(一)腐衣二張
(二)木耳八朵
(三)冬菇十二塊
(四)豆腐一塊
(五)嫩筍一隻
Seasoning
調味料:
(一)熟油一湯羹
(二)鹽1/4 茶匙
(三)冬菇水四湯羹
(四)麻油1/4 茶匙
味汁:
(一)糖1/4 茶匙
(二)熟油二湯羹
(三)紹酒一湯羹
(四)麻油1/4 茶匙
(五)生粉一茶匙、開水三湯羹
(六)水二湯羹
Method
(一)先將腐衣剪成約三吋半乘三吋大小方塊。
(二)將木耳浸透剁爛,冬菇浸透,一半切片,一半剁爛,冬筍出水後一半切片,一半剁爛,用剁爛料與豆腐同攪勻,加入鹽1/4 茶匙,油一湯匙,麻油1/4 茶匙,然後用腐衣將豆腐餡包成枕頭形,用油煎成金黃色。
(三)另將鑊燒熱,加入油二湯羹,再加紹酒,將冬菇片及冬筍片倒入炒香,加入水二湯羹,煮片刻,即將腐包加入,再將老抽、糖、加入炒勻,用生粉水埋獻,最後加麻油可上碟。
