又到Yoho Mall,今次不選西菜,轉食中餐。家上海門前是開放式廚房,透過玻璃可以欣賞廚師們包餃子或小籠包的熟練手勢,亦可以目睹煎小籠包的誕生。店舖裝修雅緻,如同走入客廳吃飯,店家理念就是希望可以有家的感覺。淮鹽糖心燻蛋 煙燻味不太濃,但加添了淮鹽,提升了蛋的香甜,蛋黃生熟程度滿意,足夠做出軟滑感覺,美味。想試試師傅手藝,放棄了脆煎灌湯小籠包,卻點了傳統金牌小籠包 ,外型討好,皮薄餡靚多汁。鎮江醋還加了點薑絲,現今新派上海鋪頭,這並非必然的。鮮肉窩貼,煎得香脆,鮮肉果然有點肉香,亦有肉汁,吃時也要小心。上海醃篤鮮,是上海蘇杭菜中具有代表性的菜色之一。 醃就是指醃製過的鹹肉;鮮就是新鮮的肉類;篤就是用小火燜的意思,否則大火會令肉不易酥爛且易老。這湯味鹹鮮,湯白濃厚,五花豬肉質酥肥,筍清香脆嫩。嫩雞煨麵,一道平凡不過的麵食,沒有印象那家新派上海菜做得出色,這兒卻給我驚喜。 雞煨麵是淮揚菜的一種麵食,著重於麵條充份吸收雞湯,先熬雞湯,再在煮好麵條後放入雞肉及上海小棠菜,雞肉嫩滑,麵條入味,最重要,沒有味精的痕跡。家香炆鴨,鴨炆得夠腍入味,不過薯仔已完全搶去了鴨肉的風頭,太好味了。點客蒸銀絲
