朋友約食晏揀咗呢間日本餐廳疫情前已經好想試鐵板燒不過六點後冇堂食所以今日食午餐壽司13貫omagase朋友可能太遲訂位所以坐唔到壽司吧omagase擺上餐枱食其實係會扣分嘅我始終鍾意坐吧枱食一件廚師介紹一件風味特別好嘅13貫壽司幾乎全部都係魚冇用特別花巧做法純粹全部鮮味飛機貨廚師刀工了得真係非常欣賞油甘魚 黑鯛 深鱒我覺得非常出色 中拖羅無筋 入口即溶沙甸唔腥 全部食材都係靚飛機貨甜品係日本運到青肉蜜瓜 甜到漏朋友叫咗香檳俾我成支上 我其實真係好少食晏飲酒㗎已經抗疫疲勞所以週末出嚟食餐晏開心幸福啊

時令生蠔用上兵庫縣失津真蠔,再放上魚子醬和紫蘇花,視覺效果非常吸睛。師傅再三溫馨提示,可以用筷子輕輕摘下紫蘇花朵,與魚子醬生蠔一齊品嚐。紫蘇花朵除了增加了口感外,紫蘇花獨特的味道緩和了海水鹹味,並提升了魚子醬的鹹香和真蠔的鮮甜。

龍蝦
法國藍龍蝦的外殼是深藍色的,差不多接近黑色。而尾部是是明顯的寶藍色的,看似非常新鮮。師傅再次只是他的廚藝,期間把龍蝦鉗內的蝦肉抽出,再把龍蝦頭中的蝦膏倒出。經過一輪烹調以後,先把龍蝦身肉放在碟上,再放上龍蝦鉗肉,再把烹調好的龍蝦膏慢慢補上。過程非常吸睛,令人垂涎欲滴。
用餐前,師傅再三溫馨提示,龍蝦肉可以配合旁邊的洋蔥醬一齊享用。龍蝦膏味濃鮮甜,龍蝦鉗肉爽滑微彈,味道甜美。龍蝦身肉煙韌爽彈結實,龍蝦味豐富。

鰹魚本菇湯
飽嚐了一輪海鮮大餐後,套餐中安排了鰹魚本菇湯作中場休息,並且清洗一下味蕾。菇湯呈現淺灰色的,當中環包括茗荷、菊花、紫蘇葉、大根和鯛魚肉。鰹魚本菇湯,清澈剔透,甘甜鮮香。鯛魚肉鮮嫩潤滑,魚味豐滿。大根即是蘿蔔,大根吸收了鰹魚本菇湯的甘甜,反而更鮮甜清膩。

師傅溫馨地詢問我們牛肉可以多少成熟,我們要求了三成熟。所以,和牛片呈現鮮紅半熟狀態,入口即溶,肉味香濃。包裹著大量的青蔥,蔥味豐富,並緩和了和牛的油脂感。墊底焊烤的麵包是為了吸收和牛的油份。旁邊擺放了岩鹽、無心蒜和新鮮山葵,可以按自己的喜好自由配搭調味。

師傅先把和牛扒煎香外層,然後溫馨提示我們需要準備手機拍攝 然後把適量的清酒倒入小小的柄煲中,再把清酒點著了火,由左至右曬上鐵板上,冒起一團小火焰,效果相當澎湃和吸睛。外層煎香的和牛扒鎖緊了內裏的肉汁,口感煙韌綿密,彷彿入口即溶。和牛扒油脂感豐富,肉味香濃。同樣地,旁邊擺放了岩鹽、無心蒜和新鮮山葵,可以按自己的喜好自由配搭調味。

甘味
鐵板法蘭西多士配雪糕
師傅先打大量牛乳倒入小煲中,再放入麵包。好讓麵包吸收大量牛乳。一段時間後,師父把麵包放到 鐵板上,燒製至金黃。因為沒有其他選擇,小妹我只好檸檬雪葩。不過, 多士與雪葩兩者的味好像不太配合。所以吃了幾口後,便完成旁邊的龍珠果士多啤梨和藍莓。

季節鮮果
吃到這裏已經太飽了, 所以請求師傅不用端上生果了。

整體而言,餐廳環境裝潢神秘型格,食材用料新鮮高質,食物出品師傅用心製作。之前放緩之後,唔會回來再度到光顧。

在没有晚饭的季节只能寄情于午饭。很多新开的餐厅都没有机会尝试已经变成旧餐厅了。就开在我司边上一进门是一个醒目的原型吧台,背后有一张隐蔽的门,穿过门后别有洞天。有一种”speakeasy” 的味道了。内里餐厅分为寿司吧台和铁板烧。秉承的多元化的理念,odds并不是传统意义上的寿司,而是在传统的基础上碰撞出和谐的惊喜。和师傅聊聊,晚餐的菜单会在午市类似的食材上加以升级。比如鲍鱼由南非鲍鱼升级为日本青森鲍之类的。但是午市很划算,是个被餐厅的装修迷惑的寿司。

