Tried the new bloom here. Been to their TST one and this one is as consistent. I feel like people are particularly harsh on the critics because Moses Chan is the boss. The bean is nice and freshly roasted. I can see they make an effort to provide better service at this branch. They have a staff organising the seats for the patrons. Definitely stepped up the service compared to TST branch. Their coffee is a bit weak for my liking (probably coz I drink a lot and prefer medium to darker roasted ) but the bean is well balanced, flavourful and with a good aroma. The decor is clean and warm with brass, beige and white color scheme. While we waited for the table, there is an old man dozing off and taking a table without any order. It's very tough position to be in. The staff didn't wake him and asked him to leave. I thought that's a humane management of the situation but of coz some people wouldn't like it as it made them wait longer. I guess you can only keep an eye until he wakes then quickly and politely ask him to leave, instead of shaking him and bluntly telling him to go or pay for a cup. Back to coffee, ultimately, I think a good coffee can be quite subjective. As long as its freshly brewed with good and freshly roasted beans, the rest is just personal preferences. Some prefer more floral, acidic others more nutty bitter. I'm not a coffee critic, but definitely a coffee lover. Those are my thoughts.
