝皮勁煙韌彈牙,鎖住肉汁之餘,肉質嫩滑香噴噴👍🏻 用嘅係大鵝,半隻份量已經好多。工序繁複,記住要早一日預訂!BTW 鵝皮fatfat 超!正!要揻皮嘅人不如留返俾識食嘅人啦... 唔好浪費食物🥹🙏🏻🐥「黄酒煮雞湯」必叫!平時成日飲雞湯,用客家黃酒煮真係第一次,有股甜酒香但唔會醉🤣🤣 雞係煎過再煲湯,香濃但keep到嫩滑。湯雞冇油浮面唔膩,相信師傅隔咗,好細心🫶🏻💕 偷飲咗少少客家黃酒,好似rum,有提子乾甜味嘻嘻🍇 唔怪得湯咁香!餐廳有水缸,我就知個天叫我嗌海鮮!!果然冇令我失望,「酥炸美國桶蠔」肥嘟嘟卜卜脆,一咬有聲+爆汁🤯💥「椒鹽鮮魷」,都真係近年我食過最好味嘅版本,新鮮魷魚咬落係爽口有膠質,粉漿好薄但又超脆,唔知點做到 (求教)💯🐷「冰鎮咕嚕肉 」係半肥瘦架!!!師傅真係識啲野!!!建議上菜後分開啲肉等佢每粒都被冰包圍,再放佢幾分鐘先食,個甜酸皮會再脆啲,去到呢到我已經X唔住好飽... 但都清碟唉點解?點解要咁好味?🚬🚬🚬「金銀蒜粉絲蒸勝瓜 」& 「客家煎釀豆腐」 正好清一清今晚嘅超濃味蕾,唔錯。 continue reading

秘製三杯鴨(半隻) $188味道及煮法與台式的三杯雞不同,客家菜主要用麵豉醬但擺脫了以前「多油多鹽」的傳統煮法,味道較濃但不會太鹹,廚師刀章不錯,半隻鴨上碟時盤在一起,賣相吸引,鴨件大小適宜不會黐刀,夾起來較方便,值得推介。鬼馬焗魚腸 $128現時較少食店會推出這款手工菜式,份量適中,蛋面焗至微黃,魚腸採用鯇魚腸,應該有用燒酒或生粉洗過,很乾淨及完全無鯹味,就算不加胡椒粉亦不會食到鯹味,食落滿滿童年回憶,價錢亦合理,屬大眾化路線。豉汁蒸大鱔 $168上次食唔到好味嘅大鱔,心有不甘,於是再次出擊,又選這款蒸大鱔作比較,最怕貨比貨,這家蒸大鱔調味恰到好處,改良了多油多鹽的傳統煮法,鱔件份量足,且新鮮,終於可以大飽朵頤,值得推介。上湯豬潤浸時菜 $108由於以上菜式均較油膩,於是點選一個菜蔬作平衡,但只有數片豬潤及幾粒杞子,以這個價錢屬於偏貴,是否揀選則見仁見智。 continue reading
