大班樓係一間非常難預訂嘅餐廳,但幸運地我同朋友成功訂到,享受咗兩個鐘嘅中菜精緻餐飲。菜單上嘅菜式包括凍滷水花椒小吊桶釀土魷、炭火厚切叉燒、山楂梅子脆皮猪尾、雞油花雕蒸花蟹配陳村粉、樟木煙燻黑腳鵝、梅乾菜陳皮扣肉配夾包、豬皮櫻花蝦燉時菜同煙燻馬友銀魚窩飯。凍滷水花椒小吊桶釀土魷係一道菜式,呢款菜式有獨特嘅名稱同口感。佢係使用滷水同花椒製作,再將材料填充喺土魷中,呢道菜有清新嘅口感同微辣嘅風味,值得一試。山楂梅子脆皮猪尾係另一道菜式,呢道菜以猪尾為主要食材,搭配山楂同梅子調味,再以脆皮方式烹調。這款菜式有猪尾嘅香濃味道,配合山楂同梅子嘅酸甜風味,加上脆皮嘅口感。至於炭火厚切叉燒。叉燒肥瘦適中,燒烤後帶有微微炭燒焦脆嘅口感,非常滿足。唯一缺點係每人只有一件,需要提前預訂,唔預訂可能冇機會試到。其次,招牌雞油花雕蒸花蟹配陳村粉。這道菜有特色,嘅雞油花雕蒸雞表現出色,無被酒味蓋過鮮味,依個菜式仍然係值得每次到訪必點嘅。總括而言,大班樓嘅菜式帶有獨特風味同口感,有部分菜式可以進行改善,但整體餐飲體驗係非常值得一試嘅。希望我嘅評論可以幫助你更加了解呢間餐廳嘅菜式同質素。 continue reading

搬去新地方, 樓底更高, 裝修更講究, 在點菜模式上有些少變化, 就是在用餐前已經決定好套餐上要有的東西, 這一切也是為了令餐廳氛圍更有格調和營運更有預算, 但大班樓依然是大班樓, 風格和味道依然不變, 依然不是以食材的奢侈來打動食客的心, 食材的配合和味道的調和依然出色, 吃過幾次沒有太多的驚豔, 但水準依然是手執香港粵菜界的牛耳. 我很同意餐廳的經營哲學, 就是沒有高湯, 因為任何食材加上高湯就變得單調而統一.雞油花雕蒸蟹固然是這裏的Signature, 但最重要的是陳村粉的精華吸收, 第一次吃的時候, 還以為蟹件是主角, 但吃過一口陳村粉, 才知道主角另有其人, 雞油的香, 花雕的甘, 花蟹的鮮連成一線, 就是這道菜的重點. 第一道刀燒的炭香也是剛剛好, 沒有任何的苦澀, 肉質層次相當分明. 燻乳鴿用上玫瑰和龍井, 陳醋排骨加上話梅, 原有的菜式加多一點, 結果就不只是一點, 聯乘起來就是複式的味道層次, 這不是隨便做就可以, 而是不斷實現和調教的成果, 你看到的一點點, 其實背後所花的是無數的失敗, 所得出來的成功. 單是感受這一點, 就值得花心思和精力去預訂. continue reading

呢間出曬名中菜天花板而且好難book嘅米之蓮一星餐廳,今次就同朋友慶祝生日。我地早咗3個用book咁我地平衡每人消費係$1400。 環境方面就一定靚,仍然唔係有咩海景。但係個環境都夠舒適。而且服務都唔差,每一樣食物都會同我哋分好晒,再起菜。食物方面,水準係高嘅,所有肉質都處理得好好,保留到嘅肉汁。就好似前菜嘅乳鴿,佢嘅煙熏味好香,而且食落去係好多汁,一啲都唔乾。排骨都一樣鎖住咗肉汁喺入面。唔似出邊食嘅整到好乾。另外招牌嘅花雕蟹,都係好食嘅,佢嘅汁嘅花雕味超級濃。唯一唔好食嘅就係一碟魚嘴。佢依個部位係有好多啫喱狀嘅肉,而且肉質都係超級軟腍。但係入邊係有好多細骨或者碎骨。搞到食落去腍得來但係突然間又有骨會拮拮你咁。一味係成個套餐最差嘅一碟我認為。 continue reading
