臨時約食飯話打冷,諗起紅伶飯店呢間開業超過50年既老字號潮州菜,仲要有得openrice預約,岩哂懶等位既我😬🥢冰鎮芥辣墨魚片墨魚片係紅付必食之首,灼熟墨魚切成薄片,絕對考師傅既刀功,面頭淋上麻油。墨魚片下鋪左佢地自家製既咸酸菜,咸酸菜加麻油好好食。沾左麻油既墨魚片蘸日式青芥末醬同豉油特別香,而且口感脆爽飽滿🥢滷水鵝打冷梗係必食滷水鵝,朋友仔想要冇骨既鵝片,不過咁岩冇哂,照叫左有骨鵝肉。我個人偏好有骨既,通常都香啲。鵝肉偏肥,滷水都入味,但略嫌唔夠香唔夠嫩🥢蠔仔肉碎粥蠔仔粥非常足料,但湯底唔夠清同鮮甜,而且蠔味唔濃,反而土魷味好出🥢韭菜豬紅正常發揮,豬紅滑唔會腥,煮得夠入味,韭菜唔老🥢椒鹽九肚魚外層炸得非常酥脆,魚肉幾滑,但放一陣就冇左酥脆效果🥢潮州筍蝦為咗寫食評做少少功課,筍蝦係竹筍之鄉肇慶廣寧縣既特產筍乾,通常加入南乳用嚟炆豬腩肉、排骨等,而脆爽既筍乾吸收咗肉同醬料既精華,非常入味
