經濟下行再加上日圓大貶值,不少壽司料理店已告別戰場,留下來的自有實力,立足中環歷史悠久的「今鮨 Sushi Ima」遇上租約期滿,搬到集團旗下的大舖內,渣打銀行大廈 ODDS 𥚃面,位於二樓自成一角。難得繼續供應上乘食材,晚市廚師發辦減價$200,現收每位$1980。流程是刺身與壽司不定量交替出場,全部是肥美及魚味濃郁的品種,採用赤醋飯,師傅拿捏得剛好,酸度不高,恰到好處!自家製漬物日本燒白果.地甲.稻穗.蜜粟組合有心思,次序由左方甘香的燒白果開始;然後打開右方鹽焗地甲,即大蜆,殻內有湯汁,非常鮮甜。稻穗只吃白色的果子,口感似爆谷,味淡但香;蜜粟超甜極討好。剝皮魚.剝皮魚肝.牙蔥剝皮魚早與肝醬混合了,口感豐腴,非常甜美;牙蔥有非常香的蔥香,帶出變化。鰤魚壽司.柚子胡椒選用鰤魚腩位,更加肥美,沾上醬油及柚子胡椒,成功提味。白子.燒汁 時令白子,配薑蔥及燒汁,絹豆腐口感,入口即溶,非常美味;燒汁有清酒味道。本見貝.北寄貝全只黑色的本見貝,是日本象拔最高級別,相比常吃到的白見貝更爽、更有咬口、更冇腥味,所以貴一倍。咬落果然極爽很甜,口中嗦嗦聲,而且耐嚼,的確上乘。之後吃北寄貝,口感突變,因為
