雞中翼 6隻
淮山 1條
Seasoning
啤酒 1罐
冰糖 少許
老抽 少許
Method
1. 冷藏雞中翼需預先解凍,洗淨備用
2. 淮山削皮洗淨後切片,下水焯熟,飛水後盛起備用
3. 燒熱2湯匙油,放入雞翼略煎至微黃色
4. 加入啤酒、冰糖及老抽,如啤酒不夠蓋住雞翼的話,可加點清水
5. 雞翼用慢火炆煮至熟透,關火並取出雞翼
6. 淮山下鍋與啤酒汁拌勻後上碟,雞翼置於淮山上即成
Tips
1. 啤酒可去除雞翼雪味
2. 啤酒汁收水使甜味濃縮,因此冰糖份量不用太多(約2大粒)
3. 淮山削皮時需帶手套,否則皮膚痕癢
4. 淮山備用時可置於水中,避免變色
