珍珠米煮成的飯很飽滿軟熟,混上甜辣醬,微辣不涸喉,飯粒沾滿了和牛肉並帶點點飯焦。和牛的甜,飯焦的香,醬汁的微辣,配搭非常精彩,只恨分量太少。

總括來說,這裡食材質素高,環境和服務也不俗,但價錢方面的確很貴;每道菜我們只能淺嚐一口,清酒的分量亦只夠我們六隻嘩鬼淺酌。

Homemade Goma Tofu
The home made Goma (sesame) tofu was smooth, and firmer than regular tofu, as it should be, with a subtle aroma from the roasted seeds, ground and integrated into the bean curd. Usual condiments of salmon roe and freshly grated wasabi lend a little seasoning and heat, providing extra dimension. What I didn't really get is the overpowering miso sauce at the bottom of the champagne glass. It was salty, then sweet and overall, wrestled the last muscle out of the poor tofu.

Slow cooked soft ox tongue in white miso
The ox tongue appetizer would have been a promising dish if not for the overly salty miso. If you like a spring onion heat, you would like this. There is a lot of heat with the crunchy and deceptively sweet vegetable as it enters the palate. But after 2 seconds of chewing, it smokes up the mouth and nostrils very quickly. The star is the ox tongue since it is very soft from soaking up the miso during the slow braising process. No complaints save for the sodium levels.

Abalone, fried prawn and uni maki roll
The maki was decent although unspectacularly so. Rice was nicely done - whole grains but with a sticky enough consistency to hold all together. The combination of crunchy chilled steamed abalone, with crispy fried prawns, and creamy sea urchin was a yummy one, with something to offer for everyone.

Fried instant noodles with fresh lobster
Fried instant noodles isn't something found at most Japanese restaurants, especially one with the tagline "Fine Japanese Dining" but definitely enticing. Again, could have been one of those fun hearty foods you would order again, but the salt levels were just too high, and also unfortunately erred on the oily side. Tasty enough to finish, since it isn't a big portion, but those watching their health might think twice.

This place has promise, but it still has a few nits to iron out, before it is to become a sustainable place, especially in a place like Causeway Bay, where good Japanese restaurants are a dime a dozen.

今個母親節,我媽說吃厭了節日的自助餐,又不喜歡飲茶,決定要吃日本菜。這餐前我其實也曾試過到此用膳,感覺不錯,應不會失禮兼且鄰近我家,正好符合要求。我媽本想為我慳,選一些較相宜的套餐,但在我慫恿下選了最貴的行政人員套餐。那套餐分量很大,又有刺身、又有熱葷、還有麵食,絕對足兩位用,所以我也有幫忙吃一下。我很欣賞那個加州手卷,它的紫菜很脆。牛肉粒很惹味,連帶一起的雜菇也很可口。刺身及天婦羅雖不是本人一生中吃過最好吃的,但也算是中上質素,作為套餐內的一部分恰如其分。那個放在茶壺裡的湯也很特別,有一點點青檸味,而蕎麥湯麵則中規中舉。而我選的輕食套餐,那個toro roll好美味,但那個腐皮湯烏冬則較遜色了。另我爸選了雜錦魚生飯套餐;魚生飯分量大,足料又新鮮,套餐配有日式燉蛋及麵豉湯,很不賴啊!最後,我父母的餐各有咖啡/茶及甜品奉上,很完滿的一餐!是次埋單約700餘元,比起到一些酒店吃些質素參疵、動輒逾$400的母親節自助餐,這裡可是超值得多,食物更有一定的水準,環境也不俗,最重要是媽媽很滿足。

我媽本想為我慳,選一些較相宜的套餐,但在我慫恿下選了最貴的行政人員套餐。那套餐分量很大,又有刺身、又有熱葷、還有麵食,絕對足兩位用,所以我也有幫忙吃一下。我很欣賞那個加州手卷,它的紫菜很脆。牛肉粒很惹味,連帶一起的雜菇也很可口。刺身及天婦羅雖不是本人一生中吃過最好吃的,但也算是中上質素,作為套餐內的一部分恰如其分。那個放在茶壺裡的湯也很特別,有一點點青檸味,而蕎麥湯麵則中規中舉。

而我選的輕食套餐,那個toro roll好美味,但那個腐皮湯烏冬則較遜色了。另我爸選了雜錦魚生飯套餐;魚生飯分量大,足料又新鮮,套餐配有日式燉蛋及麵豉湯,很不賴啊!最後,我父母的餐各有咖啡/茶及甜品奉上,很完滿的一餐!

是次埋單約700餘元,比起到一些酒店吃些質素參疵、動輒逾$400的母親節自助餐,這裡可是超值得多,食物更有一定的水準,環境也不俗,最重要是媽媽很滿足。

從前的原澗,印象最深是年中收過不少千元的美酒佳餚宴推廣電郵,對於吃我很實際,鏡花水月般的夢幻離我很遠,對她不存好感,若非閱讀一篇關於新店的文章、一張美輪美奐的松花堂照片,我想這下午不會再次坐進新店吧檯。新店同樣位在利苑,附近雖然有不少正宗高級日本料理,如Sodeyama、壽司廣,但論裝潢,和式小屏風、和紙吊燈與及淺色格調,原澗個性簡潔卻鮮明,然而樓底矮,加上石地板,人多時徊音很大,問題在午市最為嚴重。翻看餐牌,我也不作他想,要來松花堂便當。先來是一客胡麻豆腐,自家製的豆腐伴以寒天及三文魚籽,黏潤豆腐滲著芝麻的香,寒天醋微酸不嗆。椎茸清湯,小片日本蘿蔔置於當中,配有日本椎茸及提味的香葉子,湯底很清。所傅設計六式精美松花堂便當盒子緊接而來,索價$260的禮盒不平宜,但看款式及賣相較早前未滿師的松花堂便當,是一天一地,款式分別是西京燒組合、兩色刺身、天婦羅盛合、帶子漬物、野菜大蝦及三文魚糯米飯糰。西京燒組合是最有驚喜一道菜,西京燒銀鱈魚滲著濃郁西京醬甜,燒後既香亦油潤,處理及燒功較Basement的法國銀鱈魚西京燒高明。煎蛋卷鬆而微微濕潤,火候處理是不錯的,惜味道是偏鹹,日式煎蛋卷我是比較喜

