已經忘了多久沒去日本,非常掛念那邊的Omakase,前日幾位同樣壽司癮起的朋友約小弟食這間廚師發辦,原來經OpenRice訂還有第2位半價!立即滿心期待這間於諾士佛台上樓的日本料理會有甚麼驚喜,果然食完一點也沒令我失望!L型壽司吧只有大概10個位,慶幸我剛好坐在轉角位,可從正面及旁邊觀賞師傅的手藝。與師傅一番親切寒暄後,先來前菜3點,來自富山灣的螢光魷魚煮熟後仍然鮮美,果然是春天當造的產物,一咬中間滿滿的膏已令我著迷。黑梅貝也煮得入味,口感軟腍。剛炸起的幾條小公魚也很脆口,送清酒不錯。接下來就是一連串刺身,打頭陣的是九繪魚薄切,口感媲美河豚而被譽為夢幻之魚的九繪,又怎可以只配普通的豉油或Ponzu?師傅特別在刺身上加上梅酒啫喱及竹炭鹽調味,梅酒的微酸與竹炭鹽的溫和鹹味不會蓋過魚肉的香甜,效果不俗。然後驟見師傅拿出一板北海道海膽,心想晚餐不會這麼快完結,來最後一道的海膽壽司吧?師傅解說這道是金目鯛配北海道海膽,用彈牙的刺身包著濃厚的海膽及芽蔥,底下再放一點煎酒汁作點綴,口感鮮味一件俱全。象拔蚌刺身的呈現也很特別,先在岩鹽板上放上一片青檸,再將切成幼條的刺身擺上,食前只需在青檸及鹽板上輕掃

下一道是非常矜貴的葡萄蝦,淡紫色的外殼中包著的是潔白甘甜的蝦肉,為增加飽滿感,師傅加上了一些醃過的蛋黃醬及本身的蝦籽,入口濃郁感大增。

然後就是清清味蕾的煮大根,醬汁中加了長腳蟹肉絲及烘過的烏魚子來增添層次,和暖舒心之餘亦內含濃郁鮮味。

再來就是十分吸引的小長井真蠔,飽滿的蠔肉creamy又濃厚。玻璃容器裏的是蘋果木煙燻拖羅配柚子麵豉醬,煙燻木香剛好襯托拖羅的油脂,柚子味也能增添點點清新。

最後一款刺身就是厚厚的火炙鰹魚,中間夾著蔥花蒜蓉,佐以蒜片乾及士多啤梨,層次感十足。

期待已久的壽司終於上桌,富山灣白蝦鮮嫩甘甜,去殼後放在壽司飯上更是啖啖蝦香四溢。

鳥貝也實淨爽口,貝香與咬口也十分平衡。

平政魚口味清甜也不會過膩,盡顯高級鰤魚的身價。

最後一款也是最期待的壽司!天使炸彈需要預訂及另加$250才能一試,其實就是壽司飯上疊上拖羅蓉、中拖羅、北海道海膽及火炙大拖羅!單看已經非常誘惑,一啖咬下,多款拖羅及海膽的美味更是在口中併發,回味無窮!

吸物就是大蜆清湯,剛熟的蜆肉鮮甜無比,清湯也很喜歡。

甜品綠茶豆腐花上放上了士多啤梨及矜貴的金箔,簡直是完美的句號!