多士用上較多牛油煎香、口感香脆鬆軟。
感覺好似食緊布甸咁。

鐵板師傅告知、麵包是訂製的、以配合餐廳應為最合適做多士的厚度。
落板煎之前、先沾滿由牛奶+cream做成的奶漿。所以口感如牛奶布甸感覺。配上煎得香甜的表面。一道十分出色的甜品

第一次到訪這間餐廳、感覺好好。
服務及食物水平都平均。值得再去。

這件金目鯛魚皮有火炙過,所以帶有焦香味,不過魚肉仍然呈全生的狀態。
可惜這件魚肉味道偏清淡,配上酸汁蘿蔔後味道完全被酸汁蘿蔔蓋過,有點喧賓奪主。

太刀魚 柚子胡椒
太刀魚,即是帶魚,在香港壽司店中屬於比較少見的魚料,這件太刀魚和之前金目鯛採用同樣的處理手法,火炙過魚皮之後改放上柚子胡椒,和之前的魚一樣,柚子胡椒味道太濃郁,完全蓋過魚的味道,喧賓奪主。

魴鮄 蛋鬆
魴鮄魚比較特別,配上蛋鬆,帶點日式煎蛋捲的甜味。不過由於魴鮄的味道比較清淡,加上蛋鬆的味道也清淡,這件魚排到中間位置,味道不及前一道太刀魚濃郁,有點吃不出味。

現在蒸蛋都流行在蛋的表面埋芡以增添鮮味,這裏更放上牛肝菌粒來增添菇菌類的香味。
這份蒸蛋充滿菇類的香味,牛肝菌的份量很多,其實聞上去非常不錯,奈何吃的時候牛肝菌很難咀嚼,和蒸蛋嫰滑的口感並不符合,我覺得可以切得再細碎一點,甚至乎打爛會更好。

鮫鰈 烏魚子
仍然是白身魚的鮫鰈,當然這一款火炙過的魚味會比較濃郁,但仍然是清淡的白身魚配上鮮味濃郁的烏魚子。
這件壽司主要是靠烏魚子的鮮味,吃了這兩件有點摸不着頭腦,因為在吃了油脂豐富的太刀魚壽司後,再吃這兩件白身魚壽司就有點淡而無味的感覺,排位上有點問題。

終於來了一貫濃味的壽司,赤身也特別地配上柚子胡椒。
赤身質素不錯,可惜的是有子胡椒的份量太多,因為有子胡椒味道鹹味魚辣味都濃郁,所以把赤身的鮮味都蓋過了,配搭不理想。

鰤魚 昆布鹽
鰤魚是我喜歡的魚種,一般都鮮味濃郁,但鮮度非常重要,若果是不夠新鮮的話就會很重魚腥味。
這一貫壽司用昆布鹽來代替醬油增添鹹味,味道都不錯,不過重要的鰤魚比較瘦,沒有鰤魚一般的肥美油脂,可惜了。

開始重口味了,銀鱈魚經過煙燻,再加上炸蒜,味道非常濃郁。
銀鱈魚一般都比較肥美,可惜這件魚還是不夠肥美,這裏的魚好像都有這個問題,普遍來說不夠肥美油脂豐富,不知是否來貨問題。
由於不夠肥美,煙燻和炸蒜有點蓋過魚肉的鮮味,不能做到很好的平衡。

終於來了一貫濃味的壽司,大拖羅也特別地配上新鮮芥末籽,日西合璧。
中拖羅質素不錯,新鮮芥茉籽比想像中脆,也有西式芥末的香味,配搭新鮮。不過若果以合襯程度計,那還是傳統的芥末醬油和大拖羅比較夾。

總括而言這頓飯不過不失,雖然用上很多不同品種的魚類,但普遍偏瘦,未能突出魚味,而且採用的新款調味也不是每一款都和魚料配合,有時寧願返璞歸真,純粹用山葵及醬油就已經不錯了。

The wagyu was tender without being too oily. Despite the bread was mainly for absorbing the excess oil, I still went ahead and tried it and I have to say it was really good. It was sweet on its own and after absorbing the excess fat from the wagyu, it was a pleasure treat if you have room for it.

