To encourage eatery outlets to reduce food waste at source together with customers through offering portioned meals and adopting food waste reduction measures, the Environmental Protection Department has launched the “Food Wise Eateries” Scheme. Participants will be awarded with a Food Wise Eateries (FWE) accreditation status if they comply with the assessment criteria and will be granted with the FWE Logo and Stickers for displaying in the premises and their promotion for public identification. Applications are accepted all year round and are FREE of charge.

說起來,對上一次造訪 Casa 已經是好幾年前的事,就趁近日有點空閒,就跟幾位朋友飯聚。Jesus Pascual 及 Fabio Pombo是兩位年紀輕輕的大廚,也好,菜色是期待中的新意。雖然是在中午時段,但身處中環核心地段,而且食物走新派葡菜(Contemporary Portuguese Cuisine)路線,所以都全院滿座,看來懂門路的大有人在。大概外國人都比較愛狩獵吧!而冬天正是最佳日子,而狩獵得來的野味,當然是用在傳統家鄉菜中。吃葡萄牙菜,又怎可以不配上一杯Sangria?這種頗適合年輕人及女士的飲品,充滿了水果的香味,中午喝上一杯,少許的酒意,令人心情倍感輕鬆。餐前先來自家製包點,加上特製的醬汁,的確可以令人吃過不停。橄欖油炒蛋配紅蝦菇菌用鴨蛋作菜的地方不多,最常見的潮式蠔餅有九成以上都轉了雞蛋,風味的確差了一點,但想不到葡菜反而用上了,感覺更好。加上甜美的紅蝦與及菇菌的嚼口,整道菜變得更立體。鵝肝半熟蛋白汁薯泥整片鵝肝蓋在半熟蛋上,撥開蛋漿混和了薯蓉一齊食,口感豐腴滑溜,雖然邪惡,但真是人間美味。獵人鷓鴣批賣相好普通,但食落卻是另一回事,外層酥皮鬆化可口,色澤平均亮麗,

獵人鷓鴣批

賣相好普通,但食落卻是另一回事,外層酥皮鬆化可口,色澤平均亮麗,餡料是鷓鴣及菇菌,全然是野生肉類的風味,蘸一下伴碟的松露醬,味道更佳。

野豬栗子鍋

又是一道野生肉類菜色,試完了飛禽,當然要試走獸,香港的野豬肉食過,味道較羶及韌,印象麻麻,但今次加入栗子,不單質感粉糯,沾上了肉汁,就更可口,而野豬肉的羶味,亦比預期中輕柔,既有特色,又有風味。

葡萄牙獵人鴨飯

以鴨湯煮飯,每口都是濃郁的鴨味,而鴨飯又保持粒顆分明又有嚼口,置面的鴨肉柔韌嫩滑,真是找不到挑剔的地方。

看著街外熙來攘往的上班族,這是一個難得的寧靜。
