To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. Participating restaurants will be granted with the Scheme Labels for displaying in the premises for public identification. 之前喺中環上班嘅時候,曾經同同事去過上環文咸東街柏廷坊 3 樓嘅法國餐廳「La Parole」食 team lunch。後來從媒體得知,「La Parole」同樓上 7 樓嘅高級日本餐廳「尚善」屬同一集團,均是社會企業。據知兩間餐廳都會將收入扣除成本開支後,全數撥款營運註冊非牟利機構 – 庭恩兒童中心,幫助來自低收入家庭,患有語言障礙的小朋友,實在非常難得。友人向來鍾情日本菜,趁這晚相約一聚,所以就提議來「尚善」試下。店內環境唔錯,地方頗大,空間闊落,裝潢簡約雅緻,以木質為主調,牆身掛有和服同日式壁畫,配以吧檯頂頭嘅清酒瓶作點綴,散發日系風情。安坐後,店員隨即送上熱茶和一本硬皮餐簿。翻開內頁,食物分門別類,而且選項甚豐,有沙律、小食、雜錦刺身、壽司、火炙壽司、手卷、卷物、串燒、燒物、炸物、煮物、石燒、鍋物、飯麵、湯類及甜品等。由於這晚天氣有點冷,所以經商量後,大家決定以熱食為主。先嚟幾款串燒打開胃口,分別點了帶子燒串 ($105)、鹽燒雞翼 ($60) 同鹽燒牛舌串 ($85)。帶子夠曬肥美,大大粒,啖啖肉,入口爽嫩鮮甜,不俗。雞翼燒得剛好,肉質軟熟,邊位很脆口,而且皮層油份溶化滲入肉

接著來一客銀鱈魚西京燒 ($280),廚師好有心思,擺碟一絲不苟,銀鱈魚上碟後先伴以荔枝同香橙肉,再綴上菊花,賣相精緻。挾起一嘗,魚身油分頗多,吃起來香軟滑嫩,舌頭盡是油潤的感覺,魚香極濃,加上鱈魚的外皮,入口微焦,香得來又不會太燶,實在令人意猶未盡。

緊接出場嘅軟殼蟹天婦羅 ($118)  亦做得很有水準,炸粉比例控制得不錯,粉漿夠曬薄,而且炸得金黃香脆,食落完全不覺油膩,配上白蘿蔔蓉,特別滋味,用來佐酒一流。

食完咁多燒物同炸物,當然要吃點菜蔬來平衡一下。沒想到原來這碟炒野菜 ($88),分量都幾大,而且成品除咗有一大堆不同嘅菇同椰菜外,面頭仲鋪滿木魚絲,充滿動感。菇菌非常粗壯,鮮嫩爽甜,木魚加埋菜蔬一齊食,十分惹味。

最後以牛肉稻庭烏冬 ($138)  作結,烏冬同樣分量十足,大大碗,非常足料,而且廚師很細心,上桌前已經將烏冬分成兩份,方便客人享用。日本肥牛簡單地灼熟,湯頭清澈,喝一口,有濃郁牛肉味。再捲起烏冬入口,幼滑的烏冬隨即滑入喉頭,細嚼下更可嘗到點點麵粉香和韌性,質素令人滿意,吃罷既豐富又飽足。
