疫情之下每次出街都要先擬定行程及時間,盡量避開繁忙時間減少接觸人群😆 呢間沾麵店想試好耐,趁佢一開鋪比較少人去食。番茄紅油沾麵 😋4/5 湯底比較濃稠而且有大量蕃茄蓉,因為有紅油所以比魚介豚骨油些少,幸好整體酸度足夠消除油膩感。麵底份量多,粗身麵條質感滑溜,軟硬度無得揀不過都算適中,附上一塊紫菜夠晒正宗。想加強酸味可以落啲檸檬醋,而鐘意食重口味嘅就可以加日式辣醬或者炸蒜增添風味。魚介豚骨沾麵 😋4/5 湯底鋪滿大量蔥花加上白芝麻及魚介粉末,內附兩塊叉燒,味荀及日本半熟蛋。肩胛肉叉燒好味,肉質軟腍,肥瘦適中,如果切厚一點或者燒到佢表面微燶應該會更好食。味荀唔錯無怪味。我欣賞佢隻日本半熟蛋做得非常出色,蛋黃非常流心,入口即溶味道又夠晒香濃,蛋白夠滑又食到醬油味道😍 加埋檸檬醋一齊食可以令湯底帶點微酸提升味道層次。總結:日本半熟蛋係必食,叉燒亦都有日本風味。餐牌選擇唔多,沾麵亦只有3款,小食欠奉,呢種做法就似日本職人專心做好一件事,堅持對食物嘅要求一樣。兩款沾麵味道都唔錯,下次要試埋黑蒜油豚骨比較下🤤 ..
