菜式多點了海鮮類別, 因此叫了杯白酒, 亦因為沒太有研究, 就來一杯House White。用上Orange tree這澳洲牌子的白酒作為House White, 淡黃色的清澈, 有13.5%酒精含量頗為高, 卻非常易入口, 清淡果香, 與接下來的菜式發揮不同味道作用。

另一杯要了Champagne Cocktail, 沒錯! 香檳都可以做cocktail。色澤偏深橙紅, 因加入了意大利出品的Campari, 由於濃度達20%以上, 糖份的加入稍作緩和, 使這杯cocktail入口微甜而帶點苦澀, 凌厲得令口內留下點餘韻。

餐牌中原先設定的湯是黑松露雜菌湯, 因當天的龍蝦較新鮮美味所以特意作出微調。對食材有如此的要求, 作為食客也感到滿意。由淡到濃, 所以店員建議先喝較淡的凍湯, 然後才到味濃的龍蝦湯。龍蝦湯濃味中帶甘甜, 忌廉的比例佔得不多, 仍能做到幼滑的效果, 龍蝦的蝦膏油香和鮮味, 令湯的美味昇華。雖然龍蝦湯味美, 但相比之下, 更愛做得出色的凍湯!

用了雞油菌和Ricotta Cheese做餡料的意大利雲吞, 皮薄煙韌, 加上creamy的醬汁, 每口盡是被芝士所包圍纏繞細膩, 鹹香濃郁, 口感相當豐富, 多吃芝士難免會有點膩, 但喝一口白酒, 那相輔相成的化學作用, 又令人回味!

吃過前菜頭盤後, 盡是油膩香濃, 來一杯雪葩, 正好清清口腔糾正味覺, 迎接餘下的主菜, 就是喜歡法國菜的細緻鋪排。番石榴味雪葩, 別有心思, 加以raspberry汁於杯邊裝飾, 又酸又甜的冰涼快感確很醒胃。
