To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. 青海位於中國青藏高原東北部,近日得知美心集團與青海省人民政府合作,首度將氂牛、藏羊、有機藜麥、枸杞等青海特色食材引入香港,以青海直送食材炮製出一系列期間限定的美食佳餚。其中一間可以品嘗到的餐廳正是位於尖沙咀星光行的翠園,由於推廣期只到三月三十一日,當然要把握機會盡快一試。祁連黃菇氂牛肉酥餅青海氂牛肉餡細膩多汁,結合祁連黃菇更添一份馥郁菌香,裹上酥皮煎得鬆脆而又不至過份油膩。有機藜麥氂牛肉羹湯羹以青海氂牛肉碎加上蛋白熬煮而成,充滿香濃牛肉鮮味之餘結合有機藜麥更添口感,再灑上檸檬葉絲帶出一絲清新。掛爐蜜味藏羊排將青海藏羊排掛爐燒製並裹上蜜汁,有如粵式叉燒一樣香甜而邊位焦香,肉質結實且羶味溫和。雞樅菌露筍炒氂牛柳青海氂牛柳加入雞樅菌及露筍同炒,調味清淡更能突顯肉香。避風塘青海三文魚(虹鱒)扒青海虹鱒煎得魚皮香脆而肉質保持鮮嫩,加上炸蒜粒、乾葱、辣椒等避風塘元素更加惹味。杞子魚湯水耕生菜青海杞子色澤鮮艷而粒粒飽滿,結合魚湯清甜滋潤,而生菜亦新鮮爽脆。高原枸杞桂圓糕桂圓糕加入雪棗及黃糖製成,晶瑩剔透而口感爽滑,味道清香之且甜度適中。 continue reading

前陣子和家人補祝母親節,讓我想起小時候和媽媽去中式酒樓嘗過的懷舊菜式,翠園的「嚐當年手工菜」 粵菜系列, 菜式因為花工夫、手工繁複,已經買少見少了,令父母重溫當年情懷滋味也讓我找回小時候消失的味道🤍🤎懷舊蓮子八寶鴨相傳源自乾隆御膳,將米鴨去骨後釀入蓮子、瑤柱等八寶餡料,炸至金黃再蒸煮,肉滑軟腍,有吉祥寓意🤎中式金錢煎牛柳港式懷舊菜,將牛柳拍成金錢狀煎香,配西式醬汁,中西合璧。🤎古法燕窩鷓鴣粥以鷓鴣肉剁成茸,與淮山、蛋白慢火煮至綿滑,口感仿似粥,佐以燕窩、火腿,清香滋補,盡顯昔日富貴講究。🤎生菜包炒乳鴿崧為順德名菜,將乳鴿肉剁細炒香,包入生菜,一口咬下脂香滿溢,盡顯精細刀工。 continue reading

成日聽家中長輩說,香港手工粵菜買少見少,當我得知‘翠園’最近推出來「嚐當年手工菜」粵菜系列,二話不說,即刻訂位帶老爺去試下,喚起佢昔日嘅回憶!都等我地班後生見識下手工粵菜的精髓。我們order了「嚐當年手工菜」當中的4樣菜式。當中最花功夫的「懷舊蓮子八寶鴨」相傳源自乾隆御膳。首先要先將米鴨去骨,再醸入蓮子、瑤柱、八寶餡料,然後油炸再蒸!繁複的工序依家應該冇咩酒樓會花心機時間願意做呢樣菜式。第二道「中式金錢煎牛柳」是港式懷舊菜,將牛柳拍成金錢狀煎香,配西式醬汁,中西合璧,簡直係Fusion菜始祖!第三道「古法燕窩鷓鴣粥」一樣不惹少。我食完一啖話:啲米煮得咁綿嘅。老爺即刻話,唔係米煮的,係鷓鴣肉剁成茸,與淮山、蛋白慢火煮至綿滑!再拌入燕窩,十分好味!最後一道 「生菜包炒乳鴿崧」是順德名菜,將乳鴿肉剁細炒香,食時再包入生菜,一口咬下脂香滿溢,盡顯精細刀工。老爺對這餐懷舊手工菜非常滿意,食的簡直是回憶呀!老公話佢細個都未食過,估唔到係我呢個馬來西亞人帶佢黎食😆 continue reading
