Verdict: Best pho in HK so far. Has all the essential that make as authentic as possible. Excellent beef quality. It started around 3 weeks ago on the back of a visit to Ho Chi Minh. Being bought up in Sydney where Vietnamese food is almost a stable diet, Pho An in Sydney is the benchmark of a good pho. Pho Hoa Pastuers in Ho Chi Minh, rated by locals as a great Pho place, was quite similar to Pho An so I knew my benchmark was correct. Equiped with that, I set out on my quest to find the best Pho

Since then, I have visited a total of 5 restaurants: 4 in YauTsimMong and 1 in Causeway Bay.
Lo Chiu, Austin
Saigon Vietnamese Restaurant, Tai Kok Tsui
Pho Yum, Mong Kok
Lee Kam Kee, Yau Ma Tei
Pho Vietnamese Restaurant, Causeway Bay.
In my mind, the bare mininum of pho must have the following for me to consider it vietnamese:
1. Sriracha sauce and Hoisin sauce
2. Garnishes such as beansprouts, thai basil, red chilli, lime/lemon, coriander or culandro
3. No white raddish.
So, Lo Chiu and Saigon Vietnamese Restaurants are out of the picture for failing the above.
The let down for Lee Kam Kee was the soup. Bland and tasted more like chinese beef brisket soup noodle (an all too common finding in HK)
Pho Vietnamese was not too bad. Strong authentic pho soup flavour, noodles was ok and the raw beef was all ok.
However, the honours goes to Pho Yum. (so far...) The downside is that most of the ganishes where already in the soup (except of chilli and lime). The soup was as good as Pho Vietnamese but what really gives it an edge is the excellent beef quality.
The search continues, but for now you cannot go wrong with Pho Yum
