大荳芽 1斤
蒜頭 2-3瓣
免治豬肉 $10
Seasoning
鹽少許
酒少許
Method
1) 芽菜摘去尾部,切成粒備用。
2) 豬肉用豉油、豆粉、糖、紹酒及麻油略醃。
3) 蒜頭剁成茸備用。
4) 熱鑊(不要落油),將大荳芽落鑊,用慢火慢慢烘乾。
5) 用少量油爆蒜頭,然後加入豬肉,炒到八/九成熟,然後加入已烘乾既芽菜鬆,最後加入少少鹽同胡椒粉,兜勻後於鑊邊加入少量酒,炒勻上碟即可。
Tips
1) 芽菜一定要慢慢用白鑊烘乾,否則不夠乾身會有菜青味。
2) 成個餸的比例是菜多肉少,所以豬肉份量不可比芽菜多。
