Eight Treasures Tea 養生八寶茶 ($40)

Eight different traditional Chinese delicacies to make this pot of tea using a very heavy metal tea pot. The ingredients like some pear, goji berries, chrysanthemum, and much more, were held on top and the hot water rushes through will be filled with all kind of different aroma. I liked that it has a hint of sweetness which is different from any tea that we normally sea in Chinese tea houses.

If you are not a tea person, a ton of other options are opened for you, including beer, cocktails, wine, or soft drinks. Since we have already had a beer earlier today, we went for their very attractive Cantonese inspired cocktails. 

Pinotini ($90)

A sexy martini in Pinot Duck style made from vodka, grand marnier, champagne and pineapple juice combo creates a nice blushing color with tropical fruit as a garnish. It was the strongest cocktail among all three and I was just so down to it.

The crepe was very thin and firm in texture that it did a really great job holding everything together. The duck piece was sliced really thick so I would recommend you to enjoy it in one bite otherwise it's gonna bit a bit tougher for you to tear the meat apart. 

The fatty duck really reminded me of my short trip to 黃井 in Beijing, I remember I took a train from Shen Yang, sitting in 硬坐, and went to Beijing for a day trip. We had literally the whole super fatty duck in Beijing and I was absolutely memorable! If I have to pick one small flaw out of this dish, I would wish to have more leeks if possible!

The sharing platter came along with two small plates of duck liver pate marinated in Hua Dian, and some Chinese kale crisps.  The pate has a layer of jelly-like Chinese wine on top, then some crushed peanuts and scallion. The very smooth pate was not as heavy as goose liver, and the taste was also not as strong, which I liked because I don't wanna intake too much sodium anyway.

As soup lover, soup is just a must in my home tradition. This bowl of hot and sour soup was cooked with shredded roast duck, wood fungus, bamboo shoots, dried bean curd strips, shittake mushroom with smoked chipotles. The spiciness, sourness was complementing each other nicely. The ingredients were also very generous in serving size. It was also not too thick or thin in consistency. My dad loved it so much that he wanted to order another bowl!

We were told that 2 duck legs were used with packed ingredients inside. The flavour was just extraordinary! Usually Eight Treasure duck is very soft and moist when we have that in yum cha places, but this one is very crispy yet tender inside. We also liked that they didn't use a lot of glutinous rice which would be too filling for us.

All in all, this signature dish didn't disappoint us, I partciularly liked the well done soft chestnut. I am definitely ordering this again next time!

We were told that it was the best dessert on the menu so we just had to try it! The western style creme brulee was prepared with Chinese dried citrus zest 果皮 infused into the milk, while dried 陳皮 were sprinkeld on top. The tangy taste from the egg mixture complimently interestedly with the saltiness on top. I thought it was sea salt but then it was actually 陳皮. I think it was a really innovative dessert to enjoy. The Chinese twist in this dessert made it more than suitable for old people to enjoy with laughters.

Poached Tianjin pear ($68) 杞子酒糟炖天津梨

Instead of poaching the pear in red wine, it was poached in rice wine with goji berries. The firmer texture pear absorbed all the floral flavour from the wine and sweet superfood goji berries. It was probably one of the healthiest dessert to enjoy!

It was a lovely evening with all the yummy food. The "Eight Treasure" duck definitely topped all main dishes, while the desserts are also one of the highlights since they are just as scrumptious and they are just not to be missed!

據網上資料所得, 酒糟 是米、麥、高粱等釀酒後剩餘的殘渣, 即是酒渣, 在中國菜一種調味料。其能消食、止痛、治傷折瘀滯疼痛等, 除內服, 外用又有美白功效, 而杞子 菊花 皆有明目之效, 看來這客甜品益處多多。馬上呷一口, 入口微暖, 清甜中帶點酒酸, 酒香溫和, 啖啖滋潤順喉。

老實說, 平時甚少吃鴨, 就算吃, 多數只是燒鴨飯或傳統的片皮鴨, 今晚能一嚐中式duck, 西式duck,
真是中式得, 西式得, 不知餐店日後會否再創出一些異國的鴨菜式, 如日式的鴨壽司、泰式的鴨絲冬蔭功、韓式的炸鴨、台式的鴨肉燥滷鴨蛋飯等等, 這一切都是自己忽發奇想, 還是期待餐店吧!

