Participants will be awarded with a Food Wise Eateries (FWE) accreditation status if they comply with the assessment criteria and will be granted with the FWE Logo and Stickers for displaying in the premises and their promotion for public identification. Applications are accepted all year round and are FREE of charge.

勞動節給自己一個好早餐,在西貢逛了一圈,揀了大頭小廚,點了茶記經典早餐,一落單,就秒速上餐,多人幫襯食市好處係食物永永遠新鮮。雖然秒速上餐,但食物質素完全唔差。沙嗲牛肉麵,麵底適中,湯底有味,絕不求其。杯鴛鴦要少奶,味道又ok喎,唔會因為少奶而鞋口。抵佢咁多人幫襯。 continue reading

大頭小廚🥘 強哥主理👍🏻👍🏻👍🏻 20多年大排檔經驗🉐 #白天茶餐廳 #晚市專營私房菜 🤩沒想到在茶餐廳,能吃得到「大排檔」水準!夠鑊氣 !🔥🔥🔥🐷點了一道「豉汁排骨炒麵」,沒想到上桌時,炒麵波波脆,完全沒有一般茶餐廳的‘軟麵危機’,當下猜測廚房裡面必有一位厲害的大廚在內。不囉嗦馬上‘即場考試’,再加點「鹹魚雞粒炒飯」,凡是愈簡單的菜式愈考功架。🥣是日例湯是南北杏雪梨湯🍐,甘清爽口。🐟炒飯上桌,飯粒顆顆分明炒的極香又爽口乾鬆,鹹魚的鹹香分佈均勻(外面很多店家會炒到一塊飯沒味道一塊飯又很鹹,或是裹了一層油)。擺明了這大廚藏身在這間小店裡,應該有點名堂。🍞下午13點吃到14點半下午茶時段開始,點了「煉乳西多士特別版」,很棒的甜點。+++👨🏻‍🍳大廚休息一下聊天時,才知道「強哥」果然有來頭。強哥從畢業之後從酒店、酒家樓、小菜館開始學廚,出師之後在知名的港島南區石排灣祥興大排檔做了20幾年!之前一年祥興因為火災兩次,又是比較古早的大排檔沒冷氣,剛好有前輩要頂出西貢的餐廳,強哥就挾帶他的最強項「鑊氣小炒」、「海鮮料理」、「私人炮製靚湯」⋯進駐西貢萬年街。🕖白天以茶餐廳的形式,但對街坊來說,茶餐廳價格,可以吃到大排檔主廚水準,簡直是物超所值!👋🏻當然不能埋沒了強哥的手藝,把他關在茶餐廳菜式簡直就是「浪費」!所以,應太多慕名食客要求,店又位於西貢碼頭旁,只要買好海鮮(可自買收代客烹調費用,或是直接請強哥代買海鮮亦可),晚上就轉身一變為「包場營業」的「私房菜!」😻中午吃的太驚艷了!決定晚上也請強哥出手,請他幫買挑好當季的海鮮。菜式由他拍板,我們就是先去西貢海濱逛一逛,傍晚回來等吃大餐!🥳 #強哥私房菜油鹽水煮大蜆烏冬椒鹽瀬尿蝦豉椒炒蟶子蒜蓉粉絲蒸元貝椒鹽豬扒🌟 油鹽水煮大蜆烏冬烏冬(烏龍麵)吸了大蜆的鮮湯汁,油鹽是最簡單的調味,但能帶出海鮮的新鮮。🌟 豉椒炒蟶子一隻30公分的蟶子,爽快啊!🌟 蒜蓉粉絲蒸元貝新鮮大元貝,一樣淡淡的勾一點味道即可。又有蒜香鮮湯可以允粉絲,但是蒜香只是點綴,因為是新鮮元貝,而不是像一般餐廳卯起來加大蒜只是為了來掩蓋冷凍冰櫃味的。🌟 椒鹽瀬尿蝦💯必須滿分!對於大隻的瀬尿蝦料理,強哥確實讓我拜服!大隻瀬尿蝦是不好料理的食材,一不小心炸到過了火位,裡面的蝦肉會瞬間「麋」掉。但強哥火候控制得當,外殼酥脆椒鹽香,殼一捏就脆碎,我可以輕輕鬆鬆的撥出一整條瀨尿蝦出來。不需要用剪刀✂️剪蝦,實在是強啊👍🏻🌟 椒鹽豬扒🏆這道菜是強哥在之前大排檔任職時,每桌必點一道的招牌菜!一樣外表爽脆,咬開時肉汁香甜,絕對不乾不柴,難怪成了招牌菜。+++❤️「大頭小廚-強哥食坊」絕對是來西貢,不管是早午餐下午茶,也絕對是吃海鮮私房菜的首選!🦞海鮮私房菜$5000元/共10位⋯ 包場起跳 continue reading
