朋友講咗好耐話想試下呢間新酒店嘅餐廳,話三百幾蚊有5個courses,終於定下日子過來試下!朋友幾日前訂咗位,仲要求安排𥦬口嘅位置!因為係19樓嘅關係,係度睇夜景都應該唔錯。因為係酒店嘅關係,所以一入門口就有人對你點頭微笑!而且好謹慎,可能我哋一睇就知唔係住客,所以有問我哋去幾多樓!我哋表示去19數嘅UpTop就幫我哋㩒。上到餐廳,亦有侍應開門同講歡迎光臨!不過一入去才發覺原來餐廳好細,只有六張四人枱,座位唔多過30個。餐廳亦有安排𥦬口位俾我哋,所以我哋2人就坐了一張4人枱!而呢嘅景色係對住科學館,不過夜景望出去都幾靚!先叫咗本ELDER FLOWER同PEACH味嘅飲品,清清地幾好!不過唔記得叫咩名,只記得待應話係佢哋嘅signature drink!Set Dinner 可以揀Delight Tasting Menu (6 Courses) 同Chef Tasting Menu (8 Courses)。睇完2個Menu我毫不猶豫咁揀咗6個courses 嘅Delight Tasting Menu,因為呢個有我鐘意嘅Sea Bass,而且分量亦比較合適!另外Chef Menu 嘅三文

Set Dinner 可以揀Delight Tasting Menu (6 Courses) 同Chef Tasting Menu (8 Courses)。睇完2個Menu我毫不猶豫咁揀咗6個courses 嘅Delight Tasting Menu,因為呢個有我鐘意嘅Sea Bass,而且分量亦比較合適!另外Chef Menu 嘅三文魚同安格斯都唔係我嘅選擇!

落完order之後,侍應放低左一個布袋同一碟香草牛油。布袋入邊放咗四片麵包,兩件白色兩件黑色。侍應亦都無介紹黑色片麵包係咩啊,不過照我估計應該係黑炭麵包,而另外一片就係普通嘅法包!

Amuse Bouche是法文意思係餐前開胃小吃,一般係小小的一口。呢度嘅Amuse Bouche係切碎咗嘅青瓜同帶子,上面再放多少少黑魚子。青瓜同帶子應該用醋來調味,所以有少少酸嘅感覺,作為餐前小食都OK!

頭盤叫做Spring Field,睇個賣相都好有呢個感覺,其實係一個青瓜藜麥沙律。藜麥越嚟越受港人歡迎,因為營養價值豐富,而且口感煙韌,有啲似Risotto咁,好多餐廳都會用來做沙律!二今晚嘅青瓜藜麥沙律,藜麥本身冇咩特別問題!不講一食落去就有好熟悉嘅味道,未到就好似同頭先嗰Amuse Bouche一樣!好明顯係用同一個沙律醋嚟調味,老實講我覺得酸咗少少,而成個沙律除咗沙律醋嘅味道之外就食唔到其他味道喇!頭先個Amuse Bouche因為份量少所以覺得問題唔大,但係呢個頭盤份量比較多,越食就覺得越酸!如果作為一個開胃嘅小食其實唔錯,但係如果作為頭盤味道亦都太單一喇!

之後就係我最期待嘅Sea Bass,份量方面都算幾大件,外皮亦都煎得好香脆。雖然有鮮味,但卻很「鞋口」!一般來說海鱸魚油脂比較豐富,肉質密實嫩滑!這一次處理得不太好,所以失去了驚喜!而旁邊嘅沙律,係中東麥沙律,這次的中東麥同頭先嘅藜麥又不一樣,不過只在於口感上!這次中東麥嘅口感比較腍身,似煮得過耐嘅Risotto!但味道上跟之前嘅Amuse Bouche同頭盤係一樣嘅!

好開心竟然有苦白菜,香港餐廳可以食到苦白菜嘅唔多,不過開心只係維持左一陣間,一食落去完全唔係嗰回事!苦白菜本身嘅味道係甘苦,如果生食的話仲會甘苦多汁,有少少似芥辣嘅味道!但好明顯呢份苦白菜係用糖水煮過嘅,完全失去左苦白菜本身嘅味道,可能廚師怕客人接受唔到苦白菜本身甘苦嘅味道!至於雞卷方面都算OK ,雖然算不上好嫩滑,但亦都唔係「鞋口」。至於個紅棗汁,就可以讚一讚啦,汁做得比較厚身,如果話係汁不如話係一個漿,酸酸甜甜配個雞卷味道剛剛好!

最後嘅甜品係Champaign Sorbet,只係得一個字-_-甜!除咗甜唔覺得有Champaign嘅味道!
