日本拉麵源自中國移民喺日本人地生疏,難以搵工做,所以喺街頭賣麵維持生計,其後大受歡迎,基於日本人嘅研究精神,拉麵款式可謂五花八門,各師各法,充滿地方/個人特色。睇報導知道呢間來自埼玉縣嘅拉麵店落戶將軍澳AEON,喺1月30號正式開業,為免同人迫,梗係先食為快啦。 呢個舖位之前都係日式拉麵,而家利用門口位做厨房,窗邊位遠望海景,地方寬敞,簡約裝潢,一貫日式拉麵店風格。坐位闊落,枱面有一系列調味料,最特別係沙律醬,以為係用嚟的食炸嘢用,原來係食招牌油麵時落嘅😁。 大門拉麵$48食招牌麵先有中肯嘅評價。麵條比一般拉麵粗身,近似稻亭烏冬嘅質感,入口比較硬身同韌,唔會一夾就散,但麵條唔掛湯,湯底濃厚有鮮味,可惜係比較死鹹同油膩,一上枱飲咗一啖已經封喉,唔敢再飲。叉燒經過火炙,比較香口同減低油膩感,竹筍醃得鹹香,味道特出,反而係成碗麵最好食嘅一環。 大門油麵$52其實就係撈麵。只係配料多咗蛋黃同即食麵碎,而少咗竹筍。根據店方建議食法,係要加蒜蓉、辣油、醋同沙律醬其中兩至三樣撈匀嚟食。撈咗蒜蓉,沙律醬同醋先知錯,可能分量唔啱,啲麵同醬料

其實就係撈麵。只係配料多咗蛋黃同即食麵碎,而少咗竹筍。根據店方建議食法,係要加蒜蓉、辣油、醋同沙律醬其中兩至三樣撈匀嚟食。撈咗蒜蓉,沙律醬同醋先知錯,可能分量唔啱,啲麵同醬料唔係好夾,食落成口油,味道複雜得嚟無預期咁好,食落覺得滯口,只係食到半碗😑

玉子卷煎得略為過火,表皮唔夠嫩滑,蛋味一般,配蘿蔔茸食無咁油膩,中規中矩。

呢間拉麵店口味獨特,充滿個人風格,但味道比較重,如果喜歡重口味拉麵或者新奇撈麵食法嘅朋友不妨一試。
