Sushi Hera 据说预约已经到了下一年。对于禁锢在本岛的香港人来说没有日本料理简直是不能够。导致香港的高级日料和好吃的餐厅十分火热。只有8位晚市一转的sushi Hare 来说,难定是意料之中的事。小小的转角台8位客人,昨晚只有两组,每组四人。师傅Motoharu 会英文也在香港待了8年,却不善言辞。就连六本木的小野隆都还会用流利的英文向客人介绍。失去了交流就失去了一些omakese 应有的乐趣。最钟爱的是吞拿鱼三件,海胆君还有金木鲷。虽然难定,但是这一餐的质素还是不错的,就是寿司米饭偏酸,所有食材不加糖也是新奇。据说午饭$980,算得上是良心价格了。下一次吃可能真的要到2022了。

I was fortunate to dine at the restaurant two days in a row (dinner + lunch). My favourite part of the restaurant is their rice. It is perfect balance in terms of texture and taste. Of course the chef’s knife skill is spot on.

又再回來這家只開業短短半年就已經一位難求,亦是今年最好的新鮨店,無論食物質素同師傅水準在這個價錢相信係無懈可擊,所以今年全年晚飯已經Fully Booked,我自己都只剩返11月一個晚飯,好彩仲有三個lunch🤭,主廚もとはるさん曾在「鮨佐瀨」工作多年 ,師傅比較文靜同埋怕羞,經過三四次食飯後終於熟絡啲會主動一齊飲酒,這裡壽司本身是走傳統不花巧路線,飯及醬油都不算重味,魚嘅鮮味同醋飯非常平衡,大部分壽司只加少許醬料,讓客人感受最新鮮食材,聽說其中一位老闆係本港最強同最新鮮日本魚供應商🙊所以依度嘅海鮮品種和新鮮度應該係香港數一數二。おまかせ大約20道菜,當中吞拿魚非常出色,用同一條魚不同部位製成三貫壽司,高水準的熟成度,不同部位的吞拿魚鮮味在口中擴散。川勝海胆壽司和鮑魚配鮑魚肝醬再混和醋飯亦超級美味。另外值得一提呢度嘅燒魚全部用備長炭炭燒,所以魚身有淡淡的炭燒香味。其他壽司和熟食都非常出色,太精彩可惜不能一一盡錄。非常期待11月再次光臨,冬天嘅海鮮應該更精彩和美味….しらこ🤤