焦糖燉蛋吃得很多, 配上陳皮這個組合很新鮮, 而且燉蛋是便用鴨蛋。賣相吸引, 表面灑上紫色食用花以顏色帶來鮮明對比。這時想起了一段歌詞 “ 送妳一辨的雪花 猶如心中的說話 能再 偶遇嗎?” 浪漫中又使人興奮的感覺。

鵝肝醬吃得多,鴨肝醬真的沒試過。跟吃鵝肝醬一樣,送上麵包供食客搽鴨肝醬在上面,還有一小碟炸芥藍葉,又香又脆。試了一口鴨肝後發現有點酸味,究竟是鴨肝醬本來就是酸的?還是因為用了陳年花鵰調味所致呢?這酸味令我食欲大增,雖然麵包有相當的厚度,但沒有飽滯感,相當鬆化。

這道菜老闆的誠意推介。它的外形特別搶眼,像是一枝糖果一樣。芋頭丸的表皮炸得很香脆可口,即使後來放涼了也能維持脆卜卜。內裡的芋頭泥很粉,調味料是加了辣粉的他他醬,酸酸甜甜的他他醬令芋頭丸沒那麼膩,令人胃口大開。

我最喜歡吃煎蠔餅,可惜香港很多餐廳的蠔餅都變成了炸的,而且蠔又少又腥。這裡的蠔餅就完全令我滿意,採用了鴨蛋,所以比普通雞蛋更香濃,每一口也吃到蠔仔,證明是真材實料。而且連一向怕海鮮腥味的男朋友也贊不絕口,因為蠔仔完全不腥。上面的醬汁是台式蚵仔煎的甜醬,令蠔仔烙變得甜甜的。

男朋友最愛吃五花肉、東坡肉之類,因為夠軟滑。這個五花肉用高溫蒸過以排油,然後慢煮12小時,所以五花肉軟稔得入口即溶。調味料甜甜咸咸的,在其中還加入了微辣的紫蘇葉,但這一絲辣味瞬間即逝,不會留在舌頭上。墊底的椰菜絲吸收了調味汁,變得很入味。

我們最為驚喜的一道菜!焦糖不會太薄,真的可以像天使愛美麗那樣用匙羹敲碎。燉蛋是用了一半雞蛋和一半鴨蛋混和,所以蛋味比一般雞蛋更加香濃。蛋當中還混了一些陳皮絲,所以燉蛋在甜之餘還帶有少少咸味。如果和上面的蜜柑一起吃,又甜又多汁的蜜柑會令陳皮的香味會發揮得更淋漓盡致。

一壺茶已足夠二人享用,茶葉是香片,加入了桂圓肉、菊花乾、枸杞、乾果和芝麻等等。茶面上浮著一層薄薄的油,原來是芝麻被茶的高溫爆開後的芝麻油。喝起來香甜滋潤,並具有解油膩、助消化之效。我們今餐吃了很多也不覺得滯膩,全靠這壺茶呢!

另外值得一讚的是這裡的服務,侍應很有禮貌,上菜時會提醒我們小心鐵板燙手,又會時不時主動過來替我們的茶壺添熱水,老闆還會親自過來問我們對食物滿意與否。聽說他們正在物色分店的地點,可能在中環一帶,比赤柱更加方便,到時我們應該會成為常客呢!

果然慢煮過的肉就是入口即化, 而且不會軟爛、鬆散。
吃到豬皮位置的柔韌, 充滿膠質, 這是慢煮才可以做到的效果。
不過味道不及口感出色, 紅燒汁偏向杰身但淡味。

飯裡滿滿是蠔仔肉, 一入口未趕得及咀嚼, 已經被蠔仔鮮味攻陷。
再者就是吃到野菌獨特的菇味, 有點像牛肝菌的味道。
雖然黑松露味沒太有存在感, 而且黑椒味亦太過強烈,
但整體味道加上意大利飯的煙韌口感的確十分吸引。

店員說這個燉蛋是這裡的甜品榜首, 最受食客歡迎。
其實焦糖燉蛋一被放下時, 首先聞到的是話梅香味, 視覺與嗅角的不協調, 就是fusion食物的吸引之處。

輕輕一戳就能破開焦糖薄脆, 內裡燉蛋做到厚膩甜香, 餘韻徘徊。
而陳皮味亦在燉蛋中徐徐散開, 酸酸的味道特別刺激, 但又不搶過燉蛋的溫雅。
想不到原來陳皮與燉蛋竟然可以如此互相輝映。

桂花茶燻鴨配新彊哈蜜瓜沙律 $98 和惹味五香鹽酥鴨$88…沒想到茶燻鴨係咁好味,濃之餘滲出茶香而和甜度適中的哈蜜瓜一齊食堅推介。鹽酥鴨又係我地覺得好味食品,炸得夠脆之餘又香口,但入面鴨肉保持軟身,送啤酒一流。

特別要說的是煎鴨肝,廚師在鴨肝上加上碎粟米乾才煎,再加上淹過的菠蘿,口感特別。

甜品方面,三個甜品都各有特別,焦糖燉鴨蛋Creme brulee滑滑滑,食真點原來仲有陳皮,怪不知咁香和味道特別。

花雕話梅燴橙Braised orange,有4片用花雕同話梅浸左既橙,橙肉重細心地去了皮,吸收晒花雕同花梅既精華,花雕味不會太濃,話梅的酸配上橙肉也剛剛好,很開胃,個人覺得當作開胃菜也不錯;

杞子酒糟燉天津梨 Poached Tianjin pear 梨肉浸在杞子菊花冰糖裡,很清潤。整個用餐過程很愉快,值得推薦