但給在下的感覺是舒適的
只是因為太多客人
讓場面有點嘈雜

坐下後仔細看一下他們的所有Menu
酒水好多 好吸引
但在下這幾天要戒酒
所以
看食物
選了一個串燒餐 有小份的6串的和12串的
以在下的習慣
會點細份再散點加食物
不過這個月要省錢
所以直接點份大的 讓自己吃夠

有了新歡,忘了舊愛。講緊嚐過日式鐵板燒。從元老級松菱(已沒有驚喜)、和三眛(水準OK但很多人說每況愈下)、花盃(質素長期穩定)至最近舞鶴鐵板燒Omakase(味道不錯但又未至於令你回頭,可能師傅零交流,很有個性),以上無一入選值得放入我的舌尖名單上,直至遇上ODDS。開業不久的ODDS坐落於渣打總行,一入門口的酒吧已很吸睛,轉過另一道門,昏暗燈光沒有令人昏昏欲睡感覺,反而裝潢新派,極具時尚奢華但不浮誇,視覺上顯然對我此餐美食來過盡情享受的序幕。前菜的冷豆腐混入濃味蟹膏中和配上松葉蟹肉,不多不少,相當精準,彷似在30多度悶熱天氣出現綠洲,透心涼。以為第一道菜不錯,誰知一浪接一浪,第二道菜之黑松露片配上蝦啫喱加海膽,才教人尖叫不絕。清爽蝦啫喱帶出蝦的鮮甜、海膽湧出的鮮美,道出各味道之優勢、層次分明,沒有含糊不清的感覺。大廚展示銀鱈魚及鮑魚配搭一朵精緻玫瑰花,演繹那一絲不苟的精神,並不是草草放上碟上,未煮熟已不禁令人相當期待。大廚以本地新鮮西洋菜打成汁配上煎封的銀鱈魚,兩者合成相當之有創意。有別於一般鐵板燒那種純油煎香,沒有太大油膩感,銀鱈魚入口帶有爽脆嫩滑是必然,在細味菜汁清香,嚐第三道菜

大廚展示銀鱈魚及鮑魚配搭一朵精緻玫瑰花,演繹那一絲不苟的精神,並不是草草放上碟上,未煮熟已不禁令人相當期待。大廚以本地新鮮西洋菜打成汁配上煎封的銀鱈魚,兩者合成相當之有創意。有別於一般鐵板燒那種純油煎香,沒有太大油膩感,銀鱈魚入口帶有爽脆嫩滑是必然,在細味菜汁清香,嚐第三道菜已認定此餐廳成為我的新歡。大廚沒有對鮑魚使出特別功架,只見放置鮑魚在一旁,置之不理,原來內有乾坤,鮮鮑放在海藻上乾焗,吸盡海藻芬香,上碟時分別配上鮑魚肝汁及另一種綠色醬汁(忘記問是什麼),成為自成一派的料理,濃淡味交滙背後帶出烹調精準,實在出色。

黑金牛是A4美國和牛,牛味反而重過日本飛驒A5和牛。飛驒A5油脂比例較重,大廚坦言較為欣賞黑金牛,三片份量恰到好處。

按劇本下去,必然是炒飯。我是那種不吃飯便會暈的人,總覺填滿腹飽才叫人圓滿,所以瘦身距離一步之遙就是只差那一點點,嘻嘻!在大廚炒飯炒得興起之際,我留意到大廚先煎蛋白,完成炒飯後放上那片蛋白,最後把晶凝通透四國堯蛋的蛋黃直接放上,真是非一般烹調,完全撇開傳統那種混和蛋汁一起炒的方式,我目測那個過程,印象深刻又覺新奇。以前提過日本蛋可以生吃,此堯蛋還拿了什麼日本認證,更放心食用。大廚叫我先嚐一口沒有蛋汁純炒飯,及後混和攪拌之蛋汁,我只能用驚艷兩個字形容,非常滿足。

野菜、吸物及果物未算突出但水準之上,明白不是每道菜都能充滿驚喜。

甜點-最中餅,貌似Macaron,看到便聯想到甜到爆燈,在不情不願之下索性一口吃掉,誰知一咬下去竟然是脆的而不是Macaron那種堅硬內陷黏稠札實,味蕾上有種淡香清甜,及後有種肝香,在毫無預示下從將結束此午餐的平靜心情突然推上最高峰,我連忙問大廚裏面是什麼?他解釋是無花果醬加鵝肝醬,原來如此!

每一次也因為忘我地嚐一道菜而忘記拍照,大廚見我失落的樣子,竟然特製多一次送給我影相讓我再次品嚐,可能我剛才那個「拍案叫絕」表情令一個大廚相當有滿足感吧!

用餐完畢每位客人填上一份問卷,對員工某程度上實屬壓力,但對餐廳來說目的是做得更好。值得一提是餐廳精心選擇的高端餐具,金色絕不是土豪式庸俗、典雅玻璃器皿一摸上手便知不是次貨,每道菜的餐具能令我視覺上及觸感上如此深刻還是第一次。

年度令我忘懷的一餐,帶出朋友背後為我精心準備這餐生日飯的心思,那種感動及享受好得不能再好,實在難以用筆墨形容。
