食廚師發板的壽司餐廳,越開越多,可謂係壽司界百花齊放的景象今日同個同事開來呢邊做嘢,就試吓呢一間銅鑼灣新開的omakase 到達時店內少人,幾寧靜舒適的感覺。Sushi omakase Set 包括左沙律、前菜、蒸蛋、壽司(12貫)、湯、咖啡或甜品 才$380 間八,用了酸汁,感覺清新而且幾開胃魷魚,口感滑滑的,上面仲塗左少少wasabi同豉油,對味蕾小小的刺激。金目鯛腩位,上面黑色一點點原來係日本竹炭鹽,帶出了魚香味。赤貝,厚肉的,夠哂爽口鮮甜!醋漬小肌魚,第一次試咁樣食小肌。蝦,都算幾多肉北海道馬糞海膽正呀正呀!最甜的海膽深海池魚,上有少許薑蓉帶子,上了柚子汁,清新得來又鮮甜。三文魚子,都幾飽滿。鰤魚,上面交錯的切坑,令到醬油能夠充分留在這片厚厚的魚肉上大拖羅,第一次聽見魚肉都可以熟成,師傅話呢個拖羅熟成左三日,魚味更出。本來拖羅就已經係好肥美而且香溜的代表,再要加上佢嘅肉味更出,真係完美啊整體來說,我覺得今日食的壽司,都係傾向大size,同厚肉師傅製造好認真,做壽司期間雖然都有同我地傾計,但係都係有關壽司的,而且每次我哋將壽司放入口,佢都定睛看着我哋嘅反應,睇嚟佢好重視客人嘅感覺