椎茸清湯,小片日本蘿蔔置於當中,配有日本椎茸及提味的香葉子,湯底很清。

所傅設計六式精美松花堂便當盒子緊接而來,索價$260的禮盒不平宜,但看款式及賣相較早前未滿師的松花堂便當,是一天一地,款式分別是西京燒組合、兩色刺身、天婦羅盛合、帶子漬物、野菜大蝦及三文魚糯米飯糰。

西京燒組合是最有驚喜一道菜,西京燒銀鱈魚滲著濃郁西京醬甜,燒後既香亦油潤,處理及燒功較Basement的法國銀鱈魚西京燒高明。煎蛋卷鬆而微微濕潤,火候處理是不錯的,惜味道是偏鹹,日式煎蛋卷我是比較喜歡甜一點的味道。

甜品及咖啡後簽卡離去,在門口打算影張環境相,餐廳總經理說會影響客人,禁止人影,如有客人投訴,會跟據信用卡登記電話找我。菜式質素甚佳,廚師對待料理出品是嚴謹又認真的,要吃像樣的午市定食,這裡是不錯選擇。

八月二十三日這間很早的時候想來食午餐,但遲遲不知地圵在哪裏,直到八月初的飯局發現,這是緣份嗎?星期日旳時間來得充足,入店內沒有多的客人,找個位置坐下,看看有什麼東西好食,最後看到OMAKASE這個名字令到自己有點興趣,嘗試下又如何呢.以小鉢,吸物,刺身,燒物,煮物,壽司,烏冬,甜品,小鉢以枝豆蓉混合豆腐內,有點像蠶豆豆腐.配上柚子汁,都算不俗的開胃前菜,吸物則是非常簡單的松茸湯物,飲落沒有多的問題,松茸的香味不重,刺身這個環節不知有什麼,其實用的很平凡不過的,吞拿魚,三文魚以及油甘魚,因為隔夜的關係,不多不少新鮮度明顯下降,大可不食的一道,燒物用的器具都幾美觀,用上金目錭來燒,再表面放上一排枝豆蓉,魚肉來得不鞋口,做得不錯,不過旁邊的配菜都美味,煮物同樣用上池魚汁煮,汁做得不錯,吊起了那魚片,旁邊的石芋煮得入味,不錯的煮物,接著壽司,有三件手握,二件小卷.握得有點鬆散,食落口中,來得有點濕,算是一般而已,再來的是烏冬,來貨的烏冬沒有可說之處,不過湯底就略為淡口,不及旬菜富和富久保,最後再來的飲品和甜品對於我來說午市來說算吃得過,想好一點給多數十元去灘萬,或者百多元去食道又可以,這間是二

Heard that this Japanese does worth a try, so we went there for a light dinner. We ordered a beef udon, the soup was fine, but the noodle had been overcooked and it had became too soft. We had also ordered a uni and crabmeat rice (cooked ), the rice again was cooked with too much water and had lost its texture. The robertayaki style foie gras was ok, can't say its good. Finally we had a mix tempura, the batter was too thick and too oily. I would say its a bit overpriced vs quality of food. I do

四月廿九‧雷雨 知道原澗搬了來這裡,探子回報,水準好了不少。難得又熬過一周,總要給自己一點獎勵,就來吃個午餐。 這裡裝修得很雅致,以自然為本,到處見草木。地方雖好,可惜人客卻甚嘈吵,加上有小孩在奔走喧嘩,幾剎風景的。 看餐牌,什麼刺身或特上壽司御膳都吸引不到我,要吃好的不會在香港吃。反而在另一邊見到有迷你懷石及松花堂便當,而後者是我最喜歡叫的一個午市選擇,因為在各式料理的處理中,更會見到師傅的功夫,就要了這個。 便當未至,先付及吸物先來。先付是胡麻豆腐,上面放了三文魚籽,墊底的是滑溜的寒天,胡麻豆腐吃起來煙韌,淡淡的滲出芝麻香,三者合一,是個出色的配搭,也是個討好的前菜;吸物是椎茸湯,清清的有鮮味,加上幾片柚子皮,清香怡人; 便當是一個六格的大木盒,內裡放著刺身、口取り、揚物、煮物、酢物及飯物,內容豐富齊備,賣相是相當好的,胃口大開。刺身是章紅加三文,後者我是不吃的, 一時忘記了要換掉,失敗。章紅也算新鮮,用的山葵是高級的支裝貨,不算最好也算是這樣;口取り其實也是刺身,是帶子及北寄貝刺身,上面調了些芒果汁。帶子及北寄貝皆鮮甜,加上甜美的芒果汁,好吃;揚物是炸青椒、炸蕃薯、炸雞卷,做得脆

這個松花堂便當,食物細細份的,種類及煮法眾多,水準不錯,吃得滿意。

餐後的甜品是綠茶紅豆蛋糕,其實吃時已十成飽,還好件頭不大,很容易應付。最後的一杯熱咖啡,香濃,可算是這餐日本料理的美好句號。

侍應服務不差,不過有點生手,態度是很好的。

埋單275,有水準的,可以一試。
