To encourage eatery outlets to reduce food waste at source together with customers through offering portioned meals and adopting food waste reduction measures, the Environmental Protection Department has launched the “Food Wise Eateries” Scheme. Participants will be awarded with a Food Wise Eateries (FWE) accreditation status if they comply with the assessment criteria and will be granted with the FWE Logo and Stickers for displaying in the premises and their promotion for public identification. Applications are accepted all year round and are FREE of charge.

新年前馬不停蹄地食團年飯,到新年過後也是繼續馬不停蹄地食開年飯,總是繁忙不絕。可是,無論團年飯或是開年飯,意義都一樣,就是趁著大時大節大家聚在一起,一邊品嚐意頭十足的菜式,一邊給大家機會見下面。 相信【喜慶盆菜】必定是重點所在,盆菜集合了各式各樣的矜貴食材,用料非常豐富。這兒卻用上多達十八種食材來製作盆菜,當中就有鮑魚、花膠、元貝、珍寶蠔豉、大蝦、髮菜及燒鵝等等,份量十足,每款食材有著各自的味道,但又卻被盆內的鮑汁所融合,無分你我,美味又滿足。 另一款近來家傳戶曉的喜慶節菜就是撈起了,這兒卻加入矜貴食材來做成【鮑魚撈起】,變得更加名貴。撈起正是一道大家圍在一起,一邊說著賀語,一邊撈得高高,意即風生水起的意思。玉庭用上的食材都切得幼幼的,配合特製的醬汁,清新開胃。 頭盤過後,來一道足料又養顏的【杏汁花膠豬肺湯】。湯頭濃郁清甜,因加入了花膠的關係,與坊間的燉白肺湯不同,相當黏口。 海鮮菜式來了幾道,先是【花雕蛋白蒸蟹鉗】,蟹鉗體型巨大,鮮甜爽口,與蒸得嫩滑的蛋白,滲出陣陣酒香。 再來是【欖菜倉魚球】,用上大大條的倉魚起球來烹調,並以香濃的欖菜來炒。倉魚球肉質結實,咸香

【蟹肉燴春雨】應該是早前用了蟹鉗的肉蟹拆出來的蟹肉,將一梳梳的蟹肉煎成蟹肉餅,舖在魚湯粉絲上,惹味極了,好吃得連小弟也連吃了兩碗。

主菜是【八寶扣大鴨】,製作精美不在話下,用上生薏米、鮮百合、蓮子、肉粒及咸蛋黃等等的材料,非常豐富,由於鮑汁濃香,八寶鴨燜得香酥鬆化。
