Participants will be awarded with a Food Wise Eateries (FWE) accreditation status if they comply with the assessment criteria and will be granted with the FWE Logo and Stickers for displaying in the premises and their promotion for public identification. Applications are accepted all year round and are FREE of charge.

承接上文,來到下一個環節,由於筆者向來對酒認知不多,所以就跳過了可大談酒經的品酒師之桌,直接進入呈長方形、以沉色為主調、型格十足的用餐區。其實當日餐廳方面都準備了不少紅、白酒供各位到訪的 OpenRice 會員享用,非常貼心。先介紹《頭盤》,布拉塔水牛芝士配雙色番茄及野生芝麻菜,水牛芝士加忌廉製成的 Burrata,入口呈半融狀態,口感 creamy 軟滑,而且吃起來還散發著幽幽的芝士淡香,配以味道清新鮮甜的番茄和爽口的芝麻菜,食味不俗。而這客有機紅菜頭配山羊芝士及香醋汁蔬菜沙律,紅菜頭以橄欖油及酸咪咪的香醋汁醃製,再加上爽口的沙律菜,入口清新鮮甜,只可惜當中的山羊芝士,羊羶味十分濃烈,實在令人有點卻步。接下來《海鮮》一環,是日精選魚生是吞拿魚他他,整個菜式分為三層,先以油潤的牛油果蓉墊底,中間鋪上香滑鮮甜的吞拿魚,而頂層則綴以大大粒的三文魚籽,一次過帶來三重口感,層次豐富細膩。至於自家醃製的薄切三文魚,入口甘香油潤,魚油香味突出,吃時加添面頭鹹香的魚子醬,感覺啖啖奢華,再配搭旁邊的香口亞麻籽脆多士和小茴香芥末醬,口感更加豐富。而《經典美食》就分別有芝士焗波士頓龍蝦和意式燴小牛頰肉。前

《經典美食》就分別有芝士焗波士頓龍蝦和意式燴小牛頰肉。前者 Thermidor Style 波士頓龍蝦,以原隻開邊起肉切粒,用牛油、蘑菇等炒香,再混合芝士、香草等醬汁,釀回殼內焗香,火候拿揑得宜,吃起來肉質鮮嫩爽口,啖啖肉又惹味。

至於意式燴小牛頰肉,初端上來時,還差點誤以為是酥皮湯添。不過當服務員小心翼翼地替我們這一檯,用刀界開面層香酥的酥皮後,看見內裡放著的竟然是經過慢煮烹調,吃起來質感軟腍,肉味香濃的小牛面頰,的確令人驚喜,再伴上濃稠的醬汁同吃,更能帶出肉味。

《烤製菜式》
方面,先介紹這款來自內布拉斯加 Nebraska 63 日熟成帶骨肉眼扒,經乾式熟成 63日 Dry Aged 的美國肉眼,帶骨燒烤,入口肉味濃郁,十分 juicy,用來配超過 40 款秘製材料製成的獨家牛扒汁吃,的確回味無窮。

而這款英國巴克夏 Berkshire 黑豚扒,據說烹調方法亦十分簡單,只須以茴香碎包著豬扒烤至焦香,入口肉質鮮嫩結實,肉味香濃,配上自家製的甜美青蘋果蓉,把豚肉的香甜味完全發揮得淋漓盡致,清新又消滯。至於餘下一款烤製菜式:烤海鮮,則留待下篇再續。
