第一次到訪FLINT時,是他他剛剛完成裝修,環境耳目一新,由酒吧走進酒窖,再走進餐廳時,感受到一體化的感覺。今次是第二次到訪,環境依然,擁兩個截然不同的設計的用餐區中,我們選擇了貼近開放式廚房的工業風的一面,可以近距離看見廚師們的廚藝。 未開始前,來點酒來舒緩一下緊張的心情,調酒師Kevin以一股新雞尾酒風潮,介紹了幾款加入了蔬果的雞尾酒給我們。在經典的雞尾酒中加進了農場這個概念,味道清新。其中一杯是One Way to Paloma,由於加入了紅菜頭,入口清甜,伴酒的還有爽脆的玉米筍,層次多元化。而另一杯West End Market的賣相卻很吸引,用上一個女人頭像的酒杯,盛載著由VSOP、桑莓百里香甜酒、胡蘿蔔汁及蛋白調成的雞尾酒,餘韻更有點點辛辣的胡椒香,有種意想不到的味道。 喝上一口雞尾酒後,肚子也打起鼓啦,隨手拿起熱辣辣的麵包,塗點牛油放入口內,估不到此舉竟是一吃便是兩個,鬆軟的質感,帶著麵粉的香氣,真是非常好吃。 大廚Pieter自加盟以來,添加了不少創意,頭盤相繼送來,由Hamachi來開始。平常的油甘魚片多拌以柚子或檸檬等酸性較強的醬汁,今次卻以帶點輕微辣香的Bloo

大廚Pieter自加盟以來,添加了不少創意,頭盤相繼送來,由Hamachi來開始。平常的油甘魚片多拌以柚子或檸檬等酸性較強的醬汁,今次卻以帶點輕微辣香的Bloody Mary Jelly來配,再以牛油果芥末醬來增加味道,相比酸溜的味道,帶點刺激的更能誘發食慾。

AHI Tuna是一道即席製作的頭盤,順序放入各類材料及調味,拌勻後以紫菜脆片盛來吃,味道強烈又惹味,美味之源在於多種辛辣味的材料,如jalapeno、洋蔥及酸薑等,與牛油果及吞拿魚的味道十分合襯,越吃越開胃,奈何覺得脆片的份量再多一點會更好。

冷盤過後,就是熱的前菜,Seared Scallops煎過後,配合惹味的西王牙辣肉腸及檸檬蓉,味道又酸又辣,正好突出了帶子的鮮甜,如此強烈的口味也是第一次接觸到,大廚果然創意十足。

再來的是David Herve Royale Oyster,加了西芹及麵包糠等材料,味道變得不平凡,很特別。

任其他頭盤前菜如何吸引,也不能搶過這道B.B.B.,外型貌似鬆餅,但質感又不像,入口非常鬆軟,而餡料則是由金蘋果味噌及楓糖煮過的黑毛豬肉,味道及口感都與中式的雪山叉燒包有點相似,不過牛油的香味更勝一籌,很特別,再次拜服於大廚的手藝下。

主菜的Akaroa King Salmon送來了,起初沒有為意是什麼,直至侍應打開昆布外層後,鮮嫩的三文魚呈現眼前,非常鮮嫩的橙色下,質感柔軟,淋上法國Bois Boudran醬,有著清新脫俗的香味,也有微微的昆布香。伴菜則是柚子汁藜麥沙律,清新不膩。

再來就是FLINT's Suckling Piglet,份量相當大,分有豬肩及豬腿,兩者都烤得香脆可口,肉嫩滑溜,豬肩部份則是啖啖肉的,而豬腿則油份多一點,肉質更為嫩滑,雖然烤豬做得很好,但伴菜的蘇格蘭蛋更令人著迷,中間的鵪𪂹蛋更是流心的,做得別緻好吃,還有以豬腰及豬耳製成的沙律,爽脆清新。

最後的主菜是招牌的Linz Herutage Prime 45 Days Dry-aged on the Bone,此款牧場頂級風乾肉眼,肉味濃厚,但不算豐富多汁,質感越嚼越有味道,很香口,令人愛不釋手。

伴菜方面,當然以Nueske's為首選,楓糖煮過的蘋果木煙燻厚切煙肉非常惹味,大家也搶著來吃,差點要再柯打多一客才滿足。

甜品則點上三款,第一款是Panna Cotta,口味很獨特,有濃郁的黑芝麻香為最底,中間則是香滑的紅桑子奶凍,上層則是由玫瑰荔枝打成的沙冰,層次豐富,甜度適中,非常誘人。S'mores Tart則是大廚精心挑選的,看似簡單,其實是由全麥餅乾及蜂蜜烘成的餅底,中間是由Valrhona Chocolate製成的,最頂則是焗棉花糖,配以全麥味的雪糕,一冷一熱,十分不錯。最後,還有Grandma Apple Pie,酸酸甜甜,十分適合作飯後甜品

是夜過得非常開心,大廚的創新意念令大家都有意想不到的驚喜,全晚的亮點絕對放在Black BBQ Bao上,揉合了中式點心的方法來製成,十分好味,加上美味的雞尾酒,大家也十分滿意。
