禮拜日去咗銅鑼灣上樓食日本菜,今日呢間餐廳食物幾紮實不花巧,用料新鮮。前菜三小碟有鱲魚真子,尤魚大根及鴨胸,開吓胃几唔錯。蟹肉蒸蛋,蒸蛋上面加咗蟹肉及三文魚子,所以入口口感豐富,魚子卜卜脆,多種鮮味。壽司有後厚切墨魚,坊間比較少見厚墨魚,差唔多成2cm厚,所以絕對考師傅功夫,口感軟糯啱啱好,慢慢咀嚼會滲出甜味。銀鱈魚腩邊,入口非常爽口,比一般的更脆身,食落油份慢慢滲出。火灸喜之次,油份重,肉味又幾突出。油甘魚中間有少少芝麻,芝麻香又係慢慢滲出,唔會過分喧賓奪主。牡丹蝦,師傅會用火槍係你面前炒香蝦頭的蝦膏,之後鋪喺牡丹蝦上面,所以入口蝦味會更加突出,有蝦膏嘅甘香,之後再食到牡丹蝦嘅甜味。鹽水海膽壽司,唔會有化學味,味道回甘,餘韻悠長。之後上嘅煎蛋似布甸口感,除咗蛋香帶點甜味。最後魚湯用上鮮魚熬出,味道香濃,而且熱辣辣,作為最後一道菜就啱啱好!餐廳大部份嘅壽司師傅會加海鹽或岩鹽,唔會太花巧,入口味道簡單直接,鮮味突出,口感清爽。
