這晚在「鮨真」選擇了中價的「鮨」 $1680/位,項目豐富,食材新鮮,師傅手藝到位,選材肥美的時令魚種,正合我意!前菜墨魚汁蒸蛋上面更鋪上魷魚、蟹肉絲,鮮甜幼滑,日式蒸蛋絕對是偉大的發明。刺身真鯛.馬糞海膽真鯛卷著馬糞海膽,組合有新意,本來與味比較淡的真鯛吃起來變得甘甜,師傅加了少少鹽,味道已經足夠。帶子.青檸汁師傅打一打,帶子收縮,滿足視覺享受。鰤魚.柚子胡椒魚皮上見得到灸紋,柚子胡椒添辛辣層次。鱈魚白子.酸汁鱈魚白子正直時令,口感極滑如豆腐中帶咀嚼的咬口,這就是佳餚。銀鱈魚.烏魚子粉再加少少芥末,鮮滑味美。大拖羅見到雲石紋理我已開心。秋刀魚.芽葉終於等到時令,秋刀魚向來是我的最愛。慢煮安鱇魚肝豐腴無比。時令品餚門鱔春卷蓮藕饅頭蓮藕磨成蓉包著蝦球炸的壽司牡丹蝦壽司鮮美,少許黏黏地的口感。日本象拔蚌壽司比較細隻但更甜;口感極脆,爽爽脆脆。剝皮魚.魚肝壽司剝皮魚是冇味的,亮點在肝,令味道昇華,入口即化。中拖羅壽司完全無筋。北海道馬糞壽司極度甘香味美右口魚邊.紫菜右口魚邊比左口魚更肥美,即是鰈魚,炙燒迫出魚油。群翅清湯蜜瓜琥珀即係奶凍環境舒適服務,態度非常好,CP值合理。
