[必食推介] 用上一個別緻的小鍋,鴨蛋所包著的是Ricatta Cream (Ricatta是指re-cooked,放在室溫內12-24小時) 。發酵的過程令芝士中的乳清出現,因此Ricatta 脂肪含量較少,口感滑得來,亦比較輕巧,做Raviolo實在是最適合不過!
