今日去了食午餐,點了12件壽司。每一件都是師傅精心炮製的,真很喜歡這裏的fusion壽司。魚生好新鮮。師傅會喺每一種魚上放不同的配料。我覺得在其他日本餐廳是吃不了的。前菜每天都不一樣的。我今天是魷魚配菜,然後有蒸蛋。接着就是12件壽司,而壽司最後的那個手卷真的是王牌。

最近去咗銅鑼灣一間叫「廚師發辦」嘅餐廳,專攻天婦麩羅的omakase,仲係米芝蓮推薦嘅餐廳之一;餐廳座位大約二十個,裝潢高尚有現代感,有兩個吧檯,分別負責壽司同天麩羅,部分座位都可以望到維港美景。

師傅會根據當日新鮮食材挑選,每款都有唔同嘅烹調方法,當日主打海鮮天婦羅。可以加上海藻鹽、咖哩鹽、青檸、天麩羅醬汁同蘿蔔蓉。天麩羅麵衣金黃酥脆,薄得黎帶微微鹹香,每一啖都感受到食材原本嘅味道。其中比較深刻既係海膽紫蘇葉卷,紫蘇葉包住海膽,入口香脆,先係紫蘇葉嘅香氣瞬間散開,再感受到海膽嘅香甜;鮑魚確實係招牌,爽口彈牙;赤蓮藕炸得金黃酥脆,咬下去清脆爽口,帶有自然嘅蔬菜甜味。
